  • In a small bowl, combine salsa and chilies; set aside. Drizzle fillets with oil; sprinkle both sides with steak seasoning., Cook fillets, uncovered, in a large skillet over medium heat for 3-5 minutes on each side or until fish flakes easily with a fork. 3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 tablespoon minced garlic
2 (3 ounce) fillets tilapia
cooking spray
1 teaspoon freshly cracked black pepper

Steps:

  • Mix the honey, soy sauce, balsamic vinegar, and garlic together in a bowl. Place the tilapia fillets in the mixture; allow to marinate in refrigerator at least 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Remove tilapia from marinade, and discard the marinade. Place fillets into the prepared baking sheet, and sprinkle the black pepper over the fish.
  • Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.

½ cup diced mango
3 tablespoons orange juice

8 ounces fresh or frozen tilapia fillets
½ cup orange juice

1 bunch Fresh cilantro leaves

Steps:

  • Prepare Fruit Salsa: In a small bowl, combine orange pieces, mango, 3 tablespoons orange juice, sweet pepper, cilantro and chile pepper. Cover and chill until ready to serve.
  • Prepare Citrus Tilapia: Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Set aside.
  • In a medium nonmetal bowl, stir together the 1/2 cup orange juice, the oil and cayenne pepper. Place fish in the bowl; turn to coat well. Marinate fish in the refrigerator for 30 minutes. Drain fish, discarding marinade.
  • Preheat oven to 350 degrees F. Place fish in a small baking dish. Sprinkle with salt and black pepper. Bake about 15 minutes or until fish flakes easily when tested with a fork. Serve fish with salsa. If desired, garnish with additional fresh cilantro.

2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1 pound tilapia fillets
1 tablespoon olive oil
1 tablespoon butter
1/2 cup freshly squeezed orange juice or high-quality store-bought orange juice
1 lemon, zested and juiced
1/2 teaspoon grated fresh ginger

Steps:

  • 1. On a plate, combine the flour and a sprinkle of salt and pepper. Lightly dredge the tilapia in the flour.
  • 2. In a large skillet over medium heat, add the oil and butter. When the butter has melted, add the fish and cook for 2 to 3 minutes per side, or until golden and just cooked through. Remove the fish and set aside.
  • 3. Add the orange juice, 2 tablespoons of the lemon juice, and the ginger to the skillet. Increase the heat and simmer for 1 to 2 minutes, or until thickened, stirring occasionally. Taste and add lemon zest or more lemon juice if necessary. Return the fish to the skillet, coat with sauce, and cook for 1 to 2 minutes, or until heated through.

1/2 cup frozen corn, thawed
1/2 teaspoon toasted sesame oil
1 teaspoon soy sauce
2 teaspoons seasoned rice vinegar
1 teaspoon white sesame seeds
2 teaspoons black sesame seeds, divided
4 tilapia fillets, seasoned with
salt and pepper
2 teaspoons extra virgin olive oil
24 wonton wrappers, squares
3 tablespoons extra virgin olive oil
2 tablespoons honey
2 tablespoons lemon juice, freshly squeezed
1 teaspoon fresh ginger, grated
1/4 teaspoon chili sauce, use less if you like it less spicy (Sriracha)
24 sheets Reynolds Wrap Foil, cut in 4-inch x 3 . 5-inch squares
4 sheets Reynolds Wrap Foil, cut in 7-inch pieces

Steps:

  • In a medium bowl cut zucchini in half length wise and make ribbons using a vegetable peeler.
  • Add corn.
  • Season with sesame oil, soy sauce, rice vinegar, sesame seeds (use only 1tsp of black sesame seeds). Toss well to coat and set aside in the fridge.
  • Pre-heat oven to 375°F.
  • Place each seasoned tilapia fillet on a 7" piece of foil. Drizzle some extra virgin olive oil and close the foil around it creating a loose pouch. Bake for 20 minutes.
  • On a 24 muffin tin pan place the 4"x 3.5" pieces of foil in each muffin tin, pressing in the middle to create a cup.
  • Brush each wonton wrapper with oil on both sides. Place each wonton wrapper on the foil pressing in the middle to form a cup.
  • Bake for 7-8 minutes until edges start to get golden brown. Wonton cups may need a little more time depending on the thickness. Check on them after 7 minutes and add one minute at a time if necessary. Let them cool.
  • To make the sauce mix together honey, lemon juice, grated ginger and sriracha.
  • To assemble the cups put a little zucchini and corn mixture in the cup. Place a small piece of baked tilapia on top drizzle about 1/2 tsp of honey sriracha sauce and add some black sesame seeds on top.
  • Enjoy.

4 lake raised tilapia fillets
12 fingerling potatoes
1 lemon
1 lime
2 turnips
1 orange
8 peeled small carrots
4 table spoons extra virgin olive oil
1 sweet onion
1 teaspoon honey
3 parsnips
2 cups washed baby spinach
Sea salt and fresh pepper

Steps:

  • Peel the turnips, carrots, onion, and parsnips. Cut all peeled vegetable to roughly the same size as a halved fingerling potato. Half all the potatoes. Place all vegetable on an oiled sheet pan and season with salt, pepper, and Extra Virgin olive oil. Roast in a 375-degree oven for 25 minutes or until vegetable are fork tender.
  • Juice the lemon and lime. Peel the orange and segment, then add the juice form the pulp to the lemon and lime juice. In a metal mixing bowl add the honey, salt, pepper, and 1 tablespoon citrus juice. Whisk together with a metal wire whisk then slowly drizzle 4 tablespoons of Extra Virgin olive oil. Make sure to fully emulsify the dressing.
  • Brush lake raised tilapia fillets with Extra Virgin olive oil, salt and pepper on each side. In a 375-degree oven roast the fish on an oiled sheet pan for 20 minutes.
  • On 4 plates place ¼ of the roasted vegetables in the center of the plate. Then place the roasted tilapia over the vegetables. Toss the spinach and orange in the dressing using tongs. Place a small amount of the salad beside the fish and vegetable. Keep in mind while cooking that the vegetable will take longer to cook than the fish. The fish will be best if timed to make sure it is the last thing to come out of the oven.

1-2 teaspoons chili powder
1/4 teaspoon salt
4 tilapia loins or filets (or other mild white fish)
1 1/2 cups fresh or frozen corn (thawed if using frozen)

Steps:

  • Preheat the broiler to high.
  • In a small bowl, combine the mayonnaise, chili powder and salt. Spread a thin layer of the sauce over the bottom of a 2 quart baking dish. (Make sure the baking dish is large enough for all 4 pieces of fish.) Place the fish on top, then spread the remaining sauce evenly over the top of the fish. Top the fish with the corn.
  • Cook the fish until the corn is slightly charred and the fish is cooked through, about 10 minutes. Serve with the lime wedges.

Steps:

  • Mix the flour, salt, and pepper on a plate and dredge the tilapia fillets in the mixture.
  • Pour the oil into a large skillet and heat it over medium heat. Cook each piece of tilapia for about 3 minutes on each side (until cooked through). Set aside.
  • Combine the orange juice, lemon/lime juice, soy sauce, and honey in a medium bowl. Pour the sauce into the pan and heat through. Add the fish to the pan and cook for a minute, flipping once and making sure to cover the fish with the sauce.
  • Transfer the fish to a platter and pour the remaining sauce on the fish. Serve immediately.
