A delicious and easy Spanish chicken stew, or pollo guisado. Great for entertaining and makes for great leftovers. Serve over white rice.

2 tablespoons olive oil
1 whole chicken, cut up
salt and ground black pepper to taste
1 medium onion, chopped
4 cloves garlic, minced
½ cup sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
1 (8 ounce) can tomato sauce
1 (1.41 ounce) package sazon seasoning
½ teaspoon ground cumin
1 bay leaf
2 tablespoons cold water
1 tablespoon cornstarch

Steps:

  • Heat olive oil over medium-high heat in a Dutch oven. Season chicken with salt and pepper and add to the hot pot to brown, 6 to 7 minutes per side. Transfer chicken a bowl and cover with an aluminum foil tent.
  • Reduce heat to medium; add onion to the pot and saute until translucent, about 5 minutes. Add garlic and cook for 1 minute. Stir in sofrito and cook for 2 to 3 minutes. Add potatoes, chicken broth, tomato sauce, sazon, cumin, and bay leaf; bring to a boil. Return chicken to the pot. Cover and cook for 1 hour. Remove chicken.
  • Mix water and cornstarch together in a small bowl; stir into simmering mixture until nicely thickened. Place chicken back into the pot and continue to cook about 10 minutes more.

1 1/2 cups diced potatoes
3/4 cup diced tomatoes
1/4 cup diced yellow onions
1/4 cup diced green bell peppers
1/2 cup beef or chicken broth
1/2 cup Salsa Verde, recipe follows
1/4 cup tomato sauce
1 teaspoon dehydrated minced garlic
1 teaspoon ground black pepper
1/2 teaspoon ground cumin
Salt
1/2 pound green tomatillos
1/4 cup chopped yellow onions
1 serrano pepper
1/2 cup diced fresh cilantro
1/2 teaspoon salt

Steps:

  • Brown beef and potatoes in a large skillet. Add tomatoes, onions and bell peppers and cook until all are fully cooked, about 10 minutes. Add broth, Salsa Verde, tomato sauce, garlic, black pepper and cumin, then add salt to taste. Let simmer for 20 minutes.
  • Add tomatillos, onions, serrano and 2 cups water to a saucepot. Bring to a boil and cook until all vegetables are cooked, about 15 minutes. Place mixture in a blender, then add fresh cilantro and salt and blend well.

1 tablespoon olive oil
1 large cubanelle or green bell pepper, seeded and chopped
4 ajíes dulces, small sweet peppers, seeded and chopped
1 large onion, chopped
4 garlic cloves , chopped
2 cups cilantro leaves, chopped
2 tablespoons white distilled vinegar
1 teaspoon dried oregano
1/2 cup tomato sauce
2 bay leaves
1 tablespoon salt, more to taste
3 large carrots, chopped
1 15-ounce can peas
1/2 pound potatoes, peeled and diced
12 Spanish pimento-stuffed olives
1 tablespoon capers
Pepper to taste

Steps:

  • Gather the ingredients.
  • Brown the stew meat in the olive oil for about 20 minutes in a large soup pot over medium heat.
  • Add the cubanelle pepper , ajíes dulces , onion, garlic, cilantro, vinegar , oregano, tomato sauce, 1 cup water, bay leaves, and salt.
  • Reduce the heat to medium-low and simmer for 1 hour. The juices from the vegetables and tomato sauce should cook down into a thick sauce. You can add more water if the sauce seems to be getting too thick.
  • Turn the heat to medium after 1 hour. Add the last seven ingredients: the carrots, peas, potatoes, olives, capers, salt, and pepper to taste.
  • Reduce the heat to low when the stew begins to boil. Continue cooking over low heat for 1 more hour.

3 pounds dried codfish
1 gallon water
1 tablespoon olive oil
1 green bell pepper, chopped
1 medium onion, chopped
2 large tomatoes, chopped
2 culantro* leaves, chopped
2 whole bay leaves
2 red bell peppers, chopped
1 tablespoon tomato paste
1 tablespoon capers
2 potatoes, peeled, diced and boiled until tender
4 sprigs cilantro, leaves chopped, for garnish

Steps:

  • In a large pot, add the codfish and cover with 1 gallon of water. Bring it to a boil and cook for 10 minutes to remove the salt. Drain the cod and break it into small flakes with a spoon. Set aside.
  • In a large frying pan heat the olive oil over medium heat. Add the green peppers, onion, tomatoes, and culantro and cook for 2 minutes. Add the codfish, bay leaves, red bell peppers, tomato paste, and capers. Cook until the vegetables are soft, about 5 minutes. Add the boiled potatoes and cook until heated through, about 2 more minutes.
  • Garnish with cilantro. Serve with rice or cooked plantains, if desired.
  • Serving suggestion: white rice or cooked plantains.

8 ounces whole onion or 7 ounces chopped ready-cut onion (1 2/3 cups)
2 teaspoons olive oil
1 large clove garlic
1 jalapeno
1 teaspoon ground cumin
1 teaspoon dried oregano
8 ounces lean pork (from tenderloin)
8 ounces poblano peppers or green bell peppers
1 cup no-salt-added beef or chicken stock
1 14- or 15-ounce can no-salt-added whole tomatoes
Freshly ground black pepper

Steps:

  • Scrub potatoes, and cook in water to cover in covered pot until they are tender, about 20 minutes, depending on size.
  • Chop whole onion.
  • Heat nonstick pan until it is very hot; reduce heat to medium high, and add oil. Saute onion until it softens and begins to brown.
  • Chop garlic, and add to onion as it cooks. Wash, halve, trim, seed and finely mince the jalapeno, and add to the onion with cumin and oregano.
  • Trim fat from pork and cut in small cubes; add to onion and brown.
  • Wash, trim, seed and chop the poblanos, and stir into the pot.
  • Add to the pot the stock and the tomatoes, but not the juice from the can; squeeze the tomatoes with your fingers before adding.
  • When the potatoes are cooked, drain, cut into small chunks and add to the pot. Season with pepper.

2 lbs stewing beef
2 tablespoons flour
1 medium onion, diced small
2 garlic cloves, minced
2 jalapenos, seeds removed and minced
3 cups beef broth (Swanson is what I use and it DOES make a big difference)
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon hot Mexican chili powder
1 teaspoon adobo seasoning or 1/2 teaspoon salt, plus
salt, to taste
3 tablespoons extra virgin olive oil, EVOO

Steps:

  • Preaheat oven to 350.
  • Season meat with adobo.
  • Toss meat with flour.
  • In a frying pan large enough to put a single layer of meat add EVOO add olive oil and heat until hot. Add meat and brown.
  • Add all remaining ingredients, scraping up browned bits, and cook over medium high heat until bubbling.
  • Transfer to a 11 by 8 baking pan (holds a single layer of meat) and bake uncovered for 3 hours. The sauce should be very thick and the meat VERY tender.
  • Serve as a taco or over rice.

1/2 cup tomato sauce

Steps:

  • In a large resealable plastic bag, combine the first four ingredients. Add the chicken; seal bag and turn to coat. Refrigerate for at least 8 hours or overnight., In a large nonstick skillet, brown chicken in oil. Stir in the potatoes, water and tomato sauce. Bring to a boil; cover and simmer for 45-60 minutes or until chicken is tender. Add additional water if necessary. Discard bay leaves before serving.

1 (4 pound) beef bottom round roast or other lean roast
2 teaspoons ground black pepper
1 large onion, diced
1 (7 ounce) can chopped green chilies
2 teaspoons chili powder
1 teaspoon cayenne pepper
1 tablespoon garlic powder
2 teaspoons ground cumin
1 (7 ounce) can chipotle peppers in adobo sauce, or to taste
1 cube beef bouillon

Steps:

  • Trim the roast of any excess fat, and cut into four pieces. Rub with black pepper, and place into a slow cooker. Add the onions, green chiles, chili powder, cayenne pepper, garlic powder, cumin, chipotle peppers, and beef bouillon. Pour in enough water to cover 1/3 of the roast.
  • Cover, and cook on High until the meat begins to fall apart, about 8 hours. Add water if needed to keep the roast from drying out.
  • Turn the slow cooker to Low, and remove meat to a large bowl with a slotted spoon. Shred the meat into bite-sized pieces using two forks. Return the meat to the slow cooker; cook about 20 minutes to reheat before serving.
