6 1/2 ounces minced clams, drained -RESERVING 2 Tbsp of clam juice
8 ounces cream cheese, softened
1/4 cup sour cream
1/2 teaspoon Worcestershire sauce
2 garlic cloves, minced
2 tablespoons parsley
1/2 teaspoon black pepper
1/4 teaspoon hot sauce
salt, to taste, if desired

Steps:

  • In a mixing bowl, beat cream cheese with 2 Tbsp clam juice, sour cream, Worcestershire sauce and hot sauce. Stir in clams, garlic, parsley and pepper.
  • Serve immediately or chill.
  • Serve with veggies and/or crackers.

Steps:

  • Combine all ingredients plus 4 tablespoons of the reserved clam juice in a bowl and mix until thoroughly combined.
  • Put mixture in a serving bowl and chill.
  • Serve with potato chips, crackers, or small pieces of raw vegetables.

16 ounces cream cheese
8 ounces sour cream
1/2 teaspoon sugar
1 teaspoon salt
2 teaspoons fresh lemon juice ((or 2 1/2 teaspoons reconstituted))
1/2 teaspoon MSG (Accent flavor seasoning)
fresh chopped parsley
fresh chopped chives

Steps:

  • Drain the clams and reserve 3 tablespoons of the juice. Discard the remaining clam juice.
  • In a medium bowl, combine the cream cheese, sour cream, sugar, salt, lemon juice, reserved clam juice, and MSG.
  • Mix with a mixer until smooth and creamy.
  • Add the clams and stir with a wooden spoon or spatula.
  • Place the dip in an air-tight container in the refrigerator and let it rest for a few hours.
  • Garnish with fresh chopped parsley or chives if desired.

6 tbsp unsalted butter (¾ stick)
1 cup onion (chopped)
1 red bell pepper (seeded and chopped)
1 cup celery (chopped)
2 cloves garlic (minced)
1 whole lemon (juiced, about 2 tbsps)
3 6.5 oz. cans clams (chopped, with juice)
1 tbsp hot sauce (ie, Tobasco of Krytsals)
½ tsp Kosher salt
2 cups bread crumbs (Italian-style Panko crumbs are great!)
¼ cup Parmesan cheese (grated, optional)

Steps:

  • Preheat oven to 350°F.
  • Melt butter in a large skillet over medium-high heat. Add onion, pepper, celery, and garlic. Cook until tender, about 10 minutes
  • Add lemon juice, clams (with juice), hot sauce and salt
  • Take off the heat and add the bread crumbs and Parmesan cheese (if using)¼
  • Put into a greased medium-sized casserole dish (8"x11" works well).
  • Bake for 25 minutes.
  • Remove from oven and turn on the broiler
  • Add the dish back in and broil for about 3 minutes...until lightly browned on top (keep an eye on this...will brown quickly).
  • Serve with warm bread slices or crackers

1/4 pound bacon (about 8 slices), chopped
two 6 1/2-ounce cans minced clams
8 ounces cream cheese, softened
1/4 cup sour cream
1/3 cup finely chopped red bell pepper
3 scallions, chopped fine
2 tablespoons finely chopped fresh basil leaves
1 teaspoon drained bottled horseradish
1 teaspoon fresh lemon juice, or to taste
3/4 teaspoon Worcestershire sauce
Tabasco to taste
Accompaniment:Pita Toasts or potato chips

Steps:

  • In a skillet cook bacon over moderate heat, stirring, until golden and crisp and transfer with a slotted spoon to paper towels to drain.
  • In a large sieve set over a bowl drain clams, reserving clam juice, and in another bowl whisk together cream cheese and sour cream. Whisk 2 tablespoons reserved clam juice into cream cheese mixture with clams, bacon, and remaining ingredients. Dip may be made 1 day ahead and chilled, covered. Bring dip to room temperature before serving.
  • Serve dip with toasts or chips.
