KOREAN SESAME CHICKEN AND POTATOES



Korean Sesame Chicken and Potatoes image

This Korean chicken main dish with potatoes, onions, and carrots is served over a bed of rice. Seasoned with soy sauce, sesame seeds, and, of course, garlic.

1 (2 to 3 pound) whole chicken, cut into pieces
½ cup soy sauce
½ cup water
2 tablespoons minced garlic
1 tablespoon sesame oil
1 teaspoon sesame seeds
¼ cup white sugar, or to taste
3 potatoes, or more to taste, quartered
2 large carrots, sliced into large diagonal pieces
1 large onion, sliced
½ teaspoon ground black pepper
2 cups cooked rice

Steps:

  • Place a large Dutch oven over medium heat. Add chicken and cook until browned, about 10 minutes. Drain and discard fat.
  • Mix soy sauce, water, garlic, sesame oil, and sesame seeds together in a large bowl. Add sugar to taste, remembering you can always add more, but you can't take away. Stir to mix well and dissolve sugar. Fold in potatoes, carrots, and onion. Season with pepper.
  • Pour vegetables into the Dutch oven to cover chicken. Cover with a lid and bring to a boil, about 5 minutes. Stir and reduce heat to medium for about 5 minutes. Reduce heat to low and simmer 40 minutes more, stirring occasionally.
  • Serve chicken and vegetables over hot cooked rice.

4 cups all-purpose flour
1 cup white sugar
1 ½ cups shortening
¾ cup milk
.063 teaspoon anise oil
2 ounces sesame seeds

Steps:

  • Combine flour and sugar in a bowl. Cut in shortening with a pastry blender-or work with your hands - until mixture resembles coarse meal.
  • Add anise oil (optional) small amount for it is very strong, to 1/2 cup of the milk and add to flour mixture. Gradually add more of the milk mixing until dough holds together.
  • Pull off small portions of dough and roll between palms of the hands into a roll about finger size. Roll in sesame seeds. Seeds stick better if put in sugared water and taken out and put on a clean lintless cloth. Roll on cloth with seeds, then flatten out too about 1/4-inch thickness. Cut into 2 inch strips, place on ungreased baking sheet.
  • Bake at 350 degrees F (180 degrees C) for 20 to 25 minutes, or until golden brown. Remove, cool completely, then store in an airtight container.

I got this recipe on an adoption site after I adopted my daughter from S. Korea. They are so yummy and addictive!

1 cup butter (REAL, NO substitutions)
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 teaspoon baking soda
1 teaspoon hot water
1 teaspoon vanilla extract
3 cups flour
3/4 cup toasted sesame seeds

Steps:

  • Cream butter with brown and white sugars. Add eggs and beat well. Add baking soda, hot water and vanilla extract. Mix well.
  • Stir in flour and sesame seeds to make a stiff dough. Cover and chill until dough is firm.
  • Roll heaping teaspoonfuls into balls; place on greased baking sheet, about 2" apart. Flatten slightly. Bake at 325 degrees for 10-12 minutes.

I got several recipes from a Korean friend at the university. This is one of the few sweets recipes - a no bake gluten free candylike cookie which looks quite pretty. For the syrup I've so far used molasses, agave and rice syrup successfully. Cooking time doesn't include cooling time.

50 g sesame seeds
50 g black sesame seeds
65 g brown sugar
8 tablespoons syrup

Steps:

  • Roast white and black sesame seeds seperately in dry pans until they start to pop.
  • Remove from pan onto plates.
  • Slowly heat sugar and syrup in a pan, stirring constantly, until sugar dissolves.
  • Divide the sugar and syrup mixture, mix one half with the white and the other with the black sesame seeds.
  • Spread both mixes onto seperate parchment or non stick baking paper sheets, cover with another sheet and flatten, then remove top sheets and lay the black sesame layer on top of the white one and remove the sheet from the black layer.
  • With the help of the underlying sheet roll the black and white layers tightly into a roll, so that the white layer encloses the black one.
  • Let the roll cool, then slice into about 1/4 to 1/3 inch slices.

2 tbsp sesame oil
25g sesame seeds
1 tbsp soy sauce
1 tbsp mirin
2 tbsp hot chilli sauce
25g ginger , finely grated
500g pork loin or leg steaks, cut into thin strips
8 spring onions , cut into long pieces
2 red peppers , deseeded and thinly sliced
cooked rice , to serve

Steps:

  • Mix together 1 tbsp oil, the sesame seeds, soy sauce, mirin, chilli sauce and ginger. Pour over the pork and mix it all together. Heat the remaining oil in a large non-stick frying pan or wok. Add the pork and fry for 5 mins until browned. Add the peppers and spring onions, and cook for 5-10 mins more until the vegetables have softened and the pork is cooked through. Serve with cooked rice.
