LEG OF LAMB WITH SAVORY BEANS
In France, gigot d'agneau - leg of lamb - is, well, de rigueur for a proper Easter meal. But it is always appropriate for any special dinner party, or any occasion throughout the year when you want an impressive main course. The technique is simple and requires few ingredients (garlic, thyme and rosemary), but the result is very flavorful. Seasoning the lamb for at least an hour in advance of roasting is essential. Refrigerate it overnight for more intense flavor; it's also less work to do on the day of the feast. Just remove from the refrigerator, bring it to room temperature, and it's ready for the oven.

- Put the beans in Dutch oven or heavy-bottomed pot. Add 8 cups water and place pot over high heat. Stick 1 whole clove into each onion half. Add onion, bay leaves, carrot, garlic, thyme and salt. Bring to a boil, then turn heat to a bare simmer and cover with lid ajar. (The slow simmer keeps the beans from bursting.) After 30 minutes, taste the bean broth, and add salt as necessary. Cook for about another 30 minutes, but check for tenderness after 15 minutes. Turn off the heat and let beans cool in their cooking liquid. (You may cook the beans several hours, or up to 1 day, in advance.)
- Meanwhile, prepare the lamb: With a sharp paring knife, make 24 small slits over the surface of the lamb. Using your fingers, push a garlic sliver into each slit.
- Season the leg generously all over with kosher salt, then sprinkle with about 1 teaspoon black pepper. Drizzle with about 2 tablespoons olive oil, and massage oil and seasonings all over the meat. Leave at room temperature for at least an hour. (Alternatively, wrap and refrigerate the seasoned leg for up to 24 hours. Bring to room temperature before proceeding.)
- Heat oven to 475 degrees. In a sturdy roasting pan, arrange the onions and celery. Lay down the thyme and rosemary branches and set the lamb leg on top. Roast, uncovered, for 20 minutes, then add wine to the pan and turn heat to 350 degrees. Continue cooking, basting the roast occasionally, until the internal temperature reaches 130 degrees for medium-rare or 140 for medium, which will take up to 1 1/2 hours.
- Transfer the roast to a cutting board and keep warm, tented with foil, for 15 to 20 minutes. Remove the onions, celery, thyme and rosemary from the roasting pan and discard. Skim fat from surface of pan juices.
- Set pan over medium-high heat and bring to a simmer, scraping up any browned bits from the bottom of the pan. Taste and adjust with a splash of water if the pan juices are too salty.
- While lamb is resting, boil carrots in well-salted water until tender, 10 to 12 minutes. Drain, toss with butter and keep warm.
- Reheat the beans in their broth, then drain reserving bean broth for another use. Remove and discard onion, bay leaves, carrot, garlic and thyme. Put beans in a warm serving dish. Toss beans gently with the parsley, chives, lemon zest, olive oil and pepper. Reheat pan juices, strain and pour into a serving vessel.
- Carve the lamb and arrange on serving platter along with the carrots. Garnish with watercress, if desired.
SAVORY LEG OF LAMB
This is a great way to roast a leg of lamb. You may also use a butterflied leg and rub the rosemary blend inside and out - you do not need to score the lamb if you rub the mixture inside. I found this recipe on the net. It is good.

- Preheat oven to 350°F.
- Using a veggie peeler peel the yellow rind from one lemon, do not cut the pith with it Remove pith from this lemon and remove the rind and pith from the second lemon Slice each lemon across into 6 slices.
- Drop the zest (yellow saved peel) into a sauce pan of boiling water, blanch 1 minute& remove from water In your blender or food processor process the rosemary leaves, garlic, blanched zest, 1 tbsp oil, lemon juice, season with salt. Process until everything is chopped fine.
- Score the lamb leg with small cuts all over and rub the rosemary mixture into the cuts Put the lemon slices on the bottom of your roasting pan and put the lamb on top of them.
- Roast lamb for 45 minutes.
- Meanwhile scrub the potatoes and cut then in half or quarter them, depending on their size boil for 5 minutes, drain and sprinkle remaining 1 tbsp of oil evenly over them.
- Arrange the potatoes around the lamb and continue roasting for a further 50 minutes or until it reaches your desired temp (140°F for med rare, 160°F med & 170°F well done) take out the lamb and let it rest for 15 minutes (I cover it with foil).
- Increase oven temp to 450°F.
- Arrange the potatoes with the lemon slices in one layer and return to the oven for 5-10 minutes or until the potatoes are golden; toss lemon & potatoes with the chives. Serve along side the roast lamb.

LEG OF LAMB WITH WHITE BEANS
Based on a wonderful recipe from McCall's Cooking School, Meat #22. The intro says, "Lamb and beans the French way. To most Americans, accustomed to pork with their beans, lamb with white beans is an unusual combination. But it's an everyday meal to the French, particularly those from Brittany. The beans are cooked until tender, combined with garlic, onion, herbs and plum tomatoes, then cooked again for several hours with the lamb. We like our roast lamb fairly well done, while the French prefer it pink. A meat thermometer is a great help in roasting it to just the right degree."

- Rinse and drain beans. In a 6-quart kettle, combine beans with 6 cups cold water. Bring to boiling; reduce heat and simmer 2 minutes. Cover; remove from heat; let stand 1 hour. Drain beans, reserving lequid. Measure liquid. Add water to make 2 quarts.
- Return beans and their liquid to kettle; bring to the boil. Reduce heat and cover; simmer gently for 1 hour, or just until beans are tender but not mushy. Place beans in colander and drain. Preheat oven to 325°F.
- Peel 1 clove of the garlic, and crush in garlic press.
- Heat butter in large skillet; saute sliced onion and crushed garlic until golden -- about 10 minutes.
- In shallow roasting pan, combine cooked beans, onion mixture, 1/2 teaspoon rosemary, 1/2 teaspoon thyme, 2 teaspoons salt, the pepper and tomatoes; mix well.
- Pat lamb dry with paper towels; trim off most of the fat. Using a paring knife, make 6 small slits in in flesh. Peel 2 cloves garlic; cut into slivers; insert slivers of garlic in each slit in surface. Sprinkle lamb with the remaining rosemary, thyme and salt.
- Arrange leg of lamb on top of beans; insert meat thermometer into the meatiest part of leg -- do not let it rest against the bone.
- Roast, uncovered, 3 to 3 1/2 hours, or to 175°F on meat thermometer, for well done. Roast 20 minutes less for medium-well or pink.
- To serve: Remove lamb to heated platter or carving board. Allow roast to stand about 20 minutes before carving for easier slicing. With long, sharp knife, cut long, thin, flat slices from leg. Spoon beans around lamb. Garnish with parsley.

ROAST LEG OF LAMB WITH RAGOUT OF WHITE BEANS, GARBANZO BEANS, ARTICHOKE, PANCETTA AND OVEN DRIED TOMATOES

- For the Lamb: Preheat the oven to 475 degrees F. Combine the crumbs, garlic, herbs, olive oil and mustard in a small bowl. Season with salt and pepper. Place the lamb on a rack in a baking pan. Season the lamb with salt and pepper to taste. Spread half of mustard mixture on inside of lamb. Roll and secure with string. Sear lamb on all sides and bake in the oven for 15-20 minutes, until lightly golden. Reduce the heat to 350 degrees, remove the lamb and spread the remaining 1/2 of mustard mixture evenly over the top. Return to the oven and continue roasting until medium rare, about 1 1/4 hours. Let rest 10 minutes and slice thinly on the bias.
- For the Bean Ragout: Heat olive oil in a medium saucepan over medium heat. Add shallots, carrots and celery and sweat for 5 to 7 minutes. Increase heat to high and add the cooking liquids and chicken stock. Cook until reduced to 2 cups and strain. Place the beans and artichokes in the saucepan and add the stock. Cook until the liquid has reduced to 1/4 cup. Add the butter, thyme and parsley and season with salt and pepper to taste. Spoon the mixture onto a platter and top with the pancetta and tomatoes.

- Preheat the oven to 400 degrees. Rub lamb inside and out with garlic clove. Stuff leg of lamb and tie securely; sprinkle meat with rosemary.

- Soak cannelloni beans in water overnight. Remove hind legs from baby lamb. Remove femur bone and kneecap. Pick 1 sprig of rosemary and 1/2 bunch of thyme, clean 4 cloves of garlic. Chop together until fine. Season bone marrow and inside of lamb leg with salt and pepper, and rub with chopped herb and garlic mixture. Insert marrow into leg cavity and tie with butcher's twine. Preheat oven to 225 degrees. Blanch Roma tomatoes in boiling water for 15 seconds. Shock in ice water until cold. Peel skin from tomatoes, cut in half and scrape out the seeds. Place 8 halves on foil lined sheet pan. Drizzle with olive oil and add 2 crushed cloves of garlic and 2 sprigs of thyme. Sprinkle with a pinch of salt. Place in oven, cook for 45 minutes to an hour, flip over and cook for another hour or until firm and dry. Turn oven up to 400 degrees. Clean 4 cloves of garlic of excess skin, but be sure to leave 1 layer on. Place in small pot and cover with oil. Place on moderate fire until slow simmer, about 5 minutes. Once simmer is reached, turn fire down very low and let garlic cook in oil. Be careful at this point, excessive heat will cause garlic cloves to explode, shooting hot oil in all directions. Use a splatter guard if unsure. Cook for an additional 10 minutes, remove from heat and let cool in oil. Crack femur bone and kneecap. Cut scrap meat, from lamb carcass, into large dice. Heat large roasting pan, add half of garlic "confit" oil. Carefully place lamb bones and scraps in pan and place in oven. Let roast, stirring occasionally, until dark golden brown. At this point, remove from oven, add 2 crushed cloves of garlic, 1 small piece each of rosemary and thyme and deglaze with 4 cups of water. Make sure to scrape pan bottom well to loosen all of the meat bits that adhered during the roasting period. Transfer into saucepot large enough to fit everything, and simmer, skimming frequently, until reduced by half. Add demi-glace and reduce further until 12 ounces remains. Pass this fragrant lamb "Jus" through a strainer or coffee filter, and season to taste. Drain beans and place into thick bottomed pot. Cut carrot, celery and onion in half, add to pot. Add remaining rosemary, thyme, tomato halves, garlic and 2 ounces olive oil. Cover with water and bring to simmer. Continue to cook until beans are tender, about 2 hours. Pull off of fire and season with liberal amounts of salt. Let cool in liquid. When cold, remove cooking liquid and discard with herbs. Chop aromatics and re-combine with beans. Cut each of the squash and zucchini into 3 equal sized cylinders. Cut each of the cylinders into 4 equal sized wedges. Trim each of the wedges, using a pairing knife, into football shaped pieces. This is called "Tourne." Blanch in salted, boiling water until easily pierced with a knife tip. Cool quickly. Turn oven down to 375 degrees. Season lamb legs with salt and pepper, rub with oil, place on roasting rack and cook for 45 to 55 minutes. Check internal temperature with thermometer, it should be about 135 to 140 degrees. Pull from oven and let rest for 15 minutes. Place beans and vegetables in medium sized pot with 4 ounces of lamb "Jus". Simmer until thick, season to taste and serve, distributing the vegetables evenly. Slice leg of lamb cross grain, making sure to keep whole slices intact with marrow. Place on top of vegetable, bean mixture. Place 1 piece of garlic confit and 2 pieces of tomato confit on top of each portion. Drizzle 2 ounce of lamb "Jus" on each plate and serve piping hot!
ROAST LEG OF LAMB WITH FLAGEOLET BEANS
This is the recipe for Gigot d'Agneau aux Flageolets of Brasserie Balzar in Paris. If you can't find the pretty pale green flageolets, substitute cannellini or great northern beans. The beans need to be soaked overnite so 12 hours soaking time is included in the cooking time.

- For the Beans:.
- Rinse, pick over and soak the flageolet beans in cold water overnight.
- Drain the soaked beans and place them in a large pot with the bouquet garni, carrot and onion.
- Cover with the 3 quarts of cold water, bring to a boil, reduce the heat to low, and simmer for 2 to 2 and 1/2 hours or until the beans are thoroughly cooked.
- Bring the 2 quarts of salted water to a boil, add the green beans, and cook about 12 minutes or until crisp-cooked.
- Drain and refresh under cold running water.
- For the Lamb:.
- Preheat oven to 450°F.
- Poke the leg of lamb with the tip of a knife in various spots and insert slivers of garlic into the slits.
- Make a bed of the onion and carrot in the bottom of a roasting pan and place the lamb on the vegetables and the roasting pan in the oven.
- Reduce heat to 350°F and roast for about one hour and twenty minutes for a rare roast (165°F internal Temperature) up to two hours for a well-done roast (175° to 180°F).
- Remove lamb to a platter and add the white wine and water to the roasting pan, mixing well to scrape up all carmelized juices from the bottom of the pan.
- Strain through a fine sieve and season sauce to taste with salt and pepper.
- To Serve:.
- Reheat the flageolets and season with salt and pepper.
- Reheat the green beans in a skillet with a little butter and season with salt and pepper.
- Carve the lamb, place the slices on a large platter on a bed of the flageolets (or white beans) surrounded by the green beans and douse the meat with some of the sauce.
- Serve additional sauce on the side.

- Cut small slits in the lamb, inserting garlic cloves into the slits. Rub the lamb lightly with olive oil, wrap with plastic wrap and refrigerate several hours or overnight.
- Bring the lamb to room temperature. Preheat the oven to 400 degrees. Season the lamb with salt and pepper, rubbing seasonings into the flesh. Pour a thin film of olive oil into a heatproof roasting pan, gratin dish or ovenproof skillet. Place on top of the stove over medium heat. Brown the lamb, turning carefully once or twice, until golden on all sides, 10 to 15 minutes. Scatter lamb bones around the leg and place the pan in the oven. Roast 20 minutes.
- Scatter the vegetables (except the fava beans) around the lamb and roast 10 minutes longer. Pour the wine and water around the lamb and roast another 10 minutes. Remove the pan from the oven. Transfer the lamb to a plate, wrap loosely in aluminum foil and let rest for 30 to 60 minutes. Strain the pan juices (do not degrease), then season the juices and keep warm.
- While the lamb is roasting, remove the fava beans from their pods, peeling off the thin skin that surrounds each bean. Blanch the beans, uncovered, in a large pot of boiling salted water for three minutes. Drain and rinse under cold water, drain again and set aside.
- Heat the butter in a saucepan over medium-low heat; add the spring onion and cook until softened, two or three minutes. Add the fava beans and cook gently, stirring, for five minutes. Stir in the reserved lamb juices; heat through for a moment. Add the savory leaves and correct seasonings. Place the fava beans in the center of a warm serving platter. Unwrap the lamb and place it carefully over the beans. Carve the lamb into slices at the table and serve with the fava beans and their juices, garnishing each portion with a sprig or two of savory.

- Preheat oven to 400°F. Using small sharp knife, cut 1-inch-deep, 1/2-inch-long slits all over lamb. Insert garlic slices into slits. Rub oil all over lamb. Mix thyme, savory, rosemary, salt and pepper in small bowl. Rub herb mixture all over lamb. Set aside.
- Generously butter large roasting pan. Combine potatoes, onions and stock in large pot (stock will not cover vegetables). Bring to boil. Reduce heat, cover and simmer until potatoes are halfway tender, about 10 minutes. Transfer potato mixture to prepared pan; spread evenly in pan. Sprinkle with salt and pepper. Bake 10 minutes. Reduce oven temperature to 375°F. Place lamb in roasting pan atop potato mixture. Roast until thermometer inserted into thickest part of lamb registers 130°F. for medium-rare, about 1 hour 50 minutes. Remove from oven. Tent with foil and let stand 15 minutes.
- Thinly slice lamb. Arrange lamb on large platter. Surround with potato mixture and any juices from pan and serve.
ROAST RED WINE LAMB WITH ITALIAN BEANS

- Using a sharp knife, cut small slashes all over the lamb, then push a slice of garlic into each. Put half the thyme, 3 tbsp olive oil, wine, lemon zest and a good grinding of black pepper into a large freezer bag. Addthe lamb, tie the bag tightly and refrigerate for at least 4 hrs, preferably overnight.
- Heat oven to 220C/fan 200C/gas 7. Put the rest of the thyme into the bottom of a roasting tin then lift the lamb out of the marinade and sit on top of the thyme. Roast for 20 mins, then toss onions into the pan, drizzle with a little oil, then turn the oven down to 190C/fan 170C/gas 5. Roast for 15 mins/450g for medium. Meanwhile, strain the marinade into a pan, add most of the stock and boil until reduced by two thirds (this will take about 20 mins). Set aside. Gravy can be made ahead or the day before if necessary, as long as the meat has marinated for 4 hrs.
- Once the lamb is ready, take out and rest on a board, wrapped in a tent of foil to keep warm. Set the onions aside in a bowl. Put the roasting tin onto a low heat and add the balsamic vinegar to the tin with a splash more stock and scrape all the meaty bits from the bottom. Tip into the jug with the gravy.
- For the beans, add 2 tbsp oil to the roasting tin. Add the rosemary and tomatoes, and fry for 1 min until the rosemary smells aromatic. Tip in the beans, the red onions and the final splash of stock, then warm through. Season, then stir in the parsley just before serving. Serve on a platter, topped with the lamb.

- Preheat oven to 450 deg. F. Place lamb on rack in roasting pan. Insert thermometer into thickest part of lamb without touching bone. Roast 25 minutes. Remove from oven. Reduce temperature to 325 deg. F.
- In small bowl, mix mustard and next 6 ingredients. Spread over top and sides of lamb. Roast 30 - 35 minutes per pound for rare, 40 - 45 minutes for medium or until thermometer reaches degree of desired doneness: 140 deg for rare, 160 deg for medium, 175 deg. for well-done. - Rub the lamb with the cut side of the garlic cloves.
- Discard garlic.
- In a mortar with pestle, crush fennel, cumin, and coriander seeds.
- (Or, place seeds in a heavy weight plastic bag; use rolling pin to crush the seeds) In a small bowl combine crushed seeds with Olive Oil and salt Using your hands rub the lamb with the crushed seed mixture Place lamb on BBQ over medium heat.
- Cook 15-20 minutes (for medium-rare) turning occasionally.
- Or cook until it reaches your preferred doneness.
- Thickness of butterflied lamb will vary throughout: cut off sections of lamb as they are cooked to your liking and keep warm.
- If desired serve with lemon wedges.
LEG OF LAMB STUFFED WITH WILD MUSHROOMS AND GREENS
Steps:
- Cook Swiss chard in large pot of boiling salted water until just tender, about 5 minutes. Drain. Squeeze chard dry, then finely chop enough to measure 1 1/2 cups. Transfer to large bowl.
- Melt butter with 2 tablespoons oil in large nonstick skillet over medium-high heat. Add wild mushrooms, onion and 1 minced garlic clove and sauté until mushrooms are tender, about 6 minutes. Cool. Transfer to bowl with chard. Add breadcrumbs, cream, 1 tablespoon rosemary, 1 tablespoon thyme, 3/4 teaspoon salt, and 1/2 teaspoon pepper and mix to blend. (Can be prepared 1 day ahead; cover and refrigerate. Before continuing, stir mushroom stuffing in skillet over medium-high heat until just lukewarm.)
- Preheat oven to 425°F. Open butterflied lamb like book and place cut side up on work surface. Sprinkle with salt and pepper. Mix veal and egg into mushroom stuffing. Spread evenly over lamb; press to adhere. Starting at narrow end, roll up lamb tightly, enclosing filling. Fasten ends with poultry skewers. Rub outside of lamb with remaining 2 tablespoons oil, then with remaining 1/2 tablespoon rosemary, and 1/2 tablespoon thyme. Sprinkle with salt and pepper. Tie lamb with kitchen string at 2-inch intervals to hold shape. Using small sharp knife, cut several 1-inch-deep slits in top of lamb, spacing apart; insert 1 garlic slice into each slit. Place lamb on rack in roasting pan.
- Roast lamb to desired doneness or until instant-read thermometer inserted into thickest part of lamb registers 135°F to 140°F for medium-rare, about 1 hour 25 minutes. Remove from oven. Cover with foil and let stand 15 minutes. Remove skewers and string. Cut lamb into 1/2-inch-thick slices. Place on platter.

- Using small sharp knife, make sixteen 1-inch-deep slits all over lamb. Push 1/2 anchovy and 1 garlic quarter into each slit. Place lamb on small rack in center of large rimmed baking sheet. Brush lamb with olive oil. Cover with plastic wrap; chill overnight.
- Combine parsley, 3 whole anchovies, 3 whole garlic cloves, and lemon peel in processor. Add 6 tablespoons olive oil; blend to coarse paste. Add butter; blend until smooth. Season butter with coarse salt and freshly ground pepper. Transfer anchovy-parsley butter to small bowl. DO AHEAD: Can be made 1 day ahead. Cover; chill. Bring to room temperature before using.
- Preheat oven to 450°F. Roast lamb uncovered 30 minutes. Reduce heat to 325°F. Roast lamb until thermometer inserted into thickest part registers 135°F to 140°F, about 1 hour longer. Let lamb rest 30 to 45 minutes.
- Meanwhile, prepare barbecue (medium-high heat). Combine beans and 3 tablespoons oil in large bowl; sprinkle with coarse salt and pepper and toss to coat.
- Place grill basket on barbecue. Spread out beans in basket (reserve bowl). Grill beans until slightly charred, tossing often, 15 to 18 minutes. Return beans to reserved bowl. Toss with 1 1/2 tablespoons oil and 1 1/2 tablespoons lemon juice. Season with coarse salt and pepper.
- Transfer lamb to platter. Serve with grilled beans and anchovy-parsley butter.

- To make the spice mix, combine all of the ingredients together with a large pinch of salt. Slash the lamb shoulder all over with a sharp knife and rub in. If you have the time, marinate for up to 24 hrs, but this is not essential.
- Heat the oven to 150C/130C fan/gas 2. Heat the oil in a large flameproof casserole dish or roasting tin over a medium-high heat, add the onions, carrots and garlic and sizzle for 5 mins until the onions and carrots are softened. Pour over the stock, then bring to the boil. Nestle the lamb in the pan and cover, then transfer to the oven and roast for 2 hrs.
- Uncover and transfer the lamb to a plate using tongs. Stir the beans, peppers and olives through the stock in the pan, sit the lamb back on top and return to the oven, uncovered, for 1 hr 30 mins until the lamb is cooked through. Transfer the lamb to a board and shred using two forks. Stir the parsley through the braised beans before serving.
