1 pound Turkey Italian Sausage
1 medium onion (diced)
3 cloves garlic (minced)
16 ounces Italian-style diced tomatoes
8 ounces tomato sauce
1 cup half-and-half
½ teaspoon dried basil
¼ cup grated Parmesan cheese (for topping)
fresh chopped basil (optional garnish)

Steps:

  • Cook the pasta in salted water Al Dente, according to package directions.
  • While pasta is cooking, brown the sausage and drain grease.
  • Add the onions and garlic to the sausage and saute for a couple of minutes.
  • Pour in the entire can of diced tomatoes and the tomato sauce and heat through.
  • Pour in the half-and-half and heat through. The longer you cook the sauce the thicker it will get so simmer it until it is the consistency you want.
  • Add the basil and let it simmer for a few minutes.
  • Finally, mix the sausage sauce with the pasta.
  • Top each serving with a sprinkle of Parmesan cheese and fresh basil (if desired).

12 oz (340 g) Shell Pasta
1 cup Reserved Pasta Water
1/2 tbsp Olive Oil
1 lb Ground Mild Italian Sausage
1 Shallot, (diced small)
2 Garlic Cloves, (crushed or minced)
2 tsp Italian Seasoning
1/4 cup Dry White Wine
1/2 cup Heavy Cream
2 cups Fresh Spinach
3/4 cup Shredded Pecorino Romano Cheese
Lots of Freshly Ground Pepper (†)
Salt, (to taste)

Steps:

  • Bring a pot of well-salted water to a boil and add shells. Cook according to box instructions, around 6-8 minutes. Reserve 1 cup of pasta water.
  • Meanwhile, in a large pan over medium heat, heat 1/2 tbsp of olive oil. When oil is hot, add in sausage and shallots. Season with Italian seasoning. Cook, breaking up the pieces of meat into small bits, until the meat is cooked through and the shallots are tender. Add garlic, and cook for an additional minute.
  • Add in white wine, and allow the wine to reduce by about half (approx. 2-3 minutes). Then, add heavy cream to pan, and stir to combine with meat and oil. Allow the cream to bubble slightly, then add the spinach. Cook until the spinach is wilted down. (Sauce time = 13-15 minutes)
  • Add in the hot shells, toss to combine. Season with freshly ground pepper, as much or as little as you like, then season with salt to your preferred taste. Add pecorino, and toss to combine. Then slowly add pasta water, bit by bit, just until you are left with a creamy uniform sauce (I used about ½ cup).

1 tbsp oil
1 onion , chopped
pack of 6 pork sausages , squeezed out of their skins into chunks
2 garlic cloves , finely chopped
300ml double cream
2 tbsp wholegrain mustard
½ tsp chilli flakes
small pack basil , leaves shredded
8 sheets fresh lasagne
125g ball mozzarella , sliced

Steps:

  • Heat the oil in a large frying pan and cook the onion for 3-4 mins over a medium-high heat. Add the sausage chunks and cook for another 5 mins to brown all over. Add the garlic and cook for 1 min before stirring in the cream, mustard, chilli flakes and seasoning. Cook for another 2 mins, then stir in the basil.
  • Heat oven to 200C/180C fan/ gas 6. Divide the sausage chunks and some sauce between the lasagne sheets and roll each one up. Arrange in a casserole dish, spoon over the remaining sauce, then top with the mozzarella. You can freeze the dish at this point. If freezing, defrost fully before cooking. Bake in the oven for 20 mins until the pasta is cooked and the mozzarella gooey and crisp at the edges.

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, remove casings from sausage if necessary; crumble sausage into large skillet sprayed with cooking spray. Cook on medium heat until evenly browned, stirring occasionally. 1/3 cup chopped onion

3/4 cup sour cream

1/4 tsp salt

Steps:

  • Cook the pasta according to the packet instructions.
  • Heat up the oil in a pan over a medium heat, add the sausage meat and use a wooden spoon to break the meat.
  • Cook for about 3-4 minutes, then add the garlic, chopped tomatoes, chopped pepper, seasoning, herbs and a quarter of a cup of the water in which the pasta is cooking.
  • Put the lid on, and leave to cook for 10 minutes or so until the sauce is reduced.

1 pound ground Italian sausage (spicy or mild, your preference)
2 tablespoons butter

½-1 cup sliced mushrooms (see note)
1 cup reduced sodium chicken broth
1 cup heavy cream
cracked black pepper (to taste)

Steps:

  • In a deep skillet, or pot, bring 4 cups water to a boil. Stir in penne noodles along with 1 teaspoon salt. Boil 6-9 minutes until fork-tender. Drain, toss with 1 teaspoon oil, and set aside.
  • In the same skillet you used for the pasta (or a new one if you used a pot) cook sausage over medium-high heat, breaking up with a spoon or spatula as it cooks, for 6-8 minutes or until completely browned. Use a slotted spoon to transfer to a bowl and cover to keep warm.

1 lb penne pasta (fusilli or ziti could also be used, but I prefer penne)
3 tablespoons olive oil (preferably extra-virgin)
3 cloves garlic, minced
1 pinch cayenne pepper
1 lb sweet mild Italian sausage
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons unsalted butter (cut into small bits)
1/2 cup freshly grated parmesan cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat leaf parsley

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
  • Cook until sausage meat is no longer pink (about 5 minutes or so).
  • Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.

1 red pepper, chopped (about 1 ½ cups)
1 medium onion, chopped (about 1 cup)
4 cloves garlic, minced
Kosher salt and freshly ground black pepper
½ tsp ground fennel or 1 tsp fennel seeds (optional - see note below)
¼ tsp red pepper flakes
1 lb ground hot or sweet sausage (or a mix of both)
¼ cup dry white wine
16 oz marinara sauce
6 tbsp heavy cream
8 oz short pasta shapes, like penne
4 cups water
¼ cup grated Parmesan cheese
¼ cup chopped fresh basil

Steps:

  • Heat the oil in a large skillet over medium-high heat and saute the peppers and onions until they start to soften, about 8 minutes. Stir in the garlic, fennel, red pepper flakes, and a good pinch of salt and a few cranks of black pepper. Crumble the sausage into the skillet and cook with the peppers and onions until browned. Pour the wine into the skillet and scrape up the bits on the bottom of the pan. Pour the sauce and 3 cups of water into the skillet and then stir the pasta into the mixture until well-combined.
  • Bring the liquid to a boil, reduce the heat to medium-low, and cover. Allow the liquid to simmer, stirring occasionally at first and more frequently towards the end to prevent the pasta from sticking, for about 15 to 17 minutes. Every 5 minutes or so, stir in a little of the remaining cup of water. If the liquid starts boiling over, reduce the heat to low.
  • When the pasta is cooked through, stir in the cream, Parmesan cheese, and most of the basil (reserving a little for garnish). Allow the cream to heat through for 2 minutes. Season with salt and pepper to taste. Allow the dish to cool for 5 minutes, sprinkle the remaining basil over the top, and serve.

Steps:

  • Cook pasta: In a large pot of boiling salted water, cook pasta according to al dente package instructions. Drain well and set aside.
  • While pasta cooks, sauté vegetables: In a large, deep skillet heat 1 tablespoon of oil over medium heat. When oil shimmers, add the onion and bell pepper. Cook, stirring occasionally until vegetables are almost softened, about 3-4 minutes.
  • Add sausage and season: Increase heat to medium-high. Add the sausage to the pan along with the Italian seasoning. Season with ½ teaspoon salt and ¼ teaspoon pepper. Cook, breaking the sausage up into large crumbles as you go, for about 4-6 minutes, or until sausage is almost browned. Reduce heat to medium and add the garlic. Cook until fragrant, about 1 minute.

2 cups half and half
2 pounds russet potatoes (, diced)
1 cup sour cream
1 teaspoon salt (, or to taste)
1/2 teaspoon pepper
1/2 cup shredded cheddar cheese ((optional))
1 tablespoon minced chives ((optional))

Steps:

  • Heat a large soup pot over medium heat. Add in sausage and cook until browned, stirring occasionally. Use a slotted spoon to remove cooked sausage and set aside.
  • Return pot to medium-high heat. Add in onion and sauté 7 minutes, until soft and translucent. Add in butter and garlic and stir until butter is melted.
  • Slowly pour in chicken broth and milk. Add in potatoes and bring to a simmer. Reduce the heat to medium-low and continue simmering until potatoes are soft and tender, about 15 minutes.
  • Once potatoes are tender, gently mash the potatoes, but not too aggressively so that you can still have some texture and chunks of potatoes. Stir in sour cream and add in the cooked sausage. Season with salt and pepper to taste.
  • Serve hot topped with chives, cheese, and an additional dollop of sour cream.

Rich tomato-ricotta sauce coats Italian sausage and wilted escarole in this mozzarella-topped pasta dish.

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can whole plum tomatoes, crushed by hand
One 15-ounce can whole plum tomatoes, crushed by hand
1 sprig fresh oregano
1 cup fresh ricotta
3/4 pound sweet or spicy Italian sausage, casings removed
1/2 head escarole, cut into 1-inch pieces
1 pound dried farfalle
3 cups shredded mozzarella
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the oregano and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the oregano and stir in the ricotta. Season with salt and pepper.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until browned, about 5 minutes. Transfer the sausage to a large bowl using a slotted spoon. Add the escarole and a pinch of salt to the sausage drippings in the skillet and cook, stirring occasionally and reducing the heat slightly if necessary, until wilted, about 4 minutes. Transfer the escarole to the bowl with the sausage.
  • Cook the farfalle in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the mixing bowl.
  • Add the tomato sauce, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.
