Steps:
- Gather the ingredients.
- Pour the warm water into a large bowl.
- Slowly stir in the yeast until it is dissolved.
- Add the salt, sugar, and milk to the bowl. Stir until everything is thoroughly combined.
- Mix in the shortening and the first 2 cups of flour. The shortening will continue to integrate into the dough while kneading, so it may be small lumps at this stage.
- If needed, begin adding more flour, 1 tablespoon at a time, until the dough chases the spoon around the bowl.
- Turn the dough out onto a floured board and knead for about 10 minutes. Add small spoonfuls of flour as necessary, until the dough is soft and smooth (not sticky to the touch). You may not need all of the flour, or you may need a little more. Keep the surface floured to prevent the dough from sticking to the board and your hands.
- Put the dough in a greased or buttered bowl and turn the dough over so the other side is also greased.
- Cover and let the dough rise in a warm, draft-free spot, such as an oven with the light on, for about 1 hour, or until doubled.
- Punch down the dough.
- Turn the dough out onto a floured board and knead for 5 minutes.
- Form the dough into a loaf (here are some helpful tips) and set it gently into a greased bread pan .
- Cover and let rise for about 30 minutes, or until doubled. If your kitchen is chilly or drafty, place the pan in a cool oven with the light on for this step, or you may not get a proper rise. Preheat the oven to 375 F.
- Score the risen dough by cutting three slashes across the top with a sharp knife. While not essential, this step controls the direction in which the bread expands as it bakes. (If you forget to do it, the bread will taste the same.)
- Place the bread in the oven and bake for about 35 to 45 minutes or until golden brown.
- Turn out the loaf of bread and let it cool completely on a rack or clean dish towel before slicing.
- Serve and enjoy.

FOOD PROCESSOR LOAF BREAD
Fast and easy and good. I got this recipe from my food processor recipe book about 20 years ago. It's real good and faster than the dough setting on my bread machine (although I also love my bread machine).

BEER BREAD
Per Google.com, the #1 recipe for Beer Bread in the world! There are a few recipes for beer bread out there, but none as simple (and tasty!) as this one. You can even mix it in the baking pan for easy cleanup. This is sensational when served with soups or just as a snack, but don't expect it to be around very long when your family gets a taste of it! Be sure to use a sheet pan on the shelf below the pan to catch any excess butter that may drip during cooking.

Steps:
- Preheat oven to 375 degrees.
- Mix dry ingredients and beer.
- Pour into a greased loaf pan.
- Pour melted butter over mixture.
- Bake 1 hour, remove from pan and cool for at least 15 minutes.
- UPDATED NOTES: This recipe makes a very hearty bread with a crunchy, buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.
- Sifting flour for bread recipes is a must-do. Most people just scoop the 1 cup measure in the flour canister and level it off. That compacts the flour and will turn your bread into a "hard biscuit" as some have described. That's because they aren't sifting their flour! If you do not have a sifter, use a spoon to spoon the flour into the 1 cup measure. Try it once the "correct" way and you will see an amazing difference in the end product.
- I have had many email from you kind folks about using non-alcoholic beverages instead of beer. That is fine to do but I highly recommend adding a packet of Dry Active Yeast or 2 teaspoons of Bread (Machine) Yeast so that you get a proper rise.
- The final result should be a thick, hearty and very tasteful bread, NOT A BRICK! ;).
- Thank you all for the incredibly nice comments and those of you who left a bad review - learn to sift sift SIFT! You will be amazed at the results you get.

Steps:
- Pour 650ml of tepid water into a large bowl. Add the yeast and mix with a fork for a couple of minutes.
- Pour in most of the flour and half a teaspoon of sea salt, then use a fork to mix together until you can't move it anymore.
- Now get your clean hands in there and bring it together as a ball of dough, adding more flour as you need to stop your hands and the dough sticking.
- Transfer the dough to a flour-dusted surface and keep it moving, kneading, pushing and stretching it for 5 minutes, or until you have a silky and elastic dough.
- Use your floured hands to shape the dough into a rough ball, put it in a bowl, flour the top and cover with a clean, damp tea towel. Allow it to prove for about an hour or an hour and 30 minutes, or until doubled in size - ideally in a warm, draught-free place.
- Once the dough has doubled in size, knock the air out by punching it with your fist, then kneading for 30 seconds.
- You can now shape it or flavour it as required - folded, filled, traybaked, whatever - and leave it to prove for a second time, for 30 minutes to an hour, or until it has doubled in size once more.
- Preheat the oven to 180ºC/350ºF/gas 4.
- Carefully transfer your bread dough to the oven and gently close the door. Bake for about 35 minutes, or until golden. You can tell if it's cooked by tapping its bottom - if it sounds hollow it's done; if it doesn't then pop it back in for a little longer.
- Once cooked, place your loaf on a cooling rack and allow to cool.

- The first step in how to make fig bread is to peel the toasted almonds and chop them into small pieces. Next, do the same with the walnuts and then with the sweet figs, peeling and chopping them into small pieces.
- Now, mix the cinnamon, the shot of rum and a little bit of water in a bowl large enough to hold the chopped figs as well. After adding them, let it sit for 2 hours.
- After 2 hours have passed, grease the mould with a little olive oil and a bit of flour. In the bowl with the figs, now add the chopped almonds and walnuts, the anise and the flour, mixing all of the ingredients well to produce a fully incorporated batter.

- 1. In a large bowl or a stand-mixer, mix all of the ingredients together, starting with the yeast, sugar, and warm water, then 4 cups of flour and salt, gradually adding more flour until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a lightly floured work surface.
- 2. Knead the bread dough. Fold the dough into a rough envelope shape, pulling the top edge towards you, then pushing back with the heel of your hand. Rotate 90 degrees, and repeat. Continue kneading for at least five minutes to develop gluten; the dough will take on a smoother texture and begin to stretch. Add small sprinkles of flour to work surface to prevent sticking as needed.
- 3. Set the dough aside, and clean the bowl of the stand-mixer. Grease lightly with olive oil or vegetable oil, then transfer dough to bowl. Turn once to coat, then cover the bowl and place in a warm, draft-free spot for 2 hours to allow the dough to rise.

- Mixing. Now that we’ve got our ingredients, it’s time to mix them! Even though mixing sounds simple (and of course, at the core it is!) it’s a very important step.
- Resting & hydrating. This step is not fully necessary, but when mixing by hand or using a lot of whole wheat flour this can definitely help. This phase consists of leaving the dough mix just like that for about 30 minutes.
- Kneading. Newsletter. Want to be updated on new food science articles? Subscribe to our weekly newsletter. There are a lot of recipes out there for breads that don’t require any kneading (what about using a LoafNest?).
