Easy, creamy and smooth homemade hummus from canned chickpeas.

Number Of Ingredients 7

1 can chickpeas (drained)
1/4 cup tahini
3 Tablespoons olive oil
2 Tablespoons lemon juice
1/2 teaspoon fine sea salt
1/4 teaspoon ground cumin
cold water ((optional if the mixture is too thick))

Steps:

  • Add the drained chickpeas to a pot and cover with water by a couple of inches. Bring the pot to a boil, then reduce to a simmer.
  • Cook the chickpeas for about 10 minutes. As they cook, remove loosened skins from the water with tongs or similar instrument.
  • Drain the chickpeas in a colander, then run cold water over them until the are cool to touch.
  • Gently rub handfuls of chickpeas back and forth between your palms to loosen the skins. Continue grabbing and rubbing handfuls until most of the skins have loosened.
  • Place the chickpeas in a large bowl and cover with water by a few inches. The loosened skins should rise to the top and be easy to remove.
  • To easily take the skin off of individual chickpeas, gently press between your fore finger and thumb until the chickpea pops out.
  • Place the chickpeas in a food processor and add the tahini, lemon juice, olive oil, sea salt and garlic.
  • Process on high until the mixture is smooth and creamy.

1 pound dry chickpeas, (approximately 2 cups dry chickpeas)
½ to 1 teaspoon baking soda, (depending on the cooking mehtod)
water
Kosher salt
1 to 2 bay leaves
2 garlic cloves. (lightly smashed)

Steps:

  • Soak the chickpeas. You can either soak them overnight or try the quick soaking method. To soak overnight, put the chickpeas in a large bowl and add plenty of water to cover the chickpeas by a good 3 inches. Set aside for 24 hours. For the quick soak method, put the chickpeas in a pot and add 6 cups of water. Bring to a boil and cook for 2 minute. Turn the heat off, cover and let the chickpeas soak for 1 hour. Drain.
  • Stovetop Method. In a large cooking pot, put the chickpeas and 1 teaspoon of baking soda. Cook over medium-high heat, tossing constantly for about 3 to 4 minutes. Add 7 cups of water to cover the beans by several inches. Season with a big pinch of kosher salt (about 1 teaspoon or more if you like). Add the bay leaf and garlic. Bring to a boil, then turn the heat down and simmer, skimming off any foam or skins that float to the top. Chickpeas will cook anywhere from 40 minutes to 1 ½ hour or until tender (cooking time will vary depending on the type and freshness of the chickpeas).

2 (15-oz.) cans chickpeas, drained, rinsed
2 garlic cloves
6 Tbsp. fresh lemon juice
6 Tbsp. tahini
1 1/2 tsp. kosher salt
1/4 cup extra-virgin olive oil, plus more for serving

Steps:

  • Place chickpeas in a medium pot and cover with water by 1". Bring to a boil over high heat, then reduce heat to medium-low and simmer, undisturbed, until chickpeas start falling apart, about 20 minutes. Reserve 1 cup cooking liquid, then drain chickpeas.
  • Transfer chickpeas to a food processor. Add garlic, lemon juice, tahini, salt, and 2 Tbsp. reserved cooking liquid and process for a full 5 minutes (set a timer for this) until creamy and smooth. If at any point the hummus appears dry or very thick, add cooking liquid 1 Tbsp. at a time. With the motor running, stream in oil and process just until combined. Transfer to a medium bowl and drizzle with more oil.
  • Do Ahead: Hummus can be made 5 days ahead. Let cool, then cover and chill.

15 ounce can chickpeas (1 can), drained (sometimes labeled garbanzo beans)
1/2 teaspoon baking soda
2 lemons (or limes), juiced
1/2 teaspoon sea salt
1/2 cup tahini
4 tablespoons ice water, divided
1 tablespoon diced chipotle peppers in adobo sauce (use more for extra heat) (or substitute chipotle hot sauce)
1 tablespoon olive oil
To serve (optional): red pepper flakes, smoked sea salt, extra olive oil

Steps:

  • Add the chickpeas and baking soda to a large pot and cover with several inches of water.Bring to a boil over high heat, and continue boiling for about 20 minutes (until the chickpeas are swollen and the chickpea skins are falling off).
  • Strain the chickpeas into a colander, rinse with cold water, and separate the beans from the skins. Most of the skins should have fallen off while cooking, but if any are still attached they can be pulled off easily. Discard the chickpea skins.
  • Add the lemon juice, tahini, and salt to a food processor. Add 2 TB of ice water. Blend until the tahini is silky and creamy.If your tahini was very thick, you may need to add the remaining 2 TB of ice water.
  • Add the chipotle peppers in adobo sauce, and blend.
  • Add the chickpeas and olive oil to the food processor and blend until creamy. (This should take about 30 seconds, depending on the food processor you're using.)
  • Scoop hummus into a bowl. If desired, drizzle with a little more olive oil, and lightly sprinkle with red pepper flakes and/or smoked sea salt.
  • Serve immediately, or store in an air-tight container. Hummus will keep in the fridge for 3-5 days.

1 cup dried chickpeas or 2 15-ounce cans chickpeas (drained)
1 plump garlic clove
Fine sea salt
½ cup tahini
¼ cup lemon juice (plus more if needed)
1 cup fresh herbs - I like a mix of cilantro, basil and parsley
2 tablespoons extra-virgin olive oil
1½ teaspoons ground cumin (optional)
Ice cold water (as needed)
Cooked chickpeas
Paprika, smoked or sweet
Extra virgin olive oil

Steps:

  • Soak chickpeas in cold water 4 hours or overnight. Put them in a saucepan with the garlic, 2 teaspoons salt and 3 quarts water. Cook until tender. Depending on the freshness of your chickpeas, this can take 30-90 minutes. Drain. Pull out the garlic and discard. * Skip this step if using canned chickpeas.
  • Measure out 2 cups (save some of the remaining chickpeas are for garnishing the hummus) and put into a food processor, or add your canned chickpeas instead. Process with the tahini, lemon juice, herbs, olive oil, cumin and 1½ teaspoons salt.
  • Puree the mixture at least 3 minutes, dribbling in cold water 2 tablespoons at a time until velvety smooth.
  • To serve, scoop some hummus onto a shallow bowl or plate and spread it out with the back of a spoon. To garnish, dust with paprika, drizzle with olive oil, and top with some chickpeas and a few herb sprigs.

1 whole lemon's juice
2-3 tbsp tahini
2 tbsp extra virgin olive oil
2 cloves garlic
2 tbsp water
1 tsp salt
½ tsp cumin
¼ tsp paprika for garnish

Steps:

  • In a food processor add lemon juice, garlic, oil, water and tahini. Puree for about 1 minute.
  • Add half the chickpeas and puree half a minute until smooth. Pour in the rest of the beans. Process 1 to 2 minutes. Add more oil or water if too dry. Taste and add more tahini, salt or lemon if needed. Texture should be fine and creamy.

2 tbsp lemon juice
1 tbsp garlic powder
1 tbsp nutritional yeast
1/2 tbsp dried oregano
2 tbsp maple syrup
1 1/2 tbsp cinnamon
1/2 tbsp allspice
2 tbsp Tandoori spice
2 tbsp lime juice
1 tbsp agave syrup
1 tbsp lime juice
2 tbsp chili powder

Steps:

  • Choose your favorite flavor combination above. Follow the steps below, using the correct spices and liquids for your flavor combo.
  • Preheat the oven to 400°F or 200C°.
  • In a fine-mesh strainer, drain and rinse a 15 oz can of chickpeas. Place the chickpeas on a clean, dry kitchen towel to pat off the excess moisture.
  • Spread the chickpeas on a lined baking sheet. Place the baking sheet in the oven and roast for 20 minutes.
  • Remove the baking sheet from the oven. Pour the chickpeas into a mixing bowl. Add the spices and liquids for your chosen flavor combination.
  • Return the chickpeas to the oven. Roast for an additional 20 minutes, taking them out at 10 minutes to turn and move the chickpeas around on the pan (this will keep them from sticking and promote more even baking).
  • Test the chickpeas after another 10 minutes. If they still soft on the inside, return to the oven for another 5 minutes.
  • If the chickpeas are starting to burn, but they still aren't totally crispy, turn off the oven, open the oven a few inches at the top, and let the chickpeas rest for 10 to 15 minutes. They will continue to dry out in the hot oven.
  • When the chickpeas are crunchy on both the outside and inside they are done. Enjoy right away or store at room temperature, (covered but not airtight) for up to 5 days.
