Steps:
- Prick each sausage in several places with a skewer or the tip of paring knife to prevent bursting. Put sausages in one layer in a skillet. Add water to cover and bring to a simmer. Cook for 5 minutes, then cover, turn off heat and let steep.
- Place a wide skillet over high heat and add 2 tablespoons olive oil. When oil is hot, add sliced peppers and onions. Season generously with salt and pepper, and cook, stirring frequently, until softened and beginning to brown, about 10 minutes. Adjust heat as necessary if mixture seems to be cooking too quickly. Add garlic just at the end, stir to incorporate and cook 1 minute more. Stir in the vinegar.
- Transfer pepper mixture to a platter. Over medium heat, coat pan with 1 tablespoon olive oil, add sausages and cook 2 to 3 minutes per side, to brown. Top pepper mixture with cooked sausages. Sprinkle with crushed red pepper and oregano and garnish with basil leaves.
- If desired, in the same wide skillet, fry eggs sunny side up in a little olive oil to accompany. Season with salt and pepper.

CLASSIC ITALIAN SAUSAGE, PEPPERS & ONIONS
Sausage, Peppers & Onions is a classic Italian favorite, especially if you grew up in Chicago. Grill the sausage on the BBQ to get that great char flavor, and to roast the peppers and onions in a hot oven, Then combine the grilled sausage with the roasted peppers, onions, and all the juices. Steps:
- Before you start the recipe, you should put your sausage in the freezer for about an hour or so. They won't freeze, but they will become more firm and easier to cut. If you try to cut them without doing this, the sausage casings get wonky and everything falls apart. Once that is done, cut the sausage into one-inch pieces and put them in a large baking pan. Mine was 18"x 15" and worked great for this. You can split it between two baking dishes if you need to.
- Peel your potatoes and cut them into cubes. Keep the pieces uniform so they cook evenly. I used three small potatoes and one large. Put the potatoes in a large bowl.
- Cut your green and red peppers. Cut around the core and seed part. Then cut your peppers into thick strips and then into chunks from there. (video shows all this well)
- Add your peppers to the bowl with the potatoes. Add the olive oil and salt. Mix everything together until it is well combined.
- Combine the potatoes and peppers with the sausage in the baking pan. Toss together and spread everything out evenly.
- Cover with foil and cook in a preheated oven at 400 degrees for 25 minutes.
- While it's cooking, chop your onions. I like to add mine half-way through the cooking process. That's my preference. If you want to add everything together at the beginning - go for it.
- After 25 minutes, remove the foil, add the onions to the pan and gently mix the onions with everything else. Put back in the oven for another 20-30 minutes - UNCOVERED this time. Ovens are different. Mine runs hot, so yours may take longer or shorter to cook things. I can tell it's done when the sausage browns a bit.
- Remove from the oven and serve immediately. Serve with parmesan shaker cheese and chili flakes if you like! Enjoy!

ITALIAN SAUSAGE, PEPPERS, AND ONIONS
he daily consumption of fresh meat began to decline by 1550 as the population was now fully recovered from the Black Death of two centuries before, and, as a result, more land was devoted to the more labor-intensive agriculture rather than stock rearing. As fresh meat consumption declined, the salting of meat grew to supply the men of many ships and to form a part of the meager diet of the poor.

- In a large skillet, heat 1/4 cup of the olive oil. Add the onions and cook over high heat, stirring frequently, until golden, 10 minutes. Stir in the paprika, sugar and red and green bell peppers. Reduce the heat to moderate and cook, stirring occasionally, until the peppers are softened, about 12 minutes. Stir in the water and oregano. Season with salt and pepper, cover and keep warm.
- Meanwhile, heat the remaining 1 tablespoon of olive oil in a medium skillet. Prick the sausages all over, add them to the skillet and cook over moderately high heat, turning frequently, until browned all over, about 5 minutes.
- Transfer the sausages to a cutting board and halve lengthwise. Return the halves to the skillet and cook over moderately high heat, turning occasionally, until no trace of pink remains within, about 5 minutes. Transfer to a plate.
