1½ lbs. chicken breast (, cubed)
⅓ cup teriyaki sauce
¼ cup soy sauce
⅓ cup oil (,vegetable or canola)
2 tablespoons sesame oil
2 tablespoons sesame seeds
1 large red bell pepper (, cut into bite sized pieces)
1 large yellow bell pepper (, cut into bite sized pieces)
1 large green bell pepper (, cut into bite sized pieces)
1 large red onion (, quartered)

Steps:

  • Rinse and cut peppers and onions; set aside
  • In a medium bowl, add teriyaki, soy, vegetable oil, sesame oil and sesame seeds; combine well; set aside
  • Cube chicken breasts into 1" inch pieces
  • Place cubed chicken and cut vegetables in large sealable storage bag
  • Pour marinade into bag; massage until veggies and chicken pieces are coated; refrigerate for at least 30 minutes
  • Turn bag over about evvery 30 minutes
  • Light grill
  • Pour chicken, marinade and veggies into large bowl
  • Thread chicken pieces onto kabob, alternating with onion and pepper
  • Grill on indirect heat 3-5 minutes;

1/3 cup chicken broth
1/3 cup soy sauce
2 green onions, chopped
3 tablespoons apricot preserves
1 tablespoon canola oil
2 garlic cloves, minced
2 teaspoons minced fresh ginger root
1/2 teaspoon hot pepper sauce
1 tablespoon sesame seeds, toasted, divided
1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow bell pepper, cut into 1-inch pieces
1 medium green bell pepper, cut into 1 inch pieces
1 medium red onion, cut into 1-inch pieces
1 fresh pineapple, peeled, cored and cut into 1-inch pieces

Steps:

  • In a large bowl, combine the broth, soy sauce, onions, preserves, oil, garlic, ginger, hot pepper sauce and 1-teaspoon sesame seeds.
  • Pour 1/3 cup into another bowl for basting; cover and refrigerate.
  • Pour remaining marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 2-3 hours or overnight, turning occasionally. Drain and discard marinade from chicken.
  • On metal or soaked wooden skewers, thread chicken, peppers, onion and pineapple.
  • Grill, uncovered, over medium heat for 6 minutes, basting with reserved marinade.

½ cup soy sauce
¼ cup mirin (Japanese rice wine)
¼ cup olive oil
3 tablespoons honey, or more to taste
2 teaspoons sesame oil, or more to taste
½ teaspoon garlic powder
½ teaspoon ground ginger
½ medium lemon, juiced
1 dash Worcestershire sauce
3 (6 ounce) skinless, boneless chicken breast halves, cut into 1-inch cubes
1 medium red bell pepper, cut into 1-inch pieces
1 medium green bell pepper, cut into 1-inch pieces
1 medium onion, cut into wedges
1 medium zucchini, cut into rounds
2 tablespoons olive oil, or as needed
salt and ground black pepper to taste
2 slices fresh pineapple, cut into 1-inch pieces
1 teaspoon toasted sesame seeds, or to taste
skewers, as needed
To Thicken Sauce:
½ cup cold water
2 teaspoons cornstarch

Steps:

  • Whisk soy sauce, mirin, olive oil, honey, sesame oil, garlic powder, ginger, lemon juice, and Worcestershire sauce together in a bowl. Transfer 1/4 of the marinade to a small bowl and refrigerate until ready to use.
  • Place remaining marinade in a zip-top bag and add chicken. Marinate in the refrigerator for 8 hours, or overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the refrigerator.
  • Combine bell peppers, onion, and zucchini in a bowl. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  • Make the kabobs by alternating chicken with bell peppers, pineapple, onion, and zucchini. Drizzle some of the sauce from the zip-top bag onto the kabobs.
  • Cook on the preheated grill, turning every few minutes and drizzling any remaining sauce from the bag over top, until no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • About 10 minutes before the skewers are done, mix cold water and cornstarch in a small bowl. Put the 1/4 cup reserved marinade in a small saucepan over medium heat. When hot, add cornstarch-water mixture and reduce heat to medium-low. Cook, stirring often, until sauce thickens, 7 to 8 minutes.
  • Place kabobs on a tray and drizzle with thickened teriyaki sauce. Sprinkle toasted sesame seeds on top.

1 tablespoon Worcestershire sauce
1/2 cup water
1/2 cup soy sauce

1 cup chicken broth
4 tablespoons balsamic vinegar
4 tablespoons honey

1/2 teaspoon ground ginger
4 garlic cloves, minced
1/2 teaspoon fresh ground pepper
3/4 teaspoon liquid smoke
2 tablespoons toasted sesame seeds
1 cup long grain brown rice
2 3/4 cups chicken stock
1 teaspoon sesame oil
2 teaspoons sesame seeds
3 tablespoons finely snipped fresh sage
3 boneless skinless chicken breasts, cut into 1 inch chunks
1 medium yellow squash, cut in half and then in 3/4 inch chunks
1 medium zucchini, cut in half and then in 3/4 inch chunks
1/2 vidalia onion, cut vertically and then into thirds

Steps:

  • In blender jar, combine all ingredients for the marinade except for sesame seeds.
  • Blend completely, stir in sesame seeds.
  • Reserve 1 cup of marinade and pour remainder over the chicken, cover and refrigerate 8 to 24 hours.
  • About 1 hour before cooking, place cut vegetables in a glass bowl and pour ½ cup of the reserved marinade over them.
  • Allow vegetables to stand at room temperature for approximately 45 minutes.
  • While vegetables marinade, bring the chicken stock for the rice to a boil along with 1 Tbsp of the sage.
  • When stock boils add the brown rice, stir, cover and cook for 45 to 50 minutes.
  • Warm sesame oil in small skillet, add sesame seeds and toast until lightly browned and fragrant; set aside.
  • Thread the chicken and vegetables onto 4 skewers alternating the chicken and vegetables.
  • Grill kabobs 20 to 25 minutes over medium heat or until chicken is thoroughly cooked and vegetables are crisp tender.
  • Baste frequently with remaining marinade.
  • When rice has finished cooking, stir in remaining 2 Tbsp of sage and toasted sesame seeds.
  • Serve the chicken kabobs over the rice.
  • The cook time does not include the marinade time for the meat.
