GRILLED PORK CHOPS WITH SWEET LEMONGRASS MARINADE

Yield Serves 6 as a main course

Number Of Ingredients 8

3/4 cup sugar
1/4 cup plus 1 tablespoon fish sauce
1 lemongrass stalk, finely chopped
1 1/2 tablespoons minced garlic
2 tablespoons minced shallot
1 Thai chile, stemmed and finely chopped
1/4 teaspoon freshly ground black pepper
3 bone-in center cut pork chops, each about 12 ounces and 1 inch thick

Steps:

  • 1. In a bowl, combine the sugar, fish sauce, lemongrass, garlic, shallot, chile, and black pepper and whisk until the sugar dissolves. Arrange the pork chops in a rimmed dish in a single layer. Pour the marinade over, cover with plastic wrap, and let marinate at room temperature for 1 to 2 hours. (The pork can also be refrigerated overnight. Bring meat to room temperature before grilling).
  • 2. Prepare a hot fire in a charcoal grill (you should be able to hold your hand 1 to 2 inches above the grate for only 2 to 3 seconds). When the coals are ready, push two-thirds of the coals to one-half of the grill, creating a hot zone; spread the remaining one-third on the opposite side of the grill to create a cooler zone.
  • 3. Remove the pork chops from the marinade and discard the marinade. Place the chops on the hottest part of the grill. Let cook for 1 minute, then flip and cook for 1 minute on the second side.
  • 4. Move the chops to the cooler side of the grill and cook, turning once, for about 10 minutes total, until an instant-read thermometer inserted into the thickest part of the chop registers 140°F, raking over coals from the hotter side of the grill if necessary to maintain an even temperature. Spritz any flare-ups with a spray bottle filled with water.
  • 5. Transfer the chops to a large plate, tent with aluminum foil, and let stand for 10 minutes. Cut the meat from the bone and slice the meat across the grain on the diagonal. Transfer the slices and bones to a serving platter and serve.

You can serve these patties simply wrapped in the lettuce leaves here, as a snack, or over vermicelli noodles, as a larger meal. What’s non-negotiable? Serve with plenty of herbs and the funky, salty, sour, sweet dipping sauce.

Patties:
1 pound ground pork
3 large cloves of garlic, minced (about 2 tablespoons)
1/4 cup thinly sliced scallion greens (from 3 to 4 scallions)
1 stalk lemongrass, tough outer layers removed, lower 6 inches of tender bulb, finely chopped
1 tablespoon finely chopped fresh ginger
1 1/2 teaspoons fish sauce (such as nuoc mam or nam pla)
1 1/2 teaspoons sugar
1/2 teaspoon freshly ground black pepper
3/4 teaspoon kosher salt
Sauce and assembly:
1 1/2 tablespoons rice vinegar, plus more to taste
1 tablespoons sugar, plus more to taste
1/4 cup water
1 tablespoon plus 1 teaspoon fish sauce
Pinch of crushed red pepper
12 lettuce leaves, such as Boston lettuce or iceberg
Herb sprigs, such as mint, cilantro and Thai basil

Steps:

  • For the patties:
  • In a large bowl, use your hands to mix together all of the ingredients, then form the mixture into twelve 2-inch patties (about 3/4 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm.
  • Preheat the grill for at least 10 minutes and set it up to grill over moderately high heat. Oil the grates. Grill the patties until brown grill marks form on the bottom, about 4 minutes. Flip the patties, then grill for 3 to 4 minutes longer, until cooked through but still juicy.
  • For the sauce and assembly:
  • In a small mixing bowl, whisk the vinegar with the sugar and water. Add the fish sauce, then taste and season with more vinegar or sugar, depending on your taste.
  • Arrange the lettuce leaves and herb sprigs on a platter. To serve, wrap the pork patties and herb sprigs in lettuce and dip in the sauc

1 lb pork loin
1 1/2 tablespoons brown sugar
2 tablespoons chopped garlic
1 tablespoon chopped shallots or 1 tablespoon onion
1 stalk lemongrass, trimmed and finely chopped (3 tablespoons)
1/4 teaspoon black pepper
1 tablespoon dark soy sauce (black)
1 tablespoon fish sauce
1 tablespoon oil (I prefer sesame oil)

Steps:

  • Cut the pork into pieces, you can leave it in steak sizes piece, or cut it into thin strips, depending on how much you want the marinade to cover.
  • Add sugar, minced garlic, minced shallot, chopped onion, and minced lemongrass to mini chop and blend into a fine texture.
  • Add the pepper, soy sauce, fish sauce, and oil and continue to blend.
  • Cover the pork with the marinade. I suggest letting it marinate for at least a few hours so it can really soak in the flavors.
  • Preheat a grill to medium-high. Grill for 6 to 8 minutes, turning frequently, until cooked through. You want a good char on this, like they do at the Vietnamese restaurants.
  • Remove, allow to sit for a few minutes, and then enjoy!

1/4 cup packed dark brown sugar
3 tablespoons fish sauce
3 tablespoons soy sauce
4 cloves garlic, finely grated
3 stalks lemongrass, tender white parts only, finely chopped
One 1-inch piece ginger, finely grated
1 small shallot, finely chopped
Kosher salt
1 1/2 pounds thin-cut boneless pork chop
1 1/2 cups sugar

4 shallots, very thinly sliced (see Cook's Note)
2 medium carrots, very thinly sliced into rounds
1 small daikon, very thinly sliced into rounds
One 10-inch boule (about 24 ounces)
1/2 cup mayonnaise
2 tablespoons sriracha
Maggi seasoning or soy sauce, for sprinkling
3 Persian cucumbers, thinly sliced lengthwise
1 jalapeño, thinly sliced
1 large beefsteak tomato, thinly sliced
2 packed cups fresh cilantro leaves and tender stems

Steps:

  • For the pork and marinade: Whisk together the oil, brown sugar, fish sauce, soy sauce, garlic, lemongrass, ginger, shallot and 1 teaspoon salt in a large bowl. Add the pork chops and rub to coat. Cover and marinate in the refrigerator for at least 1 hour, up to overnight.
  • For the pickled vegetables: Meanwhile, combine the sugar, 1 tablespoon salt and 1 1/2 cups water in a medium saucepan and bring to a simmer over high heat. Remove from the heat and stir until the sugar and salt are fully dissolved. Add the vinegar and let cool for 10 minutes.
  • Add the shallots, carrots and daikon to the saucepan and fully submerge, using a small plate to weigh them down if necessary, for at least 1 hour. (The pickled vegetables can be made up to a week in advance and refrigerated in an airtight container.)
  • Heat a 2-burner cast-iron grill pan over medium-high heat until evenly hot, about 10 minutes.
  • Remove the pork chops from the marinade and discard any excess. Grill until dark brown, charred in spots and cooked through, about 3 minutes per side. Transfer to a plate.
  • For the sandwich: Slice the boule in half horizontally. Remove some of the fluffy interior from both halves and reserve for breadcrumbs or another use. Spread the cut sides with the mayonnaise and sriracha. Layer the pork chops on the bottom half and sprinkle with the Maggi seasoning. Drain the pickled vegetables and layer them on top of the pork. Top with a layer of cucumbers, then jalapeños, then tomatoes. Fill the top half of the boule with the cilantro, then carefully flip to close the sandwich. Wrap the sandwich tightly in aluminum foil and refrigerate with a cast-iron skillet on top. Add a few jars of whatever is already in your refrigerator to the skillet to help weigh it down. Let sit for at least 2 hours, up to overnight, for the flavors to marry.
  • Unwrap the sandwich and let sit at room temperature for 30 minutes before serving. Cut into 8 wedges.
