OATMEAL FRUIT CRISP
This is a fast dessert recipe that lets you use up apples, pears, berries you have on hand. It is good to use up fresh fruit in season like apples and rhubarb. You can also use frozen sliced fruit - it doesn't need to be thawed before baking. This is a tried and true recipe made many times - Canadian Comfort Food for those long cold winters!

Steps:
- Preheat oven to 375°F.
- Slice apples in large greased large casserole dish. You can leave them unpeeled or peeled as you wish.
- Combine dry ingredients, then cut in margarine until crumbly. Put over fruit and cook for approximately 35 to 45 minutes until fruit is cooked through. Check with a knife - if the fruit is soft and the oatmeal crisp is brown, it is done.
- You can substitue diced rhubarb, pears, berries like saskatoons or blueberries for part or all of the apples. You may want to sprinkle a bit of cornstarch over top before you put the oatmeal over top to thicken the fruit as it cooks. Apples don't need thickening, but berries and pears are juicier.
- Serve warm with vanilla ice cream.

- Preheat the oven to 400 degrees F.
- For the crisp: Mix together the flour, brown sugar, cinnamon and salt in a bowl. Using a pastry blender, 2 knives or a food processor, cut in the butter. Stir in the oats.
- For the fruit: Toss the fruit with the cornstarch, granulated sugar as needed and the lemon zest if using.
- Transfer the fruit mixture to a baking dish and top with the crisp mixture. Bake until the middle is warmed through and the top is crispy and golden brown, 50 to 55 minutes.

- Gather the ingredients.
- Heat the oven to 425 F.
- Lightly grease an 8- or 9-inch-square glass pan. Pour fruit into the pan.
- In a small bowl, combine oatmeal, flour, nuts, and melted butter. Add the optional tablespoon of sugar if desired, and stir to combine well and until the topping clumps together. Sprinkle over the fruit.
- Bake 15 minutes or until golden brown (longer if you have doubled or tripled the recipe). Remove from the oven and serve warm on its own or with sweetened whipped cream or ice cream.

- Preheat oven to 425°. Toss frozen berries and cornstarch in large bowl. Let stand until cornstarch dissolves, tossing occasionally, about 20 minutes. Divide berry mixture among six 4 1/2-inch-diameter crème brûlée dishes with 1-inch-high sides. Toss brown sugar, flour, oats, nuts, cinnamon, and 1/4 teaspoon salt in large bowl. Add chilled butter; using fingertips, blend butter into mixture until coarse crumbs form. Divide oat mixture among dishes, sprinkling evenly over berry mixture.
- Place dishes on rimmed baking sheet. Bake 10 minutes. Reduce oven temperature to 350°F and continue baking until crisp topping is golden brown and fruit filling is bubbling at edges, about 30 minutes longer. Cool crisps at least 15 minutes. Serve warm or at room temperature topped with scoop of vanilla ice cream.
INDIVIDUAL FRUIT CRISP
Created for my preschoolers to do as an individual cooking activity, they are also perfect for single servings. I tried to simply change the portion sizes on other recipes, but they got too complicated. This is just a basic recipe for you to get you started. It would also work as a pre-dinner party activity--lay out a make-your-own-crisp table and have guests create their own concoctions. Serve with whipped cream or ice cream.

- Heat oven to 350 degrees. Combine the fruit in a large bowl. Add spices and sugar, and mix together with a wooden spoon. Place in a large buttered baking dish, such as a 14-inch oval casserole or 11-by-7-inch pan.
