Chilean Rice image

This rice is a mild tasting pilaf-type of rice that goes well with spicy foods. If you like to spice it up, adding some chopped green chiles works well.

1 1/2 cups uncooked long grain rice
2 tablespoons lard
1/4 cup chopped onions or 1/4 cup scallion
2 tablespoons finely diced red bell peppers
2 tablespoons finely diced carrots
2 1/4 cups chicken broth or 2 1/4 cups vegetable broth, heated
1 teaspoon salt
2 tablespoons finely chopped cilantro (optional)

Steps:

  • Rinse rice several times under cold water in a sieve and drain.
  • Cook the onion, bell pepper, and carrot in lard for 2 minutes.
  • Add the rice and cook another minute, allowing rice to get thoroughly coated with lard.
  • Add the hot broth, and salt and bring to a boil.
  • Reduce heat, cover and simmer for 15-20 minutes on low heat, until liquid is absorbed and rice is tender (do not stir while cooking).
  • Fluff rice with a fork and garnish with chopped cilantro.
  • Serve hot.

Steps:

  • Mix 2 cups cooked rice, 1/2 cup sour cream, 1 cup chopped scallions, a 4-ounce can chopped green chiles (drained), 1 cup shredded cheddar, and salt and cayenne to taste. Butter a casserole dish and sprinkle with parmesan. Spread the rice mixture in the dish, sprinkle with more parmesan and dot with butter. Bake 20 minutes at 450 degrees.

A Chilean friend taught me how to make this. I was addicted to it for a LONG time. This dish is quite tasty when eaten with my other recipe 'Dal Curry'. Enjoy!

2 cups basmati rice
water
1 chopped onion
vegetable oil (for frying)
1 peeled and chopped English cucumber
2 cups chopped tomatoes
1/2 cup thinly sliced onion
1 cup chopped cilantro leaf
lemon juice
salt
vegetable oil

Steps:

  • Clean rice.
  • Cover with plenty of water and boil until done.
  • Drain and rinse with cold water.
  • Saute chopped yellow onion in bottom of deep pot.
  • When soft, add rice and salt and combine.
  • Reduce heat to low and let simmer awhile.
  • Prepare vegetable topping and let marinate.
  • Dish rice and top with vegetables.
  • This dish is very good with Dal Curry (another recipe I've posted on this board).

4 thick slices smoked bacon, cut into 1/2 inch pieces
2 cups rice, preferably medium grain
2 cups Mellow Red Chile Salsa
1 1/2 cups hot rich-tasting chicken broth or hot water
1/2 teaspoon salt
4 green onions, sliced crosswise 1/4 inch thick
1 pound medium-large (about 24) shrimp, peeled and deveined
1/2 cup chopped fresh cilantro

Steps:

  • Heat the oven to 350 degrees. In a 3-quart ovenproof saucepan, cook the bacon over medium heat, stirring, until crispy and brown, about 5 minutes. Remove with a slotted spoon, leaving behind the fat (you'll need a generous tablespoon to fry the rice). Set the crisp bacon aside. Add the rice to the pan and cook, stirring, until lightly browned, about 5 minutes.
  • Add the salsa and stir for 1 minute, then add the broth, salt and green onions. Bring to a boil, stir once, cover tightly and bake for 25 minutes. Remove from the oven.
  • Uncover and lay the shrimp on top of the rice mixture; re-cover and bake until the shrimp is opaque, 7 to 10 minutes. Sprinkle with the cilantro and crispy bacon, mix everything thoroughly with a fork and serve.

  • Add the rice to the milk pot and start stirring. The idea is to cook the rice for 30 minutes until it is fully cooked and the milk has been reduced by half more or less. You do not have to stir all the time, but I stay in the kitchen and stir it every 1-2 minutes. The important thing is that the rice does not stick to the bottom of the pot; the milk should be simmering.
  • Taste after 30 minutes; if the rice is cooked, add the sugar, cook for three more minutes, remove from the heat, and serve warm or cold. The next day, it’s even more decadent. Store in the refrigerator.
