¼ cup butter
2 cloves garlic, minced
½ cup chopped onion
½ cup chopped celery
½ cup chopped baby carrots
½ cup all-purpose flour
2 teaspoons white sugar
1 teaspoon salt

½ teaspoon ground black pepper
4 cups chicken broth
1 (10 ounce) can peas, drained
4 cups diced, cooked chicken meat
2 cups buttermilk baking mix
2 teaspoons dried basil
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a skillet, melt the butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots in butter until tender. Mix in the flour, sugar, salt, 1 teaspoon dried basil, and pepper. Stir in broth, and bring to a boil. Stirring constantly, boil 1 minute, reduce heat, and stir in peas. Simmer 5 minutes, then mix in chicken. Transfer mixture to the prepared baking dish.
  • In a medium bowl, combine the baking mix and 2 teaspoons dried basil. Stir in milk to form a dough. Divide the dough into 6 to 8 balls. On floured wax paper, use the palm of your hand to flatten each ball of dough into a circular shape; place on top of chicken mixture.
  • Bake in the preheated oven for 30 minutes. Cover with foil, and bake for 10 more minutes. To serve, spoon chicken mixture over biscuits.

1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2-inch chunks
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 teaspoons olive oil
1 medium onion, chopped
2 medium carrots, chopped
2 celery stalks, chopped
1/2 pound green beans, trimmed and chopped into 1/2-inch pieces
2 cloves garlic, minced
1 1/2 cups lowfat milk
1/4 cup all-purpose flour
1 cup low-sodium chicken broth
1 cup peas, thawed if frozen
1 1/2 tablespoons fresh thyme leaves
1/2 cup whole-wheat flour
1/4 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons cold unsalted butter, cut into small pieces
1/2 cup lowfat buttermilk
2 tablespoons canola oil

Steps:

  • To make the filling: Preheat the oven to 375 degrees F. Spray a large shallow casserole dish, or 6 individual casserole dishes with cooking spray.
  • Season the chicken with 1/4 teaspoon each salt and pepper. In a large nonstick skillet, heat 2 teaspoons of the oil over a medium-high heat. Add the chicken to the pan and cook for 5 minutes, stirring occasionally. Transfer the chicken with its juices to a bowl.
  • Add 2 more teaspoons of oil to the same pan and heat it over a medium-high heat. Add the onions, carrots and celery and cook until the vegetables begin to soften, about 3 minutes. Add the green beans, garlic and remaining salt and pepper and cook for 2 minutes more. Add the milk. Stir the flour into the broth until it is completely dissolved and add to the pan. Cook, stirring, until the mixture comes to a boil. Reduce the heat to medium-low and cook for 2 minutes more. Return the chicken with its juices back to the pan. Add the peas and thyme and stir to combine. Season with salt and pepper, to taste. Spoon the mixture into the baking dish or individual dishes.
  • To make the crust: Put the whole-wheat flour, all-purpose flour, baking powder, baking soda and salt into a food processor and pulse a few times to combine. Add the butter and pulse about 12 times, or until pebble sized pieces are formed. Add the buttermilk then oil to the food processor and pulse until just moistened. Do not over mix.
  • Drop the batter in 6 mounds on top of the chicken mixture (1 mound on each individual dish, if using) spreading the batter out slightly. Bake until filling is bubbling and the biscuit topping is golden brown, about 20 minutes.

1/2 cup butter
1 package (8 oz) fresh cremini mushrooms, quartered
1/2 cup chopped onion
1 teaspoon finely chopped garlic
1/2 cup Immaculate Baking Co.™ organic all-purpose flour
2 1/2 cups chicken broth
3 small red potatoes, (about 1/2 lb) unpeeled, coarsely chopped (2 cups)
1/2 cup coarsely chopped carrots
3 cups chopped cooked chicken
1 1/4 teaspoons sea salt
1/2 teaspoon black pepper
1/2 cup frozen baby sweet peas
1/2 cup heavy whipping cream

Steps:

  • Heat oven to 400°F. Grease 13x9-inch (3-quart) glass baking dish with butter, or spray with cooking spray.
  • In medium bowl, stir together 1 1/2 cups flour, the baking powder and 1 teaspoon salt. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in cheese and buttermilk just until blended; set aside.

⅓ cup olive oil
2 tablespoons garlic powder

2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Spray a 9x13-inch baking dish with cooking spray.

2 lbs chicken breast tenders, chopped
1 (15 1/3 ounce) box mashed potatoes
1 (16 1/3 ounce) package Pillsbury Grands refrigerated buttermilk biscuits
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon pepper
2 (12 ounce) jars chicken gravy
1 (10 -14 ounce) bag frozen corn

Steps:

  • 1. Boil water in large pot. Chop chicken and add into the pot once it is boiling. It will be done when it is no longer pink. Strain when done.
  • 2. Follow direction on box for making mashed potatoes, unless you want to make your own from scratch. Once potatoes are made, stir in some seasonings and butter to flavor.
  • 3. Follow directions and boil or steam corn.
  • 4. In a large baking dish, spread mashed potatoes on bottom of pan( about a 1/2 inches thick or so) then spread corn on top of potatoes and add some chicken spread evenly on top. Add seasoning however you like to taste. Then add some gravy evenly over it all. Repeat these steps for second layer except this time after the gravy, add a layer of biscuits.
  • 5. Back according to biscuit package.
  • 6. Heat up other jar of gravy and serve hot portions with gravy over top.

10 slices bacon, fried crisp and crumbled
2 1/2 cups cooked chicken, cubed (canned chicken works well also)
1 (14 1/2 ounce) can mixed vegetables, drained
1 (14 1/2 ounce) can diced tomatoes
2 cups shredded cheddar cheese
2 (10 1/2 ounce) cans cream of chicken soup
1 cup milk
3 cups biscuit mix
1 1/3 cups milk

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

3 cups cooked shredded chicken
2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste
2 ½ cups shredded Cheddar cheese
1 ½ cups bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine chicken, broccoli, condensed soup, sour cream, and pepper in a bowl. Mix in 1 cup Cheddar cheese. Pour into a 2-quart casserole dish and top with remaining Cheddar cheese.
  • Combine bread crumbs and butter in a bowl. Sprinkle over casserole.
  • Bake in the preheated oven until bubbly and cheese is melted, 30 to 35 minutes.

I adapted this recipe from one someone else posted and it has become my go-to casserole any time unexpected guest arrive and I want a fast meal because I usually have all the ingredients on hand. It's also very popular with my family anytime. The prep time does not include cooking time for the chicken. This recipe is great to use up left over chicken or turkey and I've even used a pre-cooked chicken from the deli.

1 -3 lb chicken, cooked and de-boned
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
1 (14 1/2 ounce) can butterball chicken broth
1 (15 ounce) can mixed vegetables
1/2 cup butter, melted
1 cup buttermilk
1 cup self-rising flour
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Cube chicken and place in greased 2-3 quart casserole dish.
  • Combine the cream of chicken soup, chicken broth, and the mixed vegetables and pour over chicken.
  • Combine margarine, buttermilk, flour, salt and pepper and pour over above mixture to make crust.
  • Bake at 425 for 30 minutes or until biscuit topping is nicely browned.

1/4 cup grated Parmesan cheese
1 tablespoon dried minced onion

Steps:

  • In a large saucepan, combine the first six ingredients. Cook and stir over medium heat for 5-7 minutes or until heated through; keep warm., In a large resealable plastic bag, combine the cheese, onion, parsley and paprika. Separate biscuits and cut into quarters; add to bag and shake to coat. Place on an ungreased baking sheet. 1/3 cup butter, cubed
1 large onion, chopped
2 celery ribs, chopped
2 medium carrots, chopped
2 garlic cloves, minced
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
4 cups chicken broth or stock
5 cups cubed cooked chicken
3 cups biscuit/baking mix
3/4 cup 2% milk
1 cup shredded cheddar cheese
1 cup roasted sweet red peppers, drained and chopped

Steps:

  • Preheat oven to 425°. In a 6-qt. stockpot, heat butter over medium-high heat. Add onion, celery and carrots; cook and stir 3-5 minutes or until tender. Add garlic; cook and stir 1 minute longer. Stir in flour, salt and pepper until blended; gradually whisk in broth. Bring to a boil, stirring constantly; cook and stir over medium heat 4-6 minutes or until thickened. Add chicken., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, 20 minutes. Meanwhile, in a large bowl, combine biscuit mix and milk just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times. Roll dough into a 12x8-in. rectangle. Sprinkle with cheese and peppers. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut crosswise into 1-in.-thick slices. Place slices on top of hot chicken mixture. 2 boneless skinless chicken breasts, cubed
5 medium potatoes, cubed
1 (10 1/2 ounce) can cream of chicken soup
2 tablespoons minced garlic cloves
1/4 cup celery, chopped
1/2 small onion, sliced
2 tablespoons chicken bouillon granules
1/2 cup warm water
1/4 cup butter
2 tablespoons lemon juice
1 tablespoon oregano
1 tablespoon italian seasoning
salt & pepper

Steps:

  • 1. Preheat oven to 400 degrees. Grease 9 x 13 dish with cooking spray.
  • 2. Place cubed chicken, potatoes, garlic, celery, & onion in dish and toss together.
  • 3. Mix water & chicken boullion until dissolved (or you can use 1/2 cup chicken broth).
  • 4. Melt butter and add to chicken broth, also add cream of chicken soup, lemon juice, oregano, and italian seasoning, mix well, then pour over top of chicken and potatoes.
  • 5. Season with salt & pepper to taste.
  • 6. Cover with foil and bake for approximately 45 minutes, then uncover and bake for another 20-25 minutes.
