CRANBERRY-ORANGE SCONES

Cranberry-Orange Scones image

When I had a specialty-food store in East Hampton, NY, I learned lots of tricks for cooking and baking ahead. Every morning we made thousands of muffins and scones, and I discovered that we could make all the muffin batters the night before, refrigerate them and simply scoop them into muffin pans and bake them in the morning! I started using the same techniques at home: I love treating weekend guests to these cranberry-orange scones, but I also cherish the few mornings I get to sleep late, so I make the dough a day early, cut out the scones and refrigerate them. In the morning, all I do is throw them in the oven and then drizzle them with an orange glaze. Hot delicious scones for breakfast, and no stress!

Provided by Ina Garten

Time 55m

Yield 14 to 16 scones

Number Of Ingredients 12

4 cups plus 1/4 cup all-purpose flour
1/4 cup granulated sugar, plus extra for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
2 teaspoons grated orange zest (2 oranges)
3/4 pound (3 sticks) cold unsalted butter, diced
4 extra-large eggs, lightly beaten
1 cup (1/2 pint) cold heavy cream
1 cup dried cranberries
1 egg beaten with 2 tablespoons water, for egg wash
1/2 cup plus 2 tablespoons confectioners' sugar
4 teaspoons freshly squeezed orange juice

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup of granulated sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly add to the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough and mix on low speed until blended.
  • Dump the dough onto a well-floured board and knead it into a ball. Flour your hands and a rolling pin and roll the dough just under 1 inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn't stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on the prepared sheet pan. Collect the scraps neatly, roll them out and cut more circles.
  • Brush the tops of the scones with the egg wash, sprinkle with granulated sugar and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes, then whisk together the confectioners' sugar and orange juice and drizzle over the scones.

Steps:

  • Heat oven 200C/fan 180C/gas 6. Grease a large baking sheet.
  • Mix the sugar with the flour, then rub in the butter till mix resembles fine breadcrumbs.
  • Toss the cranberries and zest together with a small amount of flour and stir into the mix.
  • Make a well in the centre and tip in the yoghurt. Mix to form a soft dough then knead on floured surface briefly.
  • Press or roll out the dough to a thickness of 2cm then cut into scones using a cutter. Dip the cutter briefly into flour to stop the dough sticking, then place on the baking sheet.
  • Mix one beaten egg with a splash of water to make an egg wash or just use milk alone, then brush the tops of the scones. Be careful not to let run over sides as this affects the scones rising. Sprinkly over the demerara sugar.
  • Bake in the centre of the over for about 15mins until golden brown and well risen. Leave to cool then serve spread with butter.
  • TIP - you can change the flavour to any you prefer, if you want plain for serving with jam and cream, leave out fruit and add 1 tsp vanilla extract. Lemon zest and raisins are also very good.

This quick and easy cranberry orange scones recipe is easy and quick to make! Step-by-step photos teach you how to make these vibrant sones bursting with tart cranberry goodness!

Provided by Elizabeth Waterson I Confessions of a Baking Queen

Categories     Breakfast

Time 35m

Number Of Ingredients 10

16oz (457 Grams/ 3 cups+ 1/2 heaping cup) All-Purpose Flour
4oz (1 Stick/ 8 Tablespoons) Salted Butter
4oz (120 Grams/ 1/2 heaping cup) Granulated Sugar
1 Tablespoon Baking Powder
2 Large Eggs
8oz (1 Cup) Whole Milk
6oz Cranberries, Fresh or Frozen
2 Tablespoons Fresh Orange Zest
1 Cup Confectioner's Sugar
1 1/2 Tablespoons Fresh Orange Juice

Steps:

  • Preheat oven to 410F/210C. Line a baking tray with a liner or parchment paper.
  • In a large bowl, mix together flour, baking powder, and sugar. Then, add your cold butter. Mix until the butter is just combined-as in, the mixture still looks pretty dry but there are not large chunks of butter.
  • Set a medium bowl on a scale, add your eggs, and add enough milk to make 10oz. You may not need all 10oz of liquid for the batter. Every batter is a little different.
  • Add half of the milk and egg mixture to the dry ingredients, mixing gently. Continue to add until you have a cohesive scone batter; you want your scone batter to be pretty dry so it holds its shape. Add in the orange zest and cranberries. Then, on a large clean surface or large liner, sprinkle some flour and add your scone batter. Knead a few times, then roll out to about 1 inch thick. Use a 2.5-inch cutter to make your individual scones. Combine scraps to form another 1-inch piece to cut more 2.5 inch scones out. Be careful not to overwork the dough.
  • Place 8 scones to a baking tray, and brush the tops with an egg wash (I just use the leftover milk and egg mixture). Store the scones in the fridge until the oven is heated. Bake for 9 minutes, then rotate the pan and bake for another 8-10 minutes. You want golden brown scones, so keep an eye on the oven.
  • Let them cool on the pan for 5 minutes before transferring to a wire rack. Best served the day of; store in an air-tight container.
  • To make glaze whisk together powdered sugar and orange juice then use a spoon to drizzle on top of the cooled scones.

Provided by Tasty

Categories     Desserts

Yield 8 servings

Number Of Ingredients 15

1 cup dried cranberries
boiling water, for soaking cranberries
2 ½ cups all purpose flour, plus more for dusting
⅓ cup granulated sugar
2 ½ teaspoons baking powder
8 tablespoons Private Selection® Salted French Butter, cubed and chilled
2 large eggs
½ cup heavy cream, plus 2 tablespoons, cold
1 teaspoon vanilla extract
1 tablespoon orange zest
1 large egg
1 tablespoon cream
¾ cup powdered sugar
1 orange, zested
2 tablespoons orange juice

Steps:

  • Rehydrate the cranberries by placing them in a small bowl and covering with boiling water. Let sit for at least 10 minutes, until plump, then drain and spread out on a paper towel to dry.
  • In a large bowl, whisk together the flour, granulated sugar, and baking powder. Use a pastry cutter (or your fingers) to incorporate the Private Selection® Salted French Butter until the mixture resembles coarse crumbs. Gently fold in the cranberries.
  • In a medium bowl or measuring cup, beat the eggs, then add the heavy cream, vanilla, and orange zest and whisk to combine.
  • Pour the wet ingredients into the dry ingredients and gently fold with a spatula to combine; do not overmix.
  • Place a sheet of parchment on your work surface and lightly dust with flour. Turn the dough out onto the floured parchment and pat into a circle about 7 inches in diameter. Lift the parchment paper onto a baking sheet and refrigerate the dough round uncovered for at least 20 minutes, up to 45 minutes.
  • Preheat the oven to 400°F (200°C)
  • Use a floured bench scraper to cut the dough round into 8 wedges. Separate the wedges and carefully space evenly on the baking sheet.
  • Make the egg wash: In a small bowl, whisk together the egg and cream. Brush each scone generously with the egg wash.
  • Bake the scones for about 20 minutes, until they are puffed and golden brown. Remove from the oven and let cool completely.
  • Make the orange drizzle: In a medium bowl, whisk together the powdered sugar, orange zest, and orange juice until smooth. Either transfer to a piping bag and snip off the corner or use a spoon to drizzle the glaze back and forth over the scones.
  • Enjoy!

CRANBERRY ORANGE SCONES

Cranberry Orange Scones image

These bakery-style Cranberry Orange Scones are moist, buttery, and finished with a sweet orange glaze!

Provided by Blair Lonergan

Categories     Breakfast     Brunch

Time 50m

Number Of Ingredients 11

2 ½ cups (300 g) all-purpose flour
¼ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 stick (½ cup) salted butter, diced and chilled
⅔ - 1 cup heavy cream, plus extra for brushing
1 large egg
2 teaspoons orange zest
½ cup dried cranberries
½ cup powdered sugar
1 tablespoon orange juice

Steps:

  • Preheat the oven to 400°F. Line a sheet pan with parchment or silicone mat.
  • In the bowl of an electric mixer or food processor, combine the flour, sugar, baking powder and salt. Add the butter and, with the mixer on low speed (or the food processor on "pulse"), mix the butter into the flour until the butter is the size of peas. If you don't have a stand mixer or a food processor, you can freeze the butter and grate it into the dry ingredients, or you can cut the butter into the flour by hand with a pastry cutter or with two knives.
  • In a large measuring cup or small bowl, whisk together ⅔ cup of cream, egg and orange zest. Gradually add the wet ingredients to the dry ingredients and stir, mix or pulse just until blended. Do not over-mix. The dough should be damp and should hold together when pinched. If it's too dry, add a little bit more cream (up to 1 cup may be necessary). If it's too wet, sprinkle in a little bit of extra flour. Gently fold in the cranberries.
  • Dump the dough onto a very well-floured surface and knead it lightly and quickly just a few times. It helps to put flour on your hands to prevent sticking. Pat the dough into a circle that's 1-inch thick. Using a pizza cutter or knife that is sprayed with cooking spray before each slice, cut the circle into 8 wedges.
  • Transfer the dough to the prepared baking sheet, leaving 2 inches between each scone.
  • Cover loosely with plastic wrap and chill in the refrigerator for 15 minutes.
  • Remove the cover, brush the tops of the scones with a little bit of cream, and bake for 20-25 minutes (or until the tops are lightly browned and the insides are fully baked). Remove from the oven and cool for a few minutes while you prepare the glaze.

  • Whisk flour, sugar, baking powder, salt, and orange zest together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine with a pastry cutter, two forks, or your fingers until the mixture comes together in pea-sized crumbs. See video above for a closer look at the texture. Place in the refrigerator or freezer as you mix the wet ingredients together.
  • Whisk 1/2 cup heavy cream, the egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, add the cranberries, then mix together until everything appears moistened.
  • Pour onto the counter and, with floured hands, work dough into a ball as best you can. Dough will be sticky. If it’s too sticky, add a little more flour. If it seems too dry, add 1-2 more Tablespoons heavy cream. Press into an 8-inch disc and, with a sharp knife or bench scraper, cut into 8 wedges.
  • Brush scones with remaining heavy cream and for extra crunch, sprinkle with coarse sugar. (You can do this before or after refrigerating in the next step.)
