Lemongrass Pork Patties With Vietnamese Dipping Sauce image

In Vietnam, little pork patties like this are often grilled over charcoal right on the street and diners sit and eat on (now iconic) little plastic stools. You can serve these patties simply wrapped in the lettuce leaves here, as a snack, or over vermicelli noodles, as a larger meal. What’s non-negotiable? Serve with plenty of herbs and the funky, salty, sour, sweet dipping sauce.

Patties:
1 pound ground pork
3 large cloves of garlic, minced (about 2 tablespoons)
1/4 cup thinly sliced scallion greens (from 3 to 4 scallions)
1 stalk lemongrass, tough outer layers removed, lower 6 inches of tender bulb, finely chopped
1 tablespoon finely chopped fresh ginger
1 1/2 teaspoons fish sauce (such as nuoc mam or nam pla)
1 1/2 teaspoons sugar
1/2 teaspoon freshly ground black pepper
3/4 teaspoon kosher salt
Sauce and assembly:
1 1/2 tablespoons rice vinegar, plus more to taste
1 tablespoons sugar, plus more to taste
1/4 cup water
1 tablespoon plus 1 teaspoon fish sauce
Pinch of crushed red pepper
12 lettuce leaves, such as Boston lettuce or iceberg
Herb sprigs, such as mint, cilantro and Thai basil

Steps:

  • For the patties:
  • In a large bowl, use your hands to mix together all of the ingredients, then form the mixture into twelve 2-inch patties (about 3/4 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm.
  • Preheat the grill for at least 10 minutes and set it up to grill over moderately high heat. Oil the grates. Grill the patties until brown grill marks form on the bottom, about 4 minutes. Flip the patties, then grill for 3 to 4 minutes longer, until cooked through but still juicy.
  • For the sauce and assembly:
  • In a small mixing bowl, whisk the vinegar with the sugar and water. Add the fish sauce, then taste and season with more vinegar or sugar, depending on your taste.
  • Arrange the lettuce leaves and herb sprigs on a platter. To serve, wrap the pork patties and herb sprigs in lettuce and dip in the sauc

3 shallots, thinly sliced
1 1/2 stalks fresh lemongrass, bottom 6 inches only, finely chopped (6 tablespoons)
1 piece (2 inches) peeled fresh ginger, coarsely chopped
1 pound ground pork
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
Vegetable oil, for brushing
1/4 cup plus 2 tablespoons fresh lime juice (about 3 limes)
1/4 cup Asian fish sauce
3 to 6 fresh Thai chiles (depending on desired heat), thinly sliced crosswise
2 heads Boston lettuce (6 medium cup-shaped leaves reserved, remaining leaves shredded crosswise)
1/2 cup fresh cilantro leaves
1/4 cup fresh mint leaves
Cucumber wedges, for serving (optional)

Steps:

  • Process 2 shallots, the lemongrass, and ginger in a food processor until finely ground. Transfer shallot mixture to a medium bowl. Using your hands, gently combine shallot mixture, the pork, salt, and pepper (do not overwork meat). Shape into 6 patties (3 to 4 inches in diameter). Refrigerate, covered, until cold, about 1 hour (or overnight).
  • Preheat grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Brush grill and burgers with oil. Grill burgers, flipping once, until cooked through, about 5 minutes per side.
  • Make salad: Stir together remaining shallot, the lime juice, fish sauce, and chiles in a small bowl. Toss together shredded lettuce, the cilantro, and mint in a medium bowl. Add dressing; toss.
  • Place each burger on a lettuce cup. Top with salad, dividing evenly. Serve with cucumber wedges, if desired.

Steps:

  • For dipping sauce:
  • Mix all ingredients in small bowl. Season sauce to taste with salt. (Can be made 1 day ahead. Cover and chill.)
  • For pork:
  • Mix first 6 ingredients and 2 tablespoons oil in 11x7-inch glass dish. Add pork chops to marinade, turn several times to coat evenly, then crowd together in single layer. Cover and refrigerate at least 30 minutes and up to 2 hours.
  • For salad and noodles:
  • Arrange cucumber, pineapple, bean sprouts, all herbs, and carrot around edge of large platter. (Can be prepared 2 hours ahead. Cover; chill.)
  • Cook noodles in large pot of boiling salted water until just tender and turning white, separating often with tongs, about 4 minutes. Drain. Arrange in center of platter. Mound lettuce leaves in large shallow bowl.
  • Prepare barbecue (medium-high heat). Brush grill rack with remaining 1 tablespoon oil. Grill pork with marinade still clinging to meat until slightly charred and cooked through, 4 to 5 minutes per side, depending on thickness. Transfer pork to cutting board. Let rest 10 minutes.
  • Cut pork crosswise into 1/3-inch-wide strips. Place pork and any juices from board atop noodles. To serve, fill lettuce leaves with pork, noodles, herbs, and vegetables. Serve with sauce for dipping.

1 teaspoon cracked black pepper
2 stalks lemongrass, white part only,sliced very thin

  • In a small bowl, mash garlic with sugar and pepper.

  • Place chops in marinade and refrigerate for 3-6 hours.
  • Remove chops from refrigerator, discard marinade, pat chops dry, and bring up to room temp before cooking.

  • Grill or broil 5-7 minutes per side, or until done to your liking.

1 lb pork loin
1 1/2 tablespoons brown sugar
2 tablespoons chopped garlic
1 tablespoon chopped shallots or 1 tablespoon onion
1 stalk lemongrass, trimmed and finely chopped (3 tablespoons)
1/4 teaspoon black pepper
1 tablespoon dark soy sauce (black)
1 tablespoon fish sauce
1 tablespoon oil (I prefer sesame oil)

Steps:

  • Cut the pork into pieces, you can leave it in steak sizes piece, or cut it into thin strips, depending on how much you want the marinade to cover.
  • Add sugar, minced garlic, minced shallot, chopped onion, and minced lemongrass to mini chop and blend into a fine texture.
  • Add the pepper, soy sauce, fish sauce, and oil and continue to blend.
  • Cover the pork with the marinade. I suggest letting it marinate for at least a few hours so it can really soak in the flavors.
  • Preheat a grill to medium-high. Grill for 6 to 8 minutes, turning frequently, until cooked through. You want a good char on this, like they do at the Vietnamese restaurants.
  • Remove, allow to sit for a few minutes, and then enjoy!

This recipe makes it easy to recreate a classic Vietnamese bánh mì at home. Pork butt is a cut of meat that usually requires a longer cooking time in order to make it tender, but by slicing it thinly, you cut the cooking time down to just a few minutes on a hot grill pan.

2 large carrots, peeled and cut into large matchsticks
12 oz daikon root, peeled and cut into large matchsticks
3 tablespoons kosher salt, plus more to taste
2 tablespoons sugar
¼ cup distilled white vinegar
4 stalks lemongrass
1 small white onion
3 tablespoons soy sauce
3 tablespoons fish sauce
⅓ cup sugar
1 tablespoon dry white wine
1 ½ teaspoons fresh ground black pepper
2 lb pork butt, trimmed of excess fat, cut into 1/2 in (1 1/4 cm) thick slices
2 tablespoons canola oil
4 large French rolls, lightly toasted
½ cup mayonnaise
½ cup pâté
cucumber, sliced
white onion, thinly sliced
jalapeño, sliced
fresh cilantro leaf, and tender stems

Steps:

  • Make the pickled vegetables: Set a large colander in a large bowl. Add the carrots and daikon to the colander. Toss with the salt, then add just enough water to cover the vegetables, about 6 cups (1.4 L). Let sit at room temperature for 30 minutes.
  • Lift the colander out of the soaking liquid, then rinse the vegetables well. Shake the colander a few times to allow any excess water to drain away. Let the vegetables sit at room temperature for 30 minutes to dry out a bit.
  • Add the sugar and vinegar to the bowl with the vegetables. Season to taste with more salt, if needed. Transfer to an airtight container and refrigerate overnight.
  • Make the lemongrass pork: Trim the bottoms and green tops from the lemongrass stalks. Slice the light parts in half lengthwise, then remove any tough outer layers. Mince and transfer to a medium bowl.
  • Finely chop the onion and add to the bowl with the lemongrass.
  • In a large bowl, whisk together the soy sauce, fish sauce, sugar, wine, and pepper.
  • Add the sliced pork butt to the marinade and toss to coat. Cover with plastic wrap and let marinate in the refrigerator for at least 1 hour, up to 4 hours.
  • Heat the canola oil in a large pan over medium-high heat. Add the onion and lemongrass and cook until the onion is tender and beginning to brown, stirring constantly, about 10 minutes. Transfer to a bowl and set aside.
  • Heat a large grill pan over medium-high heat. Working in batches, remove the pork from the marinade, letting any excess liquid to drip off, then grill the pork until lightly charred on both sides and just cooked through, about 2 minutes per side. Transfer to a cutting board and let rest for 10 minutes.
  • Cut the pork into bite-sized pieces and transfer to a large bowl. Add the lemongrass and onion mixture and stir to combine.
  • To assemble, slice the toasted French rolls in half lengthwise almost all the way through, leaving a long end intact. Slather the bottom of the rolls with a generous amount of mayonnaise, then spread on a layer of pâté. Top with the pork mixture, cucumber, sliced onion, jalapeño, the pickled vegetables, and cilantro.
  • Close the sandwiches and serve.

4 stalks lemongrass, thinly sliced
1 medium shallot, chopped
1/4 cup vegetable oil
1 teaspoon dark soy sauce (optional)

1 piece pork loin (about 2 3/4 pounds), fat cap attached

Steps:

  • In a food processor, pulse garlic to chop, then add lemongrass and pulse until finely chopped. Add shallot and pulse to create a fine paste. Pulse in oil, soy and fish sauces, and brown sugar until smooth.
  • Butterfly pork loin: Place pork on a cutting board vertically (with short sides at top and bottom). Using a large, sharp knife, and starting at top, cut lengthwise down the center, almost all the way through but leaving a hinge of about 1/2 inch. Unfold, as if opening a book.
  • With knife blade parallel to cutting board, slice through left side of loin, opening meat as you go, and again leaving a hinge. Repeat with right side. If needed, pound loin to an even thickness with a meat mallet. Season with salt, then rub half of lemongrass paste all over meat. Re-form into original shape, tie with kitchen twine at 2-inch intervals, and wrap in plastic. Refrigerate at least 8 hours and up to 1 day. Bring to room temperature 1 hour before grilling.
  • Prepare grill for direct- and indirect-heat cooking. Remove pork from plastic; place over indirect heat, cover, and cook, maintaining a temperature of about 400°F, about 20 minutes. Brush with remaining lemongrass paste and continue cooking, covered, until a thermometer inserted into thickest part of pork registers 135°F, about 15 minutes.
  • Transfer to direct heat and cook, uncovered, turning frequently, until charred in places and thermometer registers 138 ̊F, about 5 minutes more. Let pork stand about 10 minutes, then thinly slice and serve with pickles, chili sauce, lettuce, and herbs.
