SWEET POTATO (YAM) CASSEROLE WITH MARSHMALLOWS
This is a compilation of a couple of different recipes I found on the web. My husband loves sweet potatoes with LOTS of marshmallows and wanted a casserole like one of his aunts used to make. After a few trials, this was the final incarnation. It is now a Thanksgiving staple for both his and my family's dinners.

Steps:
- Spray 1 quart baking dish with Pam.
- Heat oven to 350 degrees.
- Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
- Mix well.
- Place 1/2 mixture in baking dish.
- Top with a layer of marshmallows, then add remaining mixture.
- Bake for 30 minutes.
- Remove from oven and top with remaining marshmallows.
- Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.

CANNED SWEET POTATO CASSEROLE WITH MARSHMALLOWS
Creamy sweet potatoes are lightly sweetened and seasoned, then mashed and topped with crunchy pecans and marshmallows. It's all baked up until toasty brown and yummi!

Steps:
- Heat oven to 375 degrees F. Grease the inside of an 11 x 7-inch baking dish with non stick cooking spray.
- Place potatoes into a large mixing bowl. Add sugar, butter, salt, cinnamon, and vanilla extract; Mash mixture with a potato masher.
- Stir in 1/4 cup of pecans.
- Spread potato mixture into an even layer in the prepared baking dish. Sprinkle remaining 1/4 cup of pecans over the mixture, then top with marshmallows.
- Bake at 375 F. for 20 minutes or until marshmallows are toasted. Remove pan from oven and serve while warm.
- If covered well and refrigerated, leftovers will stay good for up to 5 days. Reheat in a dish covered with aluminum foil in oven at 350 degrees F. for 15-20 minutes, or microwave uncovered for 2-3 minutes.

CANDIED CANNED YAMS WITH MARSHMALLOWS (GF)
This casserole is always a big hit at holiday meals. Yams surrounded with a thick sauce and topped with marshmallows... It's a vegetable that almost tastes like a dessert!

Steps:
- Preheat oven to 350 degrees. Spray a 9x13x2 baking pan (or 4 quart casserole) with cooking spray.
- Mix flour, brown sugar and salt in a microwavable 4 cup measuring cup.
- Add syrup from yam cans so that the measuring cup contains about 2 1/2 cups. (You'll add about 2 cups of syrup, but some of the sugar and flour dissolves.) Stir.
- Add butter, sliced.
- Microwave, stirring frequently, until sauce is thick, but still pourable. This step took me about 10 minutes. I start with 90 seconds, then stir every 30 or 20 seconds. If it gets too thick, add water and stir.
- Place yams in sprayed casserole. Pour sauce over yams. Bake until the sauce starts to bubble, about 25 minutes.
- Top with marshmallows and return to the oven to brown, about 10 minutes.

CANDIED CANNED YAMS WITH MARSHMALLOWS
Can not remember where I got this recipe but have been using it for years. Everyone asks for Me to bring it for family and friend get together.

Steps:
- Drain yams saving 3/4 cup of the syrup.
- Combine syrup, butter, raisins, cinnamon and marshmallows.
- Heat over medium stirring till marshmallows melt.
- Add yams and stir.
- Pour mixture into casserole dish.
- Bake at 350 degree oven for 30 minutes.
- Top with some extra mini marshmallows and bake additional 10 minutes til browned.
YAM AND MARSHMALLOW CASSEROLE
A sweet side dish which goes excellent with turkey dinner. A fairly quick dish to prepare and bake, and really tasty. You can substitute the yam for a sweet potato.

I love this! You can use sweet potatoes, but I prefer yams. No sugar or marshmallows in this. The sweetness comes from a banana. Great with ham or for Thanksgiving or anytime!

- Preheat oven to 350. Lightly spray a 2 quart casserole dish with nonstick cooking spray.
- Boil yam chunks in salted water until tender (about 10-15 minutes, depending on the size of your chunks). Drain.
- Place cooked, drained yam chunks in a large bowl. Add banana. Mash together with a potato masher.
- Add 3 tbsp butter and the sour cream. Mash to combine well. Mash in the salt, cinnamon, ginger and nutmeg.
- Place mashed mixture into prepared casserole dish. Evenly drizzle with the 1 tbsp melted butter.
- Bake uncovered, at 350 for 20 minutes or until top just begins to slightly brown.

- Preheat the oven to 400 degrees F (200 degrees C). Spray 2 pieces of aluminum foil with cooking spray.
- Mash drained yams in a large bowl with a fork. Add ingredients in the following order, mixing well after each addition: brown sugar, cinnamon, cloves, allspice, and heavy cream. Pour mixture into two 8-inch square baking dishes. Sprinkle 1/2 of the marshmallows over each dish and cover with aluminum foil, spray-side down.
- Bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 5 minutes.
