JEWISH STYLE SWEET AND SOUR BRISKET

Jewish Style Sweet and Sour Brisket image

This is the best brisket you will ever taste. No matter who comes for dinner, they always make sure that I'll be making this brisket. It is a very traditional dish for Rosh Hashanah and Passover but it certainly is a winner any time of the year for anyone who loves very tender beef.

SWEET AND SOUR BRISKET

Provided by Ellie Krieger

Categories     main-dish

Time 3h50m

Yield 10 servings

Number Of Ingredients 13

One 3-pound beef brisket, first-cut or flat-half cut, trimmed of any excess fat
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons canola oil
1 medium onion, cut in 1/2, then thinly sliced into 1/2 moons
3 cloves garlic, chopped (about 1 tablespoon)
One 15-ounce can tomato sauce, preferably no salt added
1/4 cup low-sodium chicken broth or water
3 tablespoons firmly packed dark brown sugar
1/3 cup plus 1 tablespoon cider vinegar
1/3 cup raisins
5 black peppercorns
1 allspice berry

Steps:

  • Preheat the oven to 300 degrees F.
  • Pat the brisket dry and sprinkle with the salt and pepper. Heat 1 tablespoon of the oil over medium-high heat in a Dutch oven or braising pot. Sear the brisket until it is browned, 4 to 5 minutes per side. Transfer the brisket to a plate.
  • Add the remaining 1 tablespoon oil to the pot and cook the onion, stirring a few times, until softened, 3 to 5 minutes. Add the garlic and cook, stirring, for 1 minute. Add the tomato sauce, broth, brown sugar, 1/3 cup of the vinegar, the raisins, peppercorns and allspice and stir to combine well. Bring the mixture to a boil, return the brisket and any accumulated juices to the pot, spoon some of the tomato-vinegar mixture over the brisket, cover tightly and transfer to the oven. Cook until the brisket is fork tender, 2 1/2 to 3 hours.
  • Remove the brisket from the oven, transfer the meat to a cutting board and let rest for 10 to 20 minutes or, if serving later, cover and refrigerate the meat and sauce for several hours or overnight. When you are ready to serve, cut the meat against the grain into 1/4-inch-thick slices. Stir the remaining 1 tablespoon vinegar into the warm sauce. Return the sliced brisket to the sauce until heated through, then serve.
  • Yield: 10 servings, serving size: 4-ounces brisket plus 3 tablespoons of sauce

SWEET-AND-SOUR FLANKEN

Sweet-And-Sour Flanken image

Flanken and brisket were popular cuts of meat with Jewish immigrants from eastern Europe at the turn of the 20th century, and frequently appear on Jewish holiday menus. From Eric and Bruce Bromberg of Manhattan's Blue Ribbon Restaurant, and posted in The Denver Post.

Provided by gregory schulte

Categories     European

Time 4h30m

Yield 6 serving(s)

Number Of Ingredients 17

12 pieces beef flank steak, cut to 3 bones each (a strip of beef cut from the chuck end of the short ribs)
4 whole carrots
2 cups diced tomatoes
1 large yellow onion
1 head garlic, cut in half
1 bunch fresh thyme
1 tablespoon whole black peppercorn
2 cups port wine or 2 cups manischewitz concord grape wine
4 cups red wine
4 cups chicken stock
1 cup cider vinegar
1 cup red wine vinegar
1 (12 ounce) jar honey

2 cups port wine or 2 cups manischewitz concord grape wine
to taste salt and pepper

Steps:

  • In a large heavy-bottomed stockpot, combine all braising ingredients.
  • Bring to a boil, then reduce to a simmer and cook, skimming any foam that forms until meat is tender but not falling off the bone, about 2 1/2 to 3 hours.
  • Remove meat and set aside.
  • Simmer remaining liquid another 15 minutes to reduce.
  • Meanwhile, in a large saucepan, prepare sauce by combining cider and red wine vinegar and honey.
  • Bring to a a boil then add carrots and shallots and cook at a boil until soft, but not fully cooked, about 10 minutes.
  • Add wine.
  • Once braising liquid in stockpot has reduced, use a slotted spoon to remove and discard solids, then carefully pour liquid through a mesh strainer and into saucepan with vinegars and honey.
  • Bring liquid to a simmer and cook until it is thick enough to coat the back of a spoon, about 20-30 minutes.
  • Season with salt and pepper.
  • Add flanken, cover pot and cook until sauce is coating meat, about 15 minutes.
  • Serve flanken over egg noodles or kugel.
  • Accompany with a basket of toasted challah, honey and sea salt.

JEWISH GRANDMA'S BEST BEEF BRISKET

Jewish Grandma's Best Beef Brisket image

My mother makes a GREAT beef brisket. She got the recipe after watching a friend's Jewish grandmother make it. It is perfect, delicious and easily kosher for Passover. Enjoy! Great with mashed potatoes or potato latkes (latkes with this meal are also kosher) or roasted vegetables (with olive oil, salt and pepper - also kosher). Mazel Tov!

Provided by FRIENDLYFOOD

Categories     Main Dish Recipes     Roast Recipes

Time 4h20m

Yield 10

Number Of Ingredients 6

1 tablespoon vegetable oil
1 (4 pound) beef brisket
ground black pepper to taste
2 onions, thickly sliced
2 cloves garlic, peeled and cut in half
salt and pepper to taste

Steps:

  • Heat the oil in a large deep skillet or pot over medium-high heat. Season the brisket generously with black pepper. Place in the pan and cook until the surface is a rich brown color, not burnt, but dark. Lift the roast and scatter the onions in the pan. Place the uncooked side of the roast down onto the onions. Repeat the browning process.
  • Add the garlic to the pan, and fill with enough water to almost cover the roast. Bring to a simmer. Reduce heat to low and cover with a lid or tight-fitting aluminum foil. Simmer for 4 hours, turning the roast over once halfway through. The roast should be fork tender.
  • Remove the brisket to a serving platter. Bring the broth in the pan to a simmer, scraping the bottom to loosen any browned bits. Cook until reduced to a thin gravy. Taste and season with salt and pepper if needed.

BRISKET IN SWEET-AND-SOUR SAUCE

Brisket in Sweet-and-Sour Sauce image

Brisket is the Zelig of the kitchen. It takes on the character of whoever cooks it. In the early part of the 20th century, when ''The Settlement Cook Book'' reigned supreme in American Jewish households, recipes for savory briskets of beef with sauerkraut, cabbage or lima beans were the norm. As tastes became more exotic, cranberry or barbecue sauce, root beer, lemonade and even sake worked their way into recipes. Here, Coca-Cola is the secret ingredient, along with ginger. The result is sublime and the dish only improves if it's cooked a day in advance of serving it. However, you can prepare and serve it the same day, if you'd like, though you may want to use a fat separator to strain the fat from the finished sauce. Several readers commented that the original cooking time and temperature on the recipe (3 hours, including 1 hour uncovered, at 350 degrees) was inaccurate. We've retested and adjusted the recipe, so the brisket now cooks for 5 to 6 hours, covered, at 325 degrees. Please also note that this recipe is not kosher for Passover.

Provided by Joan Nathan

Categories     dinner, main course

Time 6h30m

Yield 12 servings

Number Of Ingredients 14

1 first-cut brisket, 6 to 7 pounds, rinsed and patted thoroughly dry
1 medium onion, peeled and quartered
1 2-inch piece fresh ginger, peeled, cut into chunks
6 large cloves garlic
1 cup ketchup
1/2 cup dry red wine
1/4 cup cider vinegar
1/4 cup soy sauce
1/4 cup honey
1/4 cup Dijon mustard
1 tablespoon coarsely ground pepper, or to taste
1/4 teaspoon ground cloves
1 1/2 cups Coca-Cola or ginger ale
1/2 cup olive oil

Steps:

  • Let meat stand at room temperature for 30 minutes before cooking. Heat oven to 325 degrees.
  • Place everything but the soda, olive oil and brisket into a food processor, and process with steel blade until smooth. Pour the mixture into a large bowl and whisk in soda and olive oil.
  • Place brisket, fat side up, into a heavy baking pan just large enough to hold it, and pour sauce over it. Cover tightly and bake for 3 hours. Turn brisket over, cover pan, and bake 2 to 3 hours more or until fork-tender. Cool, cover brisket and refrigerate overnight in cooking pan.
  • The next day, transfer brisket to a cutting board, cut off fat and slice with a sharp knife against grain, to desired thickness. Set meat aside. Remove any congealed fat from sauce and bring to a boil on top of stove.
  • Heat oven to 350 degrees. Taste sauce to see if it needs reducing. If so, boil it down for a few minutes or as needed. Return meat to sauce and warm in oven for 20 minutes. Serve warm.

  • In a large, heavy pan, heat 2 tablespoons of oil under medium high heat. Pat the brisket dry with paper towels on both sides. Sprinkle it with salt and pepper. Place the brisket in the pan and sear it on each side 3-4 minutes, until well browned. If there is slanted or raised portion on any part of the brisket that is not seared when both sides are done, press that part of the meat onto the pan long enough to sear it as well. Once the brisket is fully seared, remove it to the slow cooker, fat side up.
  • Add another tablespoon of oil to the pan. Slow cook the onions for 20 minutes, stirring frequently. They should look caramelized when done, although not as richly so as longer cooked caramelized onions. Remove the onions to the slow cooker, on top of the brisket. Add half (2 tablespoons) of the apple cider vinegar to the pan and scrape up any remaining bits of onion. Pour whatever remains over the brisket and onions and return the pan to the stove.
  • Add the final tablespoon of oil to the pan and heat it. Add the carrot and celery chunks, cooking them on medium-high heat for a few minutes until they begin to brown. Add the garlic and cook for an additional 30-60 seconds. Pour the vegetables into the slow cooker over the brisket and onions.
  • Mix the diced tomatoes, tomato paste, honey, and 2 remaining tablespoons of apple cider vinegar. Pour the mixture into the slow cooker over the brisket and vegetables. Turn the slow cooker onto low and cook for about 6 hours. Let the meat stand at least 30 minutes before serving (cutting it), although it is preferable to put the brisket and sauce into the refrigerator overnight and slice the meat the next day.
