1/4 teaspoon grated orange zest, plus 2 tablespoons orange juice
1 chipotle chile pepper in adobo, finely chopped, plus 1 tablespoon sauce from the can
1 teaspoon ground cumin
1 teaspoon ground coriander
1 1/4 pounds skirt steak, cut into 4 pieces
2 tablespoons unsalted butter, at room temperature
1 tablespoon chopped fresh parsley, plus more for topping
Kosher salt
1 1/2 pounds green beans, trimmed
1 small red onion, halved and sliced
4 teaspoons extra-virgin olive oil

Steps:

  • Preheat a grill to medium high. Combine the orange juice, adobo and 1/2 teaspoon each cumin and coriander in a shallow dish. Add the steak and turn to coat. Set aside to marinate, 15 minutes. Meanwhile, combine the butter with the orange zest, chopped chipotle, parsley and 1/4 teaspoon salt; refrigerate until ready to serve.
  • Crimp the edges of a 24-inch-long piece of foil to create a rimmed tray; set aside. Place the green beans in a large microwave-safe bowl with 1 tablespoon water; cover with plastic wrap and microwave until crisp-tender, 5 to 7 minutes. Drain and return to the bowl; add the red onion, olive oil, the remaining 1/2 teaspoon each cumin and coriander and 1/2 teaspoon salt. Spread the vegetables on the foil tray.
  • Transfer the tray to the grill and cook, tossing the vegetables occasionally, until they are tender and lightly charred, about 10 minutes. Remove the steak from the marinade and grill 3 to 5 minutes per side for medium rare; transfer to a cutting board and let rest 5 minutes, then slice against the grain.
  • Top the steak with the chipotle butter. Season the vegetables with salt and top with parsley. Serve with the steak.

We like it chili-y! To make this slightly less healthy, which (evidently) is my eternal quest, make sure to add lots of cheddar cheese and sour cream. And avocado. And onion. And a big glass of milk. *murp* And maybe, on the side, a timely appointment in the cardiac department. No, seriously, it's not that unhealthy.

1 1/2 lbs beef shoulder top boneless blade steaks (I use top sirloin) or 1 1/2 lbs flat iron steaks (I use top sirloin)
1 tablespoon canola oil
2 cups chopped onions
1 cup chopped green sweet pepper
4 garlic cloves, minced
2 (15 ounce) cans pinto beans (I mixed kidney and pintos) or 2 (15 ounce) cans black beans, rinsed and drained (I mixed kidney and pintos)
1 -2 teaspoon chopped chipotle chile in adobo
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes, undrained
1/2 cup water, drained (HA! Fooled ya! Don't drain. ,o)
4 tablespoons chili powder
1 teaspoon dried basil, crushed
1/2 teaspoon black pepper
shredded cheddar cheese (optional)
sour cream (optional)
chopped onions (optional) or scallion (optional)
avocado, slices (optional)

Steps:

  • Cut beef into ¾" cubes.
  • In a 4-quart Dutch oven, brown meat, half at a time, in 1 tablespoon hot cooking oil.
  • Remove meat, reserving drippings in pan.
  • Cook onion, sweet pepper and garlic in drippings until tender; drain fat.
  • Return meat to Dutch oven. Stir in chipotle chili peppers in adobo sauce.
  • Stir in beans, tomatoes, tomato sauce, water, chili powder, basil and black pepper.
  • Bring to boiling; reduce heat.
  • Simmer, covered, about 1 hour or until the meat is tender.

1 (7 1/16 ounce) can chipotle chiles in adobo
1 tablespoon chili powder
3 tablespoons vegetable oil, divided
2 teaspoons kosher salt, divided

2 teaspoons red wine vinegar
1 teaspoon dried oregano
1/4 teaspoon fresh ground black pepper
1 1/2 lbs chuck steaks, cut 2-inches thick, about 3 steaks
12 (6 inch) flour tortillas
2 cups monterey jack cheese, shredded
2 romaine lettuce hearts, shredded
2 cups salsa

Steps:

  • Marinade:.
  • To the bowl of a food processor or blender add 1/2 cup water, onion, garlic, 2 tablespoons adobo sauce (from can of chili's), 1 chipotle chili, also from can, chile powder, 1 tablespoon oil, 1 teaspoon salt, cumin, vinegar, oregano, and black pepper.
  • Blend until completely smooth, add 1/2 cup water stirring to combine.
  • Place steak in a large non-reactive container, with enough room for the adobo sauce.
  • Pour sauce over steak, turning chicken to coat evenly. Cover and refrigerate for 10 to 12 hours (overnight) for the most intense flavor; steak can be marinated for up to 2 days. Remove steak from marinade, pat dry with paper towels, and place in a medium bowl. Season with remaining teaspoon salt.
  • Cook Steak:.
  • In a large skillet over medium heat remaining 2 tablespoons oil. Add steak to the skillet and cook until underside is deep brown, about 4 minutes; turn and cook until the golden brown on the other side, another 4-5 minutes. 2 tablespoons adobo sauce ((see note 1))
2 tablespoons ancho chile powder ((see note 2))
2 tablespoons olive oil (or rice bran oil, plus more for the cooking surface (see note 3))
2 teaspoons ground cumin
2 teaspoons dried oregano ((see note 4))
Salt and freshly ground black pepper
4 pounds steak (such as sirloin, round steak, or flat iron steak (see note 5))

Steps:

  • To make the marinade, in the bowl of a food processor or blender, add garlic, adobo sauce, ancho chile powder, olive oil, cumin, dried oregano, 1 tablespoon salt, and 1 teaspoon pepper. Blend until smooth (add water if needed to fully blend the marinade).
  • In a large zipper-top plastic bag or bowl, add steak and marinade, tossing to coat. Let the beef marinate at room temperature for 30 minutes or up to 12 hours in the refrigerator. Bring to room temperature for at least 30 minutes before cooking.
  • In a large skillet over medium-high heat, heat 2 tablespoons olive oil until shimmering. Add marinated steak to the skillet and cook, stirring occasionally, until the temperature reaches 135 degrees for rare or 145 degrees for medium-rare. Depending on the size of your skillet, you can cook the steak in batches.

2 lbs skirt steaks
1/4 onion
2 garlic cloves
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon chopped cilantro
1 -3 chipotle pepper (use more peppers if you like the heat)
2 teaspoons adobo sauce
corn tortilla, shredded cheese, avocado, sour cream, lettuce, lime wedges, salsa (not your standard store bought salsa!)

Steps:

  • Puree a single chipotle pepper (not the whole can) + 2 tsp of the adobo sauce with the onion, garlic, cumin, coriander, salt and pepper. Taste and add more chipotle if needed. Stir in the cilantro. Throw it all in a zip lock bag with the skirt steak for at least 2 hours. Grill medium-rare. Cut the skirt steak into thin strips across the grain. Serve with taco accompaniments.
  • Note: I throw the corn tortillas directly on the grill 30 seconds, flip, add cheese, grill 30 seconds, remove. This melts the cheese oh-so-perfectly and chars the tortilla edges just a tiny bit for that crunch. Heating it also takes away some of the "rawness" that corn tortillas have when they are straight out of the bag.

Steps:

  • In work bowl of a food processor, combine garlic and chilies; pulse to form a chunky paste.
  • Add lime juice, oregano, chili powder, beer and olive oil. Pulse to combine.
  • Place steak in a shallow dish or large zip-top plastic bag. Add marinade and turn to coat. Cover and refrigerate for at least 3 hours or overnight.
  • Heat grill to medium-high. Brush excess marinade from steak and season well with salt and pepper. Grill until medium-rare to medium. Set aside and let rest, covered loosely with foil, for 10 minutes before slicing.
  • Meanwhile, heat a large sauté pan over high heat. Add enough oil to lightly coat pan.

1 (15.5-oz) bag [Hurst's Slow Cooker Chili](/products/hursts-slow-cooker-chili)
6 cups beef broth
2 pounds sirloin steak or London broil
Salt & pepper to taste
Vegetable oil
1 large or 2 medium onions, diced
2-3 tablespoons fresh minced garlic (I used an entire bulb)
1 7-oz can chipotle chiles in adobo sauce (see notes)
1 14-oz can petite diced tomatoes, undrained
1 teaspoon cumin
1 teaspoon salt
1 teaspoon oregano

Steps:

  • Add beans WITHOUT seasoning packet (set aside to add later) and beef broth to a large slow cooker. Cook on high for 4 hours (see notes below about alternative cooking method).
  • Cut steak into bite-sized pieces, season liberally with salt and pepper then sear in a large skillet coated with oil. Cook the steak in 2-3 batches - don't overcrowd the pan. Don't cook the steak all the way through, just get a nice sear on the pieces. Place steak and all pan juices into the slow cooker.
  • To the same skillet, add a little more oil then sauté onion for 4 minutes. Add garlic and continue cooking for 2 minutes. Add contents of the skillet to the slow cooker.
  • Remove 2 chipotle chiles from adobo sauce then dice (see notes about spiciness!). Add diced chipotles, 2 tablespoons of adobo sauce and remaining ingredients to slow cooker. Reduce heat to low then continue cooking for 2-3 hours or until beans are tender.
  • Let chili rest, uncovered, for 30 minutes before serving (this will thicken the chili)

2 -3 chipotle chiles in adobo, minced
1 1/2 tablespoons garlic, peeled and minced

½ pound tomatillos - husked, stemmed, and halved
4 cloves garlic, peeled

Steps:

2 tablespoons olive oil
2 pounds steak - cut into 1 inch cubes
2 onions, chopped
3 cloves garlic, minced
1 green chile pepper
2 tablespoons chili powder
1 tablespoon ground cumin
1 ½ teaspoons ground cayenne pepper
2 (29 ounce) cans diced tomatoes
1 (15 ounce) can kidney beans, drained

Steps:

  • In a large pot over medium high heat, combine the oil and steak and saute for about 5 minutes, or until steak is browned. Add the onions, garlic and chile pepper and saute for another 5 minutes, or until the onions are translucent.
  • Add the chili powder, cumin, cayenne pepper, tomatoes and kidney beans. Reduce heat to low, cover and simmer for about one hour. Remove cover and simmer for another 30 minutes, or until you've reached your desired thickness.

Give your flank steak a sweet and spicy kick with a delicious rub made from a blend of different chili powders, cumin, brown sugar and thyme. Finish it off with a squeeze of fresh lime when it comes off the grill.

1 lime, plus wedges for serving
1 tablespoon chili powder
1 tablespoon packed light brown sugar
2 teaspoons chopped fresh thyme
1 teaspoon ground cumin
1 teaspoon chipotle chile powder
Kosher salt and freshly ground pepper
1 1 1/2- to 2-pound flank steak
Vegetable oil, for the grill

Steps:

  • Grate the zest of 1 lime; cut the lime in half. Combine zest with the chili powder, brown sugar, thyme, cumin, chipotle powder, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Squeeze the zested lime over the steak and use the lime halves to rub the juice into the meat. Rub the spice mixture on both sides of the steak. Let stand at room temperature, 30 minutes.
  • Meanwhile, preheat a grill to medium high. Brush the grates with vegetable oil. Grill the steak until well browned, about 8 minutes. Flip and grill until a thermometer inserted sideways into the center registers 130 degrees F to 140 degrees F, 5 to 7 more minutes for medium rare (the thinner edges of the steak will be cooked to medium).
  • Transfer to a cutting board and let rest 10 minutes. Season with salt and thinly slice against the grain. Serve with lime wedges.

1 pound bulk hot Italian sausage
2 pounds ground beef
5 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon ground coriander
2 cloves garlic, minced
1 large onion, diced
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (14 ounce) can kidney beans
2 teaspoons minced chipotle peppers in adobo sauce
1 teaspoon salt
ground black pepper
1 (6 ounce) can tomato paste

Steps:

  • Cook sausage and ground beef in a large pot over medium-high heat until lightly browned and crumbly. When the meat has released its grease, and has begun to brown, drain off accumulated grease, and season with chili powder, cumin, and coriander. Cook and stir for 1 minute until fragrant, then stir in the garlic and onion. Cook until the onion has softened and turned translucent, about 4 minutes.
  • Stir in the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, salt, and pepper. Bring to a simmer, then pour the chili into a slow cooker. Cover, and cook on Low for 8 to 10 hours. Stir in tomato paste an hour before the chili is done.
