BAKED CANDIED YAMS - SOUL FOOD STYLE

Steps:
- Preheat the oven to 350 F.
- Wash the yams.
- Peel, then chop the yams ( make sure that they are about 1/2 inch thick.)
- Place the yams into a 9x13 bake dish.
- Place the butter into a medium sized pot, then melt it over medium heat.
- Once the butter is melted, sprinkle in the white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove.
- Turn the stove off, mix the ingredients, then add in the vanilla extract.
- Pour the candied mixture over the yams, and try to coat all the yams with the candied mixture.
- Next, cover the bake dish with foil, then bake the yams in the oven for 30 minutes.
- Remove the yams from the oven, and baste them with the candied mixture.
- Cover the yams, and bake them for another 15-20 minutes.
- Remove the yams from the oven, and let them sit for about 10 minutes before serving.
- Enjoy!
CLASSIC CANDIED YAMS RECIPE

Even though Mama makes the same sweet potato casserole every year, she won't be offended if you bring these candied yams once she tries them. Lightly spiced and oh-so-sweet, these candied yams will become a mainstay in your Thanksgiving recipe lineup. Cinnamon, nutmeg, and vanilla combine with sweet potatoes for the most comforting holiday dish you can serve. One of the best parts about this side dish is that it only has 20 minutes of hands-on time, and you can assemble the dish up to 3 days in advance. Make the recipe through step 3, store it covered in the refrigerator, then bake it Thanksgiving Day. With all the other dishes you have to worry about on Thanksgiving, these candied yams will be a breeze. We recommend serving them straight from the oven while the syrup is still hot.

- Preheat oven to 350°F. Layer sweet potato slices in a lightly greased 13- x 9-inch baking dish.
- Melt butter in a small saucepan over medium. Add sugars, stirring until well combined. Stir in cream; cook, stirring often, just until mixture comes to a simmer, 5 to 7 minutes. Remove from heat; stir in vanilla extract, cinnamon, salt, and nutmeg.
- Pour sugar mixture evenly over sweet potatoes, and cover with lightly greased aluminum foil.
- Bake, covered, in preheated oven, about 40 minutes. Uncover and gently stir potato mixture. Bake, uncovered, until potatoes are tender, 25 to 30 more minutes. Transfer potatoes to a serving bowl with a slotted spoon; pour syrup over potatoes. Serve immediately.
CANDIED YAMS WITH MARSHMALLOWS

- Preheat your oven to 400°F (205°C) and butter or spray your 9x13 baking dish with non-stick cooking spray.
- Open and drain your can(s) of canned yams then spread the yams in the bottom of your prepared baking dish.
- Sprinkle a pinch of salt over the yams, then top with butter slices. Crumble the brown sugar over the yams next, followed by a generous layer of mini marshmallows.
- Bake in the center of your oven's middle rack at 400°F (205°C) for 20-25 minutes until the yams are bubbling and the marshmallows are melted and toasted.

MASHED CANDIED YAMS
Although I will always fondly remember my moms yams without marshmallows, I really wanted to try the candied version. After much trial and error, and mashing up a few of my favorite recipes, I created these. I've been told by friends and family that don't even like yams that I must make these every thanksgiving.

- Preheat oven to 350 degrees.
- Roast drained yams on a cookie sheet for 20 minutes until they are mostly dry and very lightly browned.
- Mash yams, butter, salt, nutmeg and cinnamon together until well combined.
- Blend the eggs and cream into yams. Start with 1/4 cup, then increase if needed, depending on how dry your yams are.
- Pour into buttered 9x13 baking dish and cover with foil.
- (Can be refrigerated or frozen at this point. Just defrost in refrigerator, then add approximately 15 minutes additional time to bake.).
- Bake at 350 degrees for 30 minutes, until heated through.
- Remove foil, top with marshmallows and return to oven for 10 minutes more, or until marshmallows are golden brown and puffed.
- Enjoy!

- Line a slow cooker with a slow cooker liner or spray with cooking spray.
- Place yams in the bottom of the slow cooker. Top with water, pineapple juice, brown sugar, butter, vanilla, cinnamon, and nutmeg. Stir to evenly distribute sauce.
- Cook on Low for 2 hours. Stir. Stir cornstarch and water together in a small bowl to make a slurry. Add to slow cooker and stir to incorporate. Cook until yams are fork-tender and sauce has thickened, about 1 more hour.

- Prep the yams. Arrange a rack in the middle of the oven and heat the oven to 350ºF. Peel and cut 3 large yams into 1-inch pieces.
- Partially cook the yams. Place the yams in a large saucepan or pot and cover with water by about 1 inch. Bring to a low boil over medium-high heat and simmer just until they can be pierced with a fork and starting to soften (they will not be fully cooked), about 10 minutes. Be careful not to overcook.
- Transfer to a baking dish. Using a slotted spoon, carefully transfer the yams into an 8x8-inch square baking dish (reserve the cooking water). Spread the yams out in an even layer.
- Combine the water, brown sugar, and vanilla. Transfer 3/4 cup warm reserved cooking water into a measuring cup or medium bowl. Add 1/2 cup packed dark brown sugar and stir to dissolve. Add 1/2 teaspoon vanilla extract and stir to combine.
