PERFECT SCRAMBLED EGGS

- Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
- TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
- Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
- Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
- Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

- Preheat the oven to 350 degrees F (175 degrees C).
- Pour melted butter into a glass 9x13 inch baking dish. In a large bowl, whisk together eggs and salt until well blended. Gradually whisk in milk. Pour egg mixture into the baking dish.
- Bake uncovered for 10 minutes, then stir, and bake an additional 10 to 15 minutes, or until eggs are set. Serve immediately.

COMPANY SCRAMBLED EGGS
The cream cheese and mayonnaise keep these eggs moist while the standing and scraping (as opposed to constant cooking) means they don't overcook. This makes for a special breakfast and a definite difference from ordinary scrambled eggs.

- Combine the cream and goat cheese and one of the eggs in a food processor or a blender.
- Blend well, then add one more egg and blend again.
- Transfer to a medium mixing bowl and whisk together the cream cheese mixture and the remaining six eggs.
- Whisk in the mayonnaise, cayenne, nutmeg, basil and chives.
- Warm a 10-inch (preferrably nonstick) skillet over medium heat.
- Hold the pan away from the stove and spray with the cooking spray.
- Add the butter to the pan and return to the heat, tilting to spread the butter over the pan.
- Add the shallots and salt and sauté briefly.
- Pour the egg mixture into the pan and let stand on medium heat about 30 seconds.
- Remove the pan from the heat, let stand one minute, then gently scrape the curds from the sides and bottom of the pan.
- Return the pan to the heat.
- After about one minute, repeat the standing and scraping procedure.
- Continue until the eggs are cooked almost to your liking.
- They will continue to cook after removed from the heat.
- Spoon into the middle of a warmed plate, serve garnished with basil and some nice, hearty toast.

My own mother who is a great cook extraordinaire loves these and when she just recently learned the secret was shocked at how simple it is. - In a medium mixing bowl crack 6 large eggs into the bowl and then add 6 tablespoons of cold tap water. Beat together, then add to a non stick pan with 2 tablespoons of margarine or whipped butter.
- Cook over medium heat and be vigilant by constantly stirring. When done, sprinkle with your desired amount of salt and pepper.
- * Tip for lesser eggs or more eggs per batches.
- The key is to always add one tablespoon of water per egg and one teaspoon of margarine or whipped butter per egg.

SCRAMBLED EGGS
It took me many years to perfect the simple art of a few scrambled eggs. Seems the simpler the dish, the harder it becomes! My simple rules are this: Rich, creamy eggs? Use a splash of heavy cream whisked in with the eggs. Lighter, fluffier eggs? Use a splash of water whisked in with the eggs. Decadent and rich eggs? Use a splash of water whisked in with the eggs and stir in some tiny cubes of butter at the VERY last minute of scrambling.

- Prepare the eggs: In a bowl, whisk together the eggs with 2 teaspoons salt and 1/2 teaspoon pepper with a scant tablespoon water. Whisk only enough to mix. You don't want to whip too much air into them or make them frothy.
- Cook the eggs: Place 6-inch non-stick skillet over medium heat and add the butter. Swirl the butter around as it melts so it coats the whole surface of the pan. Lower the heat and pour in the egg mixture. Stir the eggs gently and constantly. Then, allow the eggs to cook 15 to 30 seconds, then stir again, scraping the sides and bottom of the pan to keep the eggs moving.
- Finish: When cooked but still somewhat "soft", 2 to 3 minutes, sprinkle with a touch more salt. Stir and transfer to a serving dish so the eggs don't continue to cook in the hot pan.
MICROWAVE COMPANY SCRAMBLED EGGS
This is a real tasty dish for company or special occasions. It's probably not something you would make everyday for your family as it takes awhile to get it all cooked and put together.

- In an 8x1 1/2 inc. round baking dish, break up sausage. Microwave, uncovered, on high 3-5 minute or until meat loses its pink color, stirring once during cooking. Drain sausage, reserving 2 Tb drippings; place sausage on paper toweling.
- Microwave green onions in reserved drippings in the baking dish, uncovered, on high 1 minute
- In a large mixing bowl combine eggs, sour cream, milk, salt, mustard, and pepper; pour over onion in baking dish. Microwave, uncovered, on high 5-7 minute or until eggs are almost set, pushing cooked portions to center of dish several times during cooking.
- Top eggs with sausage; sprinkle with cheese. Microwave on medium 3-6 minute or until cheese is melted.
- Cut into wedges. Makes 6 servings.

BUFFET-STYLE FLUFFY OVEN SCRAMBLED EGGS FOR A CROWD
This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :)

- Set oven to 350 degrees F (set oven rack to lowest position).
- Spray a 13 x 9-inch glass baking pan with cooking spray then pour the melted butter into the pan.
- In a bowl whisk eggs and salt until smooth and well blended.
