4 tablespoons butter, melted
2 teaspoons lemon juice
1 -2 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon chopped parsley
1/3 cup breadcrumbs

Steps:

  • Preheat oven to 425. Lightly grease or spray a 13" x 9" (or larger) baking dish.
  • Rinse fish filets and pat dry. Set them in a single layer in the prepared baking dish.
  • In a small bowl, combine melted butter, lemon juice, garlic, sugar, pepper, thyme and parsley. Stir well. Pour evenly over fish filets.
  • Sprinkle with the breadcrumbs.
  • Bake at 425 for about 20 minutes or until filets are opaque and flakey.

1 cup couscous (preferably whole wheat)
2 tablespoons extra-virgin olive oil
3/4 teaspoon smoked paprika
Kosher salt and freshly ground pepper
4 6-ounce skinless catfish fillets
2 lemons (1 thinly sliced, 1 juiced)
1/3 cup roughly chopped fresh parsley or mint
1 medium red onion, thinly sliced
1 cup cherry tomatoes, halved
2 cloves garlic, finely chopped

Steps:

  • Preheat the oven to 425 degrees F. Lay a 2 1/2-foot-long sheet of aluminum foil on a baking sheet, letting the ends hang off. Lay another sheet of foil perpendicular on top. Rinse the couscous in a fine-mesh sieve under cold water. Mix the olive oil, paprika and 3/4 teaspoon each salt and pepper in a small bowl. Pile the couscous in the center of the foil; toss with 1/2 tablespoon of the seasoned oil and spread in an 8-inch-square layer.
  • Brush the fish fillets on both sides with 1 tablespoon of the seasoned oil and arrange side by side on top of the couscous. Toss the lemon slices, parsley, red onion, tomatoes, garlic and the remaining 1/2 tablespoon seasoned oil in a bowl, then scatter evenly over the fish and couscous. Drizzle with 2/3 cup water, then bring the opposite ends of the foil together, fold over and crimp closed to make a sealed packet. Transfer the foil packet (on the baking sheet) to the oven and bake 25 minutes.
  • Open the foil packet; divide the fish among plates. Toss the couscous and vegetables; serve with the fish. Sprinkle with the lemon juice.

My 7 yr old came home from a friend's house raving about dinner and saying I *had* to call and get the recipe. I was surprised when she said it was fish, as she is not the biggest fan. When I asked if she knew what kind of fish it was, she nodded enthusiastically and said it was 'caught fish.' I made a phone call to check it out...here for you is my friend's recipe for super easy 'cod fish.' ;o) BTW, she said bags of frozen cod fillets were readily available at the local Sam's warehouse but had been hard to find at the groceries.

  • Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.

  • Spray a shallow baking dish with vegetable spray.
  • Cut fish into individual serving pieces.
  • Dip fish into butter and then coat each fillet well with bread crumbs.
  • Place bread coated fillets into baking dish.

  • Spoon the remaining herb butter mixture over fish.

  • Fish is done when fish flakes easily with a fork.

1 tablespoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
1 fresh jalapeno pepper, sliced
1 lemon, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
  • Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. 3 fish fillets (tilapia, whiting, etc.)
2 tablespoons low-fat mayonnaise
2 teaspoons spicy brown mustard
2 teaspoons garlic powder
salt and pepper
2 teaspoons coriander (parsley can easily substitute)
1 cup lemon juice
2 cups corn flake crumbs (toast crumbs or breadcrumbs can substitute)
Pam cooking spray
lemon wedge

Steps:

  • Marinade fish fillets in lemon juice and 1 tsp of garlic powder as well as a little salt for around 10 minute.
  • Combine mayonnaise, mustard, and the remaining 1 tsp of garlic powder.
  • In a second container, combine the cornflake crumbs and coriander.
  • Remove fillets from marinade, and spread on them the mayo/mustard, and then coat them completely with the cornflake mixture.
  • Place them in an oven safe dish that's been sprayed with Pam or other cooking spray.
  • Spray more Pam on top of the fish (this will make the fish crust crispy), and bake in the oven at 450 degrees for 10-15 minutes, depending on the thickness of the fish.
  • Serve with lemon wedges.
