HONEY SOY TILAPIA
Steps:
- Mix the honey, soy sauce, balsamic vinegar, and garlic together in a bowl. Place the tilapia fillets in the mixture; allow to marinate in refrigerator at least 30 minutes.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
- Remove tilapia from marinade, and discard the marinade. Place fillets into the prepared baking sheet, and sprinkle the black pepper over the fish.
- Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.

- Prepare Fruit Salsa: In a small bowl, combine orange pieces, mango, 3 tablespoons orange juice, sweet pepper, cilantro and chile pepper. Cover and chill until ready to serve.
- Prepare Citrus Tilapia: Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Set aside.
- In a medium nonmetal bowl, stir together the 1/2 cup orange juice, the oil and cayenne pepper. Place fish in the bowl; turn to coat well. Marinate fish in the refrigerator for 30 minutes. Drain fish, discarding marinade.
- Preheat oven to 350 degrees F. Place fish in a small baking dish. Sprinkle with salt and black pepper. Bake about 15 minutes or until fish flakes easily when tested with a fork. Serve fish with salsa. If desired, garnish with additional fresh cilantro.

- 1. On a plate, combine the flour and a sprinkle of salt and pepper. Lightly dredge the tilapia in the flour.
- 2. In a large skillet over medium heat, add the oil and butter. When the butter has melted, add the fish and cook for 2 to 3 minutes per side, or until golden and just cooked through. Remove the fish and set aside.
- 3. Add the orange juice, 2 tablespoons of the lemon juice, and the ginger to the skillet. Increase the heat and simmer for 1 to 2 minutes, or until thickened, stirring occasionally. Taste and add lemon zest or more lemon juice if necessary. Return the fish to the skillet, coat with sauce, and cook for 1 to 2 minutes, or until heated through.

- In a medium bowl cut zucchini in half length wise and make ribbons using a vegetable peeler.
- Add corn.
- Season with sesame oil, soy sauce, rice vinegar, sesame seeds (use only 1tsp of black sesame seeds). Toss well to coat and set aside in the fridge.
- Pre-heat oven to 375°F.
- Place each seasoned tilapia fillet on a 7" piece of foil. Drizzle some extra virgin olive oil and close the foil around it creating a loose pouch. Bake for 20 minutes.
- On a 24 muffin tin pan place the 4"x 3.5" pieces of foil in each muffin tin, pressing in the middle to create a cup.
- Brush each wonton wrapper with oil on both sides. Place each wonton wrapper on the foil pressing in the middle to form a cup.
- Bake for 7-8 minutes until edges start to get golden brown. Wonton cups may need a little more time depending on the thickness. Check on them after 7 minutes and add one minute at a time if necessary. Let them cool.
- To make the sauce mix together honey, lemon juice, grated ginger and sriracha.
- To assemble the cups put a little zucchini and corn mixture in the cup. Place a small piece of baked tilapia on top drizzle about 1/2 tsp of honey sriracha sauce and add some black sesame seeds on top.
- Enjoy.
OVEN ROASTED TILAPIA WITH WINTER VEGETABLES AND CITRUS VINAIGRETTE
Oven Roasted Tilapia with Winter Vegetables and Citrus Vinaigrette

- Peel the turnips, carrots, onion, and parsnips. Cut all peeled vegetable to roughly the same size as a halved fingerling potato. Half all the potatoes. Place all vegetable on an oiled sheet pan and season with salt, pepper, and Extra Virgin olive oil. Roast in a 375-degree oven for 25 minutes or until vegetable are fork tender.
- Juice the lemon and lime. Peel the orange and segment, then add the juice form the pulp to the lemon and lime juice. In a metal mixing bowl add the honey, salt, pepper, and 1 tablespoon citrus juice. Whisk together with a metal wire whisk then slowly drizzle 4 tablespoons of Extra Virgin olive oil. Make sure to fully emulsify the dressing.
- Brush lake raised tilapia fillets with Extra Virgin olive oil, salt and pepper on each side. In a 375-degree oven roast the fish on an oiled sheet pan for 20 minutes.
- On 4 plates place ¼ of the roasted vegetables in the center of the plate. Then place the roasted tilapia over the vegetables. Toss the spinach and orange in the dressing using tongs. Place a small amount of the salad beside the fish and vegetable. Keep in mind while cooking that the vegetable will take longer to cook than the fish. The fish will be best if timed to make sure it is the last thing to come out of the oven.

- In a small bowl, combine the mayonnaise, chili powder and salt. Spread a thin layer of the sauce over the bottom of a 2 quart baking dish. - 1. Preheat the oven to 415 degrees F. Lair the baking dish with "Reynolds Wrap Foil" (from 100% recycled aluminum).
- 2. In the bowl mix olive oil, honey, lemon and orange juice together. Add lemon zest, garlic sriracha, parsley and cilantro to the mixture.
- 3. Place the onions on the bottom of the baking dish. Put tilapia over the onions and season the fillets with salt and pepper.
- 4. Pour the citrus mixture over the fillets and cover with more foil. Let stand a side for 5 minute.
- 5. Meanwhile cut 4 pieces of foil and place the corn on each piece. Put salt, pepper and butter on the cobs. Wrap each corns like a candy, rolling them and twisting the ends.
- 6. Place the baking dish with tilapia and the corn wraps into the oven at 415 degrees F for about 25-30 minute At 15 min take the foil off the tilapia so the fillets can caramelized.

- In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
