My brother gave me this recipe when he was involved in a gourmet cooking group. It is simple yet delicious, especially when the beef is cooked with mesquite briquettes.

1 large onion, chopped
1 cup soy sauce
½ cup browning sauce (such as Kitchen Bouquet®)
4 teaspoons seasoned salt (such as Spice Islands® Beau Monde Seasoning)
2 large cloves garlic

Steps:

  • Blend onion, soy sauce, browning sauce, seasoned salt, and garlic in a blender until smooth.

1/3 cup minced shallots
3 tablespoons soy sauce
1/2 cup olive oil
3 tablespoons fresh thyme
Big dash hot sauce
3 tablespoons freshly squeezed lemon juice
1 1/2 pounds flank steak
Cress, for garnish

Steps:

  • Mix shallots, soy sauce, olive oil, thyme, hot sauce and lemon juice together in a non-reactive broiling pan. Score the steak, place it in the pan and turn in the marinade. Marinate for at least 2 hours at room temperature or up to 24 hours refrigerated. If refrigerated, turn the steak in the marinade occasionally. Drain off marinade and put into a saucepan. Place steak under broiler at 1 inch from the heat for 3 to 4 minutes on each side for rare, for 4 to 5 minutes on each side for medium. Leave the broiler door slightly ajar, so the heat stays on and air circulates. Meanwhile bring marinade to the boil. Remove from heat. Carve the meat in thin diagonal slices across the grain. Arrange the slices on a warm platter. Pour the carving juices and the marinade over the meat. Decorate with cress.

Super-easy, strongly flavored London Broil. I came up with this recipe because London Broil has a tendency to become dry when cooked well but my child refuses to eat meat if it's pink.

1 teaspoon minced garlic clove
1/2 teaspoon black pepper
1/4 teaspoon cayenne powder
1 tablespoon rice vinegar
1/2 cup soy sauce
2 teaspoons Worcestershire sauce
1 (14 ounce) can beef broth
3 tablespoons English mustard powder
2 tablespoons light brown sugar
1 1/2-2 lbs london broil beef

Steps:

  • Combine all ingrediants except meat in a 2 quart baking dish.
  • Add London Broil and marinade from 2 hours to overnight, turning at least once.
  • Bake at 350 degree for 20-30 minutes or until desired doneness.
  • Remove from marinade, slice thin and enjoy.
  • Serving suggestion: serve with portebello mushrooms sauteed until soft in 1/4 cup of remaining marinade.

Steps:

  • Whisk together oil, wine, garlic, parsley, oregano, bayleaf, and pepper in small bowl.
  • Place steak in a deep bowl and pour on the marinade, turning to coat.
  • Cover and refrigerate for at least 4 hours -- preferably overnight.
  • When ready to serve, preheat broiler or grill.
  • Discard marinade and bay leaf.
