1 slice leftover meatloaf
1 tablespoon margarine
2 slices bread
1 teaspoon ketchup, or to taste
3 slices Cheddar cheese
½ teaspoon prepared yellow mustard, or to taste

Steps:

  • Place meatloaf on a microwave-safe plate; cook in the microwave on High, 30 seconds at a time, until heated through.
  • Melt margarine in a non-stick skillet over medium heat. Place both bread slices in skillet over melted margarine. Build sandwich on bread slice in this order: ketchup, 1 slice Cheddar cheese, warm meatloaf slice, and mustard. Flip second slice of bread over onto sandwich; cook until bottom of sandwich is lightly browned, about 2 minutes.
  • Flip sandwich with a spatula and place 1 slice Cheddar cheese on top; continue cooking until cheese melts slightly, about 1 minute. Flip sandwich over and lay remaining slice of cheese on top; cook until cheese on the bottom of sandwich is melted and crisp, about 2 minutes. Turn sandwich over; cook until cheese is melted and crisp, about 2 minutes.

½ cup onion, finely minced
1 tablespoon butter
1 teaspoon salt
¾ cup MUSSELMAN'S® Apple Butter
3 tablespoons MUSSELMAN'S® Apple Cider Vinegar
1 dash hot sauce
2 pounds lean ground beef
1 egg, lightly beaten
20 round butter crackers, crushed into crumbs
2 tablespoons MUSSELMAN'S® Apple Butter
8 slices sourdough bread
Softened butter for bread
8 slices Gouda cheese, thin
4 slices apple butter meatloaf (above), thick
4 butter lettuce leaves

Steps:

  • Preheat oven to 350 degrees . Lightly spray a 9 x 5 loaf pan with cooking spray.
  • In a small skillet, add the onions and butter. Sprinkle with the salt and cook over medium heat until they are soft and translucent - around 10 minutes.
  • In a small bowl, whisk together the apple butter, apple cider vinegar, and hot sauce. Set aside.
  • In a large bowl, add the cooked onions and mix in the ground beef, egg, and crushed crackers. Add in 2/3 of the apple butter hot sauce. (Reserve the rest for making the sandwiches.)
  • Press the meat mixture into the loaf pan. Brush the top with an additional 2 tablespoons of apple butter, and then bake for 1 hour until done.
  • For the sandwich, heat a large skillet over medium heat.
  • Spread butter on one side of each slice of bread. Place 4 slices of bread butter-side down in the skillet.
  • Add a slice of cheese to each slice of bread, and then a slice of the prepared meatloaf (above) to each slice of bread.
  • Spoon the reserved apple butter hot sauce on top of the meatloaf slices. Add a leaf of lettuce to each, followed by another slice of cheese.
  • Top with another piece of buttered bread butter-side up. Press the sandwiches slightly and flip to grill the other side. Serve hot.

2 tablespoon mayonnaise
1 teaspoon bottled minced roasted garlic
0.333 cup bottled roasted red sweet peppers, cut in thin strips
4 bread (potato or sourdough)
0.5 cup fresh baby arugula or baby spinach
2 lightly beaten eggs
0.667 cup beef broth
1 tablespoon Worcestershire sauce
2 cup sourdough bread cubes
0.25 cup grated Parmesan cheese
2 tablespoon yellow mustard
4 cloves garlic, minced
1 teaspoon salt
0.5 teaspoon black pepper
0.25 teaspoon crushed red pepper
1 pound ground beef sirloin
1 pound ground beef chuck
1 medium green sweet pepper, chopped
0.5 of a medium onion, chopped
0.5 cup ketchup
2 tablespoon packed brown sugar
2 teaspoon cider vinegar

Steps:

  • Lightly grease indoor electric grill or grill pan, then preheat over medium heat. Place meat loaf slices on grill. Be sure to carefully place, turn, and remove the slices to keep them in one piece. Grill 8 minutes or until heated through, carefully turning once halfway through grilling. Top with cheese. Grill 1 to 2 minutes more or until cheese is melted.
  • In small bowl combine mayonnaise, roasted garlic, and 2 Tbsp. of the roasted red peppers that have been finely chopped. Mash with a fork to combine. Spread mayonnaise mixture on one side of each bread slice. Top two slices with warmed meat loaf slices, arugula, remaining roasted red pepper strips, and remaining bread. Makes 2 sandwiches.   • Preheat oven to 350 degrees F. In large bowl combine eggs, beef broth, and Worcestershire sauce; stir in sourdough bread cubes. Let stand 15 minutes. With fork, mash bread cubes into small pieces. Stir in Parmesan cheese, mustard, garlic, salt, black pepper, and crushed red pepper. Add ground beef sirloin and ground beef chuck, green sweet pepper, and onion. Using hands, mix ingredients together well (do not overmix.) Lightly pat meat mixture into 9x5x3-inch loaf pan.* With fingers, lightly pull loaf away from sides of pan. Bake, uncovered, for 1-1/4 hours. 1/2 cup finely minced onion
1 tablespoon butter
1 teaspoon kosher salt
3/4 cup Spicy Ketchup
2 pounds lean ground beef
1 egg, lightly beaten
20 Ritz crackers, crushed into crumbs
2 tablespoons Honey Habanero Seasoning (see note)

Steps:

  • Heat the grill to 375°F. If you are using a charcoal grill, or a gas grill that allows you to have variable heat, you will want to have one VERY HOT side with direct heat for searing, and then a side that is indirect heat for cooking.
  • In a small skillet, heat the butter over medium, add the minced onion, sprinkle with the salt, and then sauté over medium heat until the onions are soft and translucent, about 10 minutes. Let the onions cool.
  • To a large bowl add the ground beef, egg, Ritz cracker crumbs, cooled sauteed onions, and seasoning. Mix with clean hands until everything is evenly combined. Then add half of the spicy ketchup and mix until combined. Do not over-mix.
  • Divide the mixture in half and form into two uniform loaves that are not too thick.
  • Place the loaves on the DIRECT HEAT side of the grill for about 3 minutes per side. You want to seal in all the juices and form a crust so that you can easily flip the loaves.
  • After you've sealed both sides, move the loaves to the INDIRECT HEAT side of the grill and close the lid. Cook for 15 minutes, flip the meatloaves, and then spoon the remaining ketchup over the top. Close the lid and grill for about 10 more minutes or until the internal temperature reaches 160°F.
  • Let the meatloaves rest for about 5 minutes before slicing. Serve with more spicy ketchup.

Steps:

  • If grilling, preheat grill (on high if you have that option). Scrape grill grates clean to minimize sticking.
  • In a large bowl combine all the meatloaf ingredients (beef, bread crumbs, egg, parsley, onion, garlic, Worcestershire sauce, mustard powder, salt, pepper, ketchup or tomato sauce, and milk). Cook a small piece of the meat at the point to taste for seasonings. If you want to add more salt/pepper, add it now before baking.
  • Form the meat into 6 patties, they will be a little softer than traditional burger patties (we'll often use wax paper to help separate them later.)
  • Make the sauce: combine all the sauce ingredients (ketchup, bbq sauce, apple cider vinegar, brown sugar, smoked paprika, and chipotle) and pour over the top and top edges of the meatloaf.
  • Lighly oil grill grates. Cook patties for about 3 minutes on the first side. Carefully flip the patties (they will be more tender than a traditional burger), and then coat the topside with sauce. Continue cooking for another 3 minutes, or until cooked through. Toast the buns and serve with additonal sauce & your desired burger toppings.

4 celery stalks, chopped
2 carrots, chopped
1 white onion, chopped
1 pound ground bison
1 pound lean (90/10) ground pork
1 pound ground veal
1 cup grated Parmesan cheese
1/4 cup Worcestershire
3 eggs, lightly beaten
Freshly ground black pepper
1 cup ketchup
1/2 cup dark brown sugar
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
Canola oil spray, for spraying meat and rolls
12 to 15 onion slider rolls
12 to 15 slices Cheddar cheese
1/2 cup mayonnaise
12 to 15 pieces green leaf lettuce
12 to 15 thinly sliced pieces red onion

Steps:

  • For the meatloaf: Preheat the oven to 425 degrees F and line a 9-by-13-inch baking dish with foil.
  • In a small bowl, add the milk and bread and set aside. To the bowl of a food processor, add the rosemary, celery, carrots and onions. Pulse until the vegetables are medium chopped, about 15 seconds.
  • In a large bowl, combine the ground bison, pork and veal. Add in the bread mixture, chopped vegetables, Parmesan, Worcestershire, beaten eggs and some pepper and mix with your hands to combine. Continue to mix the meat for about 2 minutes or until the seasoning and vegetables are evenly distributed. Place the meatloaf mixture into the lined baking sheet and gently shape into a flat football.
  • For the glaze: In a medium bowl, whisk together the ketchup, brown sugar, Dijon mustard and apple cider vinegar.
  • Spread the glaze evenly over the surface of the meatloaf. Bake for 40 minutes. Let cool for 10 minutes before cutting.
  • For the sandwiches: Preheat a grill to medium high.
  • Spray the meatloaf pieces with canola spray and place on the grill for 3 minutes per side. Spray the insides of the onion rolls with canola spray and grill for 1 minute per side. Transfer the grilled meatloaf and rolls to a plate and assemble the sandwiches. Begin with a roll, top with cheese, some mayonnaise, a piece of lettuce and onion and a slice of tomato. 2 tablespoons olive oil
1 1/2 tablespoons minced garlic (4 to 5 cloves)
1 1/2 large onions, cut into small dice
5 cups ketchup
1 1/8 cups packed brown sugar
3/4 cup white or cider vinegar
6 tablespoons Worcestershire sauce
3 tablespoons dried parsley
3 teaspoons salt
1 1/2 teaspoons black pepper
1/4 teaspoon cayenne pepper
1 1/4 cups cornmeal, plus additional for dusting
1 cup molasses
1/3 cup yeast
8 cups high-gluten flour
1/4 cup canola oil
1 tablespoon salt
1/2 teaspoon ground ginger
8 cups all-purpose flour, plus more for dusting
Nonstick cooking spray

Steps:

  • Preheat the oven to 300 degrees F.
  • In a mixing bowl, combine the turkey, eggs, garlic, onions, bread, parsley and some Italian seasoning, salt and pepper. Mix until well incorporated. Divide in half and place each half into a well-sprayed loaf pan. Cover with plastic wrap, then with foil. Bake for 1 hour. Uncover and bake for 5 additional minutes to brown.
  • Remove meatloaves from their pans and place on a cutting board. Cut two thick slices of meatloaf. Heat the oil in a cast-iron pan and cook the slices until browned on both sides. In a separate pan, cook the sliced onions until tender. Place the onions on the meatloaf, top with BBQ sauce and then with the provolone. Place 1 slice of Anadama Bread in the pan, set the meat tower on the bread, cover with the other slice of Anadama Bread and cook until the cheese is melted. Transfer to a cutting board, cut in half on the diagonal, and serve.
  • Warm the olive oil in a saucepan over medium heat. Add the garlic and onions and cook until tender. Add the ketchup, brown sugar, vinegar, Worcestershire, parsley, salt, black pepper, cayenne and 3 cups water and bring to a simmer. Cook, stirring often, until thick, 1 to 1 1/2 hours.
  • Combine the cornmeal and 5 cups water in a saucepan. Heat until starting to thicken, then remove from the heat and allow to cool.
  • In the bowl of a stand mixer fitted with the hook attachment, combine the cornmeal mash, molasses and yeast. Mix, then turn off and let sit for 2 to 3 minutes. Add the high-gluten flour and mix until smooth. Let sit until the dough doubles in size (about 10 minutes). Mix in the oil, salt, ginger and all-purpose flour, a little at a time, until a ball forms on the dough hook. Place on a well-floured work surface and cut into five 26-ounce dough balls. With floured hands, knead and form into the desired shape and then place into 5 well-sprayed loaf pans. Let rest until the dough doubles in size.
  • Preheat the oven to 300 degrees F.
  • Dust the top of the dough with cornmeal. Bake until an instant-read thermometer inserted into the center registers 180 degrees F, about 40 minutes. Let cool completely before slicing.

An easy family friendly recipe that comes together in a matter of minutes. These Grilled Meatloaf sandwiches can be adapted to your families taste by using your favorite cheese and adjusting the amount of chopped chipotle pepper and adobo sauce added to the ketchup.

2 tsp chopped chipotle chile from canned chipotles (see notes)
1 Tbsp adobo sauce from can (see notes)
1 tsp balsamic vinegar
4 slices leftover meatloaf 1/3 inch thick
8 slices italian bread
4 slices white american cheese
4 slices baby swiss
3 Tbsp butter
pickles (optional)

Steps:

  • 1. In small bowl mix ketchup, chopped chipotle chile, adobo sauce and balsamic vinegar.
  • 2. Layer American Cheese, meatloaf, Swiss and pickles on bread. Top with bread slice creating 4 sandwiches. Butter tops and bottoms of the sandwiches.
  • 3. Brown in skillet over medium low heat. Cover with foil while cooking so the cheese melts properly and the sandwich warms.
  • 4. Serve with chipotle ketchup
  • 5. NOTES Chipotle chiles (also known as chipotle peppers) can be found in the Mexican food section of your local grocery store. Adjust the amount of chipotle chiles and adobo sauce to your taste.
