1 ½ teaspoons active dry yeast
½ teaspoon white sugar
½ cup lukewarm water
2 cups sifted all-purpose flour
½ teaspoon salt
2 tablespoons olive oil
1 egg, beaten

Steps:

  • Stir yeast and sugar into lukewarm water, using a fork. Let stand in a warm place until a creamy layer forms on top of the water, about 10 minutes.
  • Mix flour and salt in a large bowl. Mix olive oil into flour and stir for 2 minutes. Pour yeast mixture and beaten egg into flour mixture and stir to make a stiff dough. Turn dough out onto a floured work surface and knead until springy and smooth, about 8 minutes. Place dough into a floured bowl and cover with a piece of plastic wrap wiped with a thin film of olive oil.
  • Let dough rise until doubled, about 1 hour. Punch down and roll out to desired shape.

1 1/2 tsp sea salt
2 1/4 cups COLD water
1 tbs extra virgin olive oil

Steps:

  • Preheat your oven as high as it will go for at least 45 minutes to one hour.
  • In the bowl of your kitchen aid and using the paddle attachment mix the flour, sea salt and active dry yeast (
  • Switch to the dough hook and mix together on low speed for 8 to 10 minutes. The dough should be smooth and sticky but should not stick to the sides of the bowl, only a little to the bottom.
  • (If the dough sticks to the sides sprinkle in a little more flour, if it is too dry then add a bit more water).
  • After the 8 minutes have passed remove the dough from the kitchen aid and cut it into 6 pieces and form them into rounds. Place them on a lightly oiled cookie sheet and drizzle with 1 tbs of extra virgin olive oil. Cover with plastic wrap and allow to sit at room temperature and rise for 2 hours in a draft free area. ( I prefer the oven )
  • Sprinkle the counter with a little bit of flour, take one piece of dough and press down on it with your fingers until you have 1/2" thick circle or oval. Using your fists and knuckles start stretching the dough until 10" in diameter making sure not to tear it ( this should be easy since it is a small pie).
  • Dust your pizza peel (or a piece of cardboard) very well with semolina flour or corn meal and set your pizza dough on it making sure it slides easily when moved. Pour 2-3 tablespoons of the pizza sauce in the center and spread it around with the back of a spoon leaving 1 inch of space at the edges and making sure not to get any on the peel. Sprinkle with the mozzarella and add your favorite toppings. ( Don't add too many toppings, keep in mind this is a thin crust and a couple of toppings will suffice ).
  • Gently slide the pie on the preheated pizza stone in a hot 525 degree or more oven, and bake for 5 to 7 minutes or until golden brown on the edges. When making the breakfast pizza I find that the egg cooks perfectly in 6 minutes.
  • Remove from the oven and sprinkle with the basil and freshly grated parmigiano reggianno. Allow to rest for a few minute for the cheese to set.

I saw Nick Stellino make this dough and use it to make four calzones. It will also make two pizzas. I've done both and they turn out wonderfully! My key to a great pizza is to slice everything VERY thin and to not pile it on too thick. Our usual pizza is feta, garlic, freshly grated parm, fresh spinach, toasted pine nuts, tomatoes, mushrooms, mozzarella, a drizzle of olive oil and salt and pepper. I highly recommend it!

1 1/2 cups water (105 F to 115 F)
2 (1/4 ounce) packages dry yeast
1 teaspoon sugar
4 teaspoons olive oil

Steps:

  • Coat a large bowl with teaspoon of olive oil and set aside.
  • Stir first three ingredients together and let sit for 10 minutes, until nice and foamy.
  • Place three cups of flour in large bowl and mix in salt.
  • Place one cup of flour on work surface.
  • Mix pour olive oil into yeast mixture and then pour yeast mixture into bowl with flour.
  • Stir until as combined as possible.
  • Turn out onto floured surface.
  • With well floured hands, knead dough to work in the cup of flour on the board.
  • Continue kneading until nice, smooth dough-ball is formed.
  • Place in oiled bowl, cover with plastic wrap, then kitchen towel and let sit for 30 minutes.
  • Dough should double (at least).
  • Use half the dough to form a pizza crust, crimp the edges, brush edges with olive oil and top as desired.
  • Bake on pizza stone or ceramic tile at 425 F for approx 15 minutes.

When I first moved to Italy, I was surprised to see that deciding to eat a pizza for dinner meant whipping up pizza dough with a few common ingredients a couple of hours before. Using fresh, compressed yeast, it rises in an hour. Stretchy, chewy, and so full of flavor, there's no need to order out. This dough works for calzone as well as focaccia, and the recipe doubles perfectly!

4 cups all-purpose flour, or more as needed
2 teaspoons salt
3 ¾ teaspoons fresh, compressed yeast
1 ¼ cups water, at room temperature
2 ½ tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to the lowest setting possible.
  • Combine 4 cups flour and salt in the bowl of a stand mixer fitted with the dough hook attachment; turn mixer on low speed. Crumble yeast into small pieces and add to the flour. Slowly pour in water. Scrape the sides to make sure all flour is incorporated and mix until dough begins to pull away from the sides and form a ball. Drizzle in oil and mix until fully incorporated.
  • Knead on low speed for 5 or 6 minutes, adding 1 to 2 tablespoons extra flour if needed. Remove dough from the bowl and use your hands to form a ball. Return dough to the bowl and score the top with an "x." Cover with a damp cloth.
  • Turn oven off and place dough in the oven to rise for at least 1 hour, or up to 8 hours.
  • Remove dough from the oven and reattach the bowl to the stand mixer. Uncover and punch down dough. Knead on low speed for 5 minutes.
  • Meanwhile, place a pizza stone or tray on the bottom oven rack and preheat oven to 450 degrees F (230 degrees C).
  • Cut dough into 4 equal pieces and roll each one into ball. Dust with flour if needed. Place balls on a sheet pan and cover with a damp cloth. Roll out each ball into a 9-inch circle and top with desired toppings (no more than 1 cup sauce per pizza).
  • Place pizza on the pizza stone in the preheated oven. Immediately lower the temperature to 410 degrees F (210 degrees C) and bake for 10 to 12 minutes; actual length of time will depend on your toppings. Repeat to make remaining pizzas.

The easy recipe for this homemade dough comes from an ancient Italian pizzeria in Naples and is there as "Pasta per la pizza numero 328" written on a faded note. Warning: Anyone who has ever tried this Pizza dough will never be able to eat ready made dough products or frozen pizza again.

1 kg Italian pizza flour Tipo 00
2.50 cups of lukewarm water (600 ml)
5 g of yeast (preferably brewer's yeast)
30 g salt (about 3 tablespoons)

2 tbsp Native Italian olive oil

Steps:

  • How to make homemade pizza dough
  • Place 600 g Tipo 00 flour in a large mixing bowl. Tipo 00 flour has a much higher protein content than our conventional all-purpose flour. We have had good experiences with the Tipo 00 flour "Farina Speciale Per Pizza" and the original Caputo Farina 00. If you do not have tipo 00 flour at home all-purpose flour can be used.
  • Provide 2.5 cups (600 ml) of lukewarm water in a measuring cup.
  • Add 3 - 5 g brewer's yeast and 30 g salt and stir well with the water in the measuring cup. Alternatively, fresh baker's yeast can be used. In traditional Neapolitan recipes, very little yeast is generally used to obtain a finer taste.
  • Pour the water-yeast salt mixture into the mixing bowl and combine with the flour to a dough. For this it is enough to stir with a fork.
  • Cover the dough with a damp kitchen towel and leave for 20 to 30 minutes. This step is very important for a good pizza dough. In the resting period of the dough, first protein chains are formed.
  • After the resting period, stir the dough for about 3 minutes with a kitchen mixer with dough hook at the lowest level. If desired, add 2 tablespoons of olive oil. According to "Pasta per la pizza numero 328" the dough should be kneaded by hand, but this may also be due to the age of the recipe. Stirred with a kitchen mixer, the dough is in our experience much smoother. However, the mixer should have at least 350 watts of power. Alternatively, of course, a food processor or a Thermomix can be used to stir the dough.
  • Gradually add the remaining 400g of flour and continue stirring at the lowest level. The process should take about 5 minutes.
  • When all the flour has been absorbed by the dough, stir once more for 2 minutes. This time, however, on the second level of the kitchen mixer.
  • Divide the dough into two portions of 800 g and form one ball each. Place the dough balls in two floured mixing bowls and cover with a damp kitchen towel.
  • Let the dough rest
  • Let the dough rest in a warm room for at least 6 hours. Even better are 24 hours.
  • After the resting time use the dough immediatelly or store cool and dark. For example in the refrigerator.
  • If necessary, take out 270 g of dough per pizza. The dough should be removed from the refrigerator 1 to 2 hours before the intended preparation.
  • Shape the Pizza dough
  • Put flour on a clean work surface. Form the now room warm dough into a ball and press it flat. Form with your hands into a round and thin dough. When doing so, place flour under the dough and press it from the inside to the outside.
  • If the dough has a reasonably round shape, it can be lifted up the edge and turned like a steering wheel. By its own weight, the dough pulls almost by itself. By the way, a rolling pin should by no means be used to roll it out, since it takes away the airiness of the dough and the pizza does not rise well in the oven.
  • The dough should now be about 12.5 inch (32 cm) in diameter and be very thin. Put plenty of flour on a pizza board or a pizza shovel and pull the dough on top.
  • When everything is done correctly, you now have a very large and thin and perfect round pizza. Now it just has to be topped with the desired ingredients.
  • Top the homemade Pizza
  • As base topping homemade tomato sauce is used. Ideally, the tomato sauce is made from sun-ripened Italian San Marzano tomatoes or at least Roma tomatoes. In Naples, only San Marzano tomatoes from the Agro Nocerino Sarnese growing region are used.
  • Spread the tomato sauce evenly with a tablespoon and leave an edge of about 2 centimeters wide. The other ingredients can be chosen freely to taste.
  • At the example of the classic Margherita from Naples, it is only topped with the tomato sauce, mozzarella fior di latte or buffalo mozzarella and fresh basil leaves.
  • How to bake Pizza
  • Position the rack in the center of the oven. For the best baking result a pizza stone is needed. Place the stone on the rack and preheat the oven to 570 degrees Fahrenheit (300 degrees Celsius). If the oven supports only lower temperatures use the highest temperature available and use the bake mode setting. Her you can find a deatiled guide for baking pizza at home.
  • When the oven has reached the temperature, bake the pizza on the stone for about 5 to 8 minutes. How long it takes to bake depends on your oven and the preheating time. If you use lower temperature or much toppings the baking time increases.

Steps:

  • To prepare the dough for the pizza, start pouring the flour in a large mixer bowl.
  • In a small bowl add luke-warm water and then add the yeast, mixing gently until the yeast is dissolved.
  • Turn the mixer on with the hook mounted on medium-to-low speed and start pouring the water little by little, making sure you wait for the previous dose to be absorbed by the flour.
  • Keep kneading until the dough gets smooth and homogeneous. When it gets to that point, keep kneading for about 15/20 minutes.
  • Add the salt and keep the mixer running until the salt is fully combined with the dough.
  • When the salt is fully absorbed, remove the dough from the mixer and knead with your hands until you get a large ball.
  • Place it in a large bowl, cover with foil or a clean humid cloth, then let it rise in the oven with the light on.
  • Wait until the mixture has at least doubled in volume (after 1.5 h). Ideally, you should let it triple in size (at least 3 hours).
  • Once the dough has risen, transfer it on a work surface.
  • Divide it into 4 equal parts and shape them as balls using your hands. Once done, cover them with a clean cloth and let them stand for 30 minutes at room temperature, before using them to make your pizzas.

8 grams instant or active dry yeast (2 teaspoons)
7 grams kosher salt (1 teaspoon)
338 grams warm water (1 1/4 cups + 3 tablespoons)
13 grams olive oil (1 tablespoon)

Steps:

  • Combine the flour, salt, and yeast in a bowl or the bowl of your stand mixer. Stir to combine. Add the water and olive oil and stir until a raggy dough forms. Turn the dough out onto a floured surface.
  • Knead the dough by pushing with the base of your palm, then reforming it into a ball. Continue kneading for 8 minutes until the dough feels pillowy and has a smooth, stretchy exterior. If the dough is very sticky, add a small amount of flour while kneading. Alternatively: attach the dough hook to a stand mixer and start the mixer on medium-low speed, then allow the mixer to knead for 8 minutes.
  • After the kneading is finished, divide the dough into 3 equal pieces. Using floured hands, gently shape each half into a boule (ball shape) by folding the dough under itself. Set each boule on a floured surface and dab the dough with a bit of olive oil to keep it moist. Cover all boules with a damp towel and allow them to rise until doubled in size, about 45 minutes to 1 hour.
  • The dough can be used immediately. However for the BEST flavor, transfer the dough to separate sealed containers, large enough for the dough to double in size again, and store in the refrigerator for 2 to 3 days. (We always do this. But if you think ahead, it makes for a noticeably nutty, unique flavor that truly is the best homemade pizza dough you've ever had!)
  • The day of serving, remove the dough from the containers, place it on a lightly floured surface covered with a towel, and allow it to come to room temperature before stretching, 30 to 45 minutes.
  • When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don't have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!)
  • Stretch the dough into a circle; see How to Stretch Pizza Dough or follow these instructions: To stretch the dough, place it on the pizza peel or a lightly floured surface and gently press it into a circle, flipping several times and adding a pinch of flour if it is too sticky. Once you have about an 8-inch circle, pick up the dough and gently drape it over the knuckles on both of your hands. Slowly rotate it around, allowing gravity to stretch it into a circle about 11 inches in diameter. Do not overwork or fold the dough. If the dough starts to resist stretching, put it down and allow it to rest for a few minutes, at which point it will stretch more easily.

500 g of strong white 00 bread flour
175 ml cold water
150 ml cold milk
7 g of dried activated yeast
1 1/2 teaspoons salt
1 tablespoon honey
2 tablespoons olive oil
400 g fresh plum tomatoes (can substitute with canned tomatoes)
200 g tomato puree
1 teaspoon sugar (removes bitterness from tomatoes)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic puree
2 teaspoons oregano
12 fresh torn basil leaves (a sprinkle of dried basil would also suffice)
80 g fresh mozzarella cheese (in brine or something similar)
15 g parmigiano-reggiano cheese
40 g provolone cheese

Steps:

  • Sift the 00 flour in to a large mixing bowl and add the yeast and salt, make a well in the centre. Next mix the cold water, milk, honey and olive oil together in a mixing jug. Pour this in to the well, little by little, stirring and gradually bringing more flour in to the centre with a fork. Do this until all the flour is mixed in to the dough.
  • Next you want to knead the dough for 5-10 minutes so that it is of a smooth elastic consistency and does not stick. If you don't know how to knead dough check out www.youtube.com there are some great video's. Do this on a lightly floured surface with floured hands, applying a dusting of flour when needed. Hint: Use latex gloves to prevent dough from sticking to your hands.
  • Put the dough back in a lightly oiled bowl with a damp cloth to cover it. Let this sit in a warm place ideally about 40C or 100F until it has doubled in size this should take about an hour to an hour and a half. Remove the dough from the bowl and 'knock it back' punch the air out of it, do this for 1-2 minutes. Set this aside for later.
  • The secret of great dough is using ice cold ingredients (milk, and water). If you have time, let the dough sit in the refrigerator overnight when you reach this stage, you will need to knock it back once more before you roll it out. This will make approximately 2 largish pizzas.
  • For the tomato sauce i find using fresh tomatoes gives a better taste, plum tomatoes give a nice sweet taste or you can use canned ones here. Take the plum tomatoes and pierce the skin with a fork then blanch in boiling water for a few seconds, you should be able to remove the skin now. Put these in a saucepan and mash them up. Add all the other ingredients, apart from the basil, you can garnish with that on the finished pizza. Gently warm the ingredients for 5-10 minutes, don't burn it. There should be enough here for 2 fairly large pizza's.
  • Roll out the dough with a rolling pin on a well floured surface, apply the tomato sauce and then add your cheese. The amount of cheese in the recipe is per pizza, and should be enough for 1 fairly large pizza.
  • Grate the Mozzarella and apply evenly over pizza, sprinkle with Parmigiano-Reggiano and the grated provolone. The secret here is not to smother the pizza in cheese you want to be able to taste the full flavours in the pizza. A selection of Italian cheeses really makes a difference too.
  • Add your favourite topping, My favourite topping is some portobello mushrooms sauteed in garlic butter and bell peppers, but you can add whatever you want. Again try not to smother it with toppings, the Italians tend to take the less is sometimes more approach here.
  • Cook in a preheated oven on your maximum setting, probably about 250°C Watch it doesn't burn it will only need about 10 minutes. A great tip is use a pizza stone, if you cook a lot of pizza and don't have one then buy one. It transfers the heat very fast in to the dough and creates a great crispy base that is unmatched to any other methods of cooking it, apart from using an authentic pizza oven.

  • Place the flour in the bowl of an electric mixer, make a well in the centre and pour in the yeast mixture. With the dough hook attachment, mix on medium speed until mixture comes together to form a smooth dough. You can add ½ a teaspoon of water at a time if the mixture is too dry.
  • Lightly grease a bowl with olive oil and place the dough in the bowl. Cover with a tea towel and set aside in a warm spot to rise for at least 1 hour or until doubled in size.
  • Once the dough has risen, cut it into 6 pieces and roll each piece until you have 6 balls. Place the dough balls on a clean tea towel and cover with another tea towel. leave to rest for a further 1 hour.

If the dough is still too sticky sprinkle in a little more flour, if it's too dry add a little more water.
