This tasty noodle dish is the same one my mom used to make for me when I was growing up. It's definitely comfort food. You can alter it with adding your favorite meats and veggies.

3 (3 ounce) packages ramen noodles (without flavor packets)
1 tablespoon vegetable oil
1 pound skinless, boneless chicken breast halves, cut into strips
1 teaspoon olive oil
1 teaspoon garlic salt
1 pinch ground black pepper, or to taste
1 tablespoon vegetable oil
½ cup chopped shallots
5 cloves garlic, chopped
1 cup shredded cabbage
1 cup shredded carrots
1 cup broccoli florets
1 cup sliced fresh mushrooms
¼ cup soy sauce
¼ cup sweet soy sauce (Indonesian kecap manis)
¼ cup oyster sauce
salt and pepper to taste

Steps:

  • Bring a pan of water to a boil, and cook the ramen until tender, about 3 minutes. Plunge the noodles into cold water to stop the cooking, drain in a colander set in the sink, and drizzle the noodles with 1 tablespoon of vegetable oil. Set aside.
  • Place the chicken strips in a bowl, and toss with olive oil, garlic salt, and black pepper. Heat 1 tablespoon of oil in a wok over high heat, and cook and stir the chicken until it is no longer pink, about 5 minutes. Stir in the shallots and garlic, and cook and stir until they start to turn brown. Add the cabbage, carrots, broccoli, and mushrooms, and cook and stir until the vegetables are tender, about 5 minutes.
  • Stir in the ramen noodles, soy sauce, sweet soy sauce, and oyster sauce, mixing the noodles and sauces into the vegetables and chicken. Bring the mixture to a simmer, sprinkle with salt and pepper, and serve hot.

This fragrant rice dish with chicken, prawns and shredded omelette is the ultimate comfort food for spice lovers.

300g long-grain rice
3 tbsp vegetable oil
4 large eggs, beaten
100g fine green beans, cut in half
2 chicken breasts, cut into small even chunks
180g pack large raw peeled prawns, cut in half
200g shallots, thinly sliced
20g garlic, finely chopped
2 medium-hot red chillies, deseeded and finely chopped
1 red bird's-eye chilli, sliced
1 medium carrot, thinly sliced
1 quantity Balinese spice paste (see recipe in 'goes well with'
1 tbsp tomato purée
1 tbsp kecap manis (Indonesian sweet soy sauce)
1 tbsp light soy sauce
8 spring onions, thinly sliced
½ cucumber , sliced
2 medium tomatoes , sliced
4 tbsp crispy fried onions
prawn cracker

Steps:

  • Put the rice in a medium heavy-based saucepan and add 520ml water. Quickly bring to the boil, stir once and cover with a tight-fitting lid. Reduce the heat to low and cook for 10 mins. Uncover, fluff up with a fork and spread over a tray. Set aside to cool.
  • Meanwhile, heat 1 tbsp oil in a large frying pan over a medium heat. Pour in the beaten egg and, as it begins to cook, use a spatula to bring large flakes of cooked egg into the middle of the omelette. Continue to cook like this for a couple of mins, then leave the rest of the egg to set completely. Flip the omelette over and transfer to a plate to cool before cutting it into long, thin shreds.
  • Drop the beans into a pan of boiling salted water and cook for 3 mins. Drain, refresh under cold water and set aside.
  • Heat the remaining oil in a wok or large, deep frying pan until almost smoking. Add the chicken and prawns, and stir-fry for 1 min. Tip in the shallots, garlic, chillies and carrots, and stir-fry for a further 2 mins until the carrot is just tender. Add the spice paste and stir-fry for 1 min more. Add the tomato purée, kecap manis, cooked rice and green beans, and stir-fry over a high heat for 2 mins. Add the soy sauce, spring onions and shredded omelette, and toss together.
  • Spoon the nasi goreng onto warmed plates. Overlap the cucumber and tomato on the side of each plate, sprinkle over the crispy fried onions and serve with prawn crackers.

3 tablespoons butter, preferably clarified butter
6 shallots, chopped
1 green chili pepper, seeded and chopped
4 -5 garlic cloves, minced
1 lb carrot, peeled and sliced into very thin strips
1/4 cup vegetable broth
2 tablespoons dark soy sauce
salt, if needed, to taste

Steps:

  • In a wok or large skillet, heat the 2 tablespoons of butter.
  • Saute the chopped shallots and chili for 1 minute.
  • Add the garlic and the carrots.
  • Stir continuously for a minute or so and then add the broth and soy sauce.
  • Cover and continue to cook for about 4 minutes.
  • Uncover, taste, and add salt if necessary. Cook for a further 2 minutes, stirring all the time.
  • Serve.

3 tablespoons peanut oil
1 large onion, chopped
2 jalapeño chilies, seeded but not deveined, minced
1 teaspoon turmeric
1/2 teaspoon ground cinnamon
1 pound long-grain white rice
2 14 1/2-ounce cans chicken broth
1/3 cup water
1 bay leaf
Chopped green onion tops
Vegetable Stir-fry
1 pound green beans, trimmed
4 large carrots, peeled, sliced medium-thin on diagonal
1/2 small head red cabbage, halved, then cut crosswise into 1/2-inch-wide pieces
3 tablespoons vegetable oil
4 fresh ginger slices
1/2 teaspoon salt
3 tablespoons canned chicken broth or water
2 tablespoons fresh lime juice
2 teaspoons oriental sesame oil

Steps:

  • For rice:
  • Heat oil in heavy large saucepan over medium-low heat. Add chopped onion and chilies and stir until onion is translucent, about 8 minutes. Mix turmeric and ground cinnamon. Add rice and stir 2 minutes. Add chicken broth, water and bay leaf. Bring to boil. Reduce heat to low, cover and cook until liquid is absorbed, about 20 minutes.
  • Mound rice in center of platter. Sprinkle with green onions. Surround with stir-fried vegetables.
  • For stir-fry:
  • Cook beans and carrots in large pot of boiling salted water until just crisp-tender, about 4 minutes. Drain. (Can be prepared 1 day ahead of time. Bring to room temperature before continuing.)
  • Rinse cabbage and drain well just before cooking. Heat vegetable oil in wok or heavy large skillet over high heat. Add ginger; press and stir until aromatic. Add cabbage and stir to coat with oil. Sprinkle with 1/2 teaspoon salt.
  • Add broth, reduce heat to low, cover and cook 2 minutes. Uncover, increase heat to high, add green beans and carrots and stir-fry until heated through. Mix in lime juice and sesame oil. Season to taste with salt and pepper. Discard ginger and serve.

4 medium carrots, halved crosswise
2 teaspoons olive oil
1 garlic clove, sliced thin lengthwise
1/3 cup water
2 teaspoons unsalted butter
fresh lemon juice to taste

Steps:

  • Halve carrot pieces lengthwise and cut crosswise into 1/8-inch-thick slices. In a heavy medium skillet heat oil over moderately high heat until hot but not smoking and stir-fry carrots until they begin to turn golden. Add garlic and stir-fry 30 seconds. Add water and butter and simmer, covered, until carrots are just tender, about 3 minutes. Boil carrots, uncovered, until most of liquid is evaporated. Stir in lemon juice and salt and pepper to taste.

1 garlic clove, crushed
1/2 cabbage, sliced and chopped (more to your taste)
1 onion, finely chopped
1 red chili pepper, seeded and then cut into very fline slices
1 tablespoon peanut oil
1 chicken stock cube
2 eggs, beaten
salt and pepper

Steps:

  • Heat oil in the frying pan, then add the onion, chilli and garlic.
  • Cook until soft.
  • Break chicken stock cube into the pan and stir to spread throughout the mixture.
  • Add all of the chopped cabbage and salt and pepper, then stir to coat the mixture.
  • Place lid on the pan and cook over a low heat for a further 10-15 minutes (the cabbage should be soft by this time).
  • Stir in the beaten eggs until they are cooked (about a minute).
  • Serve it in a hot dish.
