Wake-Up Casserole - Canadian Bacon image

The original recipe is delicious, but this is my healthier version, with less fat and calories. It also freezes beautifully and individual portions can be reheated in 3 minutes in the microwave. As a single person, I can't eat 8 portions at one sitting, so I divide and freeze. But it's great if family visits, because I can have the portions ready to reheat, and it's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.

8 frozen hash brown patties
2 (6 ounce) packages Canadian bacon, quartered
4 cups shredded Cheddar-Monterey Jack cheese blend
1 ¾ cups egg substitute (such as Egg Beaters® Southwestern Style)
1 cup 2% milk
½ teaspoon salt
½ teaspoon ground mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Arrange hash brown patties in a single layer in the prepared baking dish; top with Canadian bacon. Sprinkle Cheddar-Monterey Jack cheese over Canadian bacon.
  • Whisk egg substitute, milk, salt, and mustard together in a bowl; pour over cheese layer. Cover dish with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove aluminum foil and bake until a knife inserted in the center comes out clean and edges are golden brown, about 15 minutes.

This is a lightened version of one my favorite breakfasts. Hot pepper sauce is necessity! Sprinkle it over the top before you dig in! Canadian bacon comes from the loin area of the hog so it is very lean and quite tender.

1 pound collard greens, rinsed and trimmed
1 onion, chopped
¼ pound salt pork
6 egg whites
salt and pepper to taste
4 thick slices Canadian-style bacon
4 thick slices whole-grain bread, toasted
1 cup shredded Cheddar cheese
2 tablespoons chopped fresh chives

Steps:

  • Place collards, onion and salt pork in a large saucepan. Cover with water and cook over medium heat, until greens are tender (about 15 to 20 minutes). Drain, discard pork, reserve the greens and onions and set aside.
  • Spray a nonstick skillet with cooking spray. Heat skillet over medium high heat and add egg whites. Season with salt and pepper to taste and saute all together, stirring constantly until done to taste.
  • Meanwhile, spray another nonstick skillet with cooking spray and heat over medium high heat. Saute Canadian bacon on both sides until lightly browned. Remove from skillet and drain on paper towels.
  • To Assemble Stacks: Place bread slices on a broiler pan. Top each with 1 slice Canadian bacon and equal portions greens, egg whites and cheese. Broil until cheese bubbles and melts. Sprinkle chives on top and serve.

3 cups low-sodium chicken broth
4 medium potatoes, peeled and diced
2 celery ribs, diced
1 medium carrot, diced
1 small onion, diced
6 ounces Canadian bacon, trimmed and diced
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup skim milk
2 cups shredded reduced-fat cheddar cheese
1/8 teaspoon pepper

Steps:

  • In a Dutch oven or soup kettle, combine the first five ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are very tender. With a potato masher, mash vegetables several times. Add bacon; continue to simmer. Meanwhile, melt butter in a small saucepan; stir in the flour and cook, stirring constantly, for 1 minute. Gradually whisk in milk. Bring to a boil; boil and stir for 2 minutes (mixture will be thick). Add vegetable mixture, stirring constantly. Remove from the heat; add cheese and pepper. 1 can (12 ounces) fat-free evaporated milk

1/4 teaspoon salt
1/8 teaspoon pepper
7 tablespoons fat-free sour cream
1/3 cup minced chives

Steps:

  • In a large saucepan or Dutch oven coated with cooking spray, saute onions until tender. Add potatoes and broth; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until potatoes are very tender. Set aside 1 cup potato mixture., Puree remaining mixture in batches in a blender or food processor; return to the pan. Stir in the milk, Canadian bacon, butter-flavored granules, salt, pepper and reserved potato mixture. Heat through (do not boil). Garnish each serving with 1 tablespoon sour cream; sprinkle with chives.

Lovely colors and flavors in a reduced-fat version of a classic quiche. This would be a wonderful addition to your brunch table or a quick and healthy week-night supper. The crust is made of bread slices so this is easily adapted to solo or duo cooking, using individual baking dishes.

vegetable oil cooking spray
6 slices bread, your choice
1 cup diced Canadian bacon or 1 cup lean ham
1/2 cup red bell pepper, finely diced
2 green onions, thinly sliced
1 cup low-fat milk
1/2 cup egg substitute (or 2 more eggs)
2 whole eggs
1/2 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Spray a 9-inch pie dish with vegetable oil spray.
  • With a rolling pin, flatten each slice of bread on a cutting board or flat surface.
  • Cut 5 slices in half vertically (from top crust to bottom crust).
  • Cut a 3-inch circle from the remaining slice with a round cookie cutter or a knife (this will go in the center of the crust).
  • Place slices of bread in the bottom of the pie dish, slightly overlapping each piece to form a crust, gently pressing in the bottom and partially up the side of the pie dish.
  • Place the reserved bread circle in the center and gently press down into the other slices of bread.
  • Bake for 10 minutes, or until bread is toasted and golden brown. Remove from oven and place on a cooling rack.
  • Scatter Canadian bacon evenly in the bottom of the crust. Top evenly with red bell pepper and green onions.
  • In a medium bowl, whisk together the milk, egg substitute, eggs, Parmesan cheese, oregano, salt, and pepper, until blended.
  • Carefully pour egg mixture over the meat and vegetable filling and place the pie dish on a baking sheet.
  • Bake for 35 to 40 minutes, or until center is set. Remove from oven and let mixture rest 5 minutes before cutting into wedges.

I used Shorts (which they make here) beer called Cabin Fever... The cheese sauce you will find in pasta sauce section, I used Cheesy Ragu double cheddar.
