2 tablespoons sesame seeds
6 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
1 cup strong brewed coffee
1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 pounds beef top sirloin steak (1 inch thick)

Steps:

  • In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture. , Pour half into a shallow dish; add steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Warm reserved marinade; serve with steak.

Recipe video above. This is a marinade to transform good value steaks by making them juicier, more tender and adding a hint of flavour while not overpowering the flavour of the beef. With this marinade, you won't need a sauce for the beef, though I can never resist some garlic butter!

2 steaks (, economical (Note 1))
1 tsp Dijon mustard
1/2 tsp minced garlic ((1 large garlic clove))
1/2 tsp onion powder ((or sub with garlic powder))
1 tbsp soy sauce ((Note 2))
1 tbsp oil ((I use olive oil, but any oil is fine))
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
Black pepper

Steps:

  • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
  • Place beef in a ziplock bag with Marinade and marinade overnight (12 - 24 hours).
  • Remove from the fridge 30 minutes before cooking to bring to room temperature - key for even cooking of steaks. Shake off excess marinade.
  • Brush BBQ Grills with oil, then heat on high heat until is really hot - you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil - it will heat almost instantly.
  • Add steaks. For 2cm / 3/4" thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes (medium rare 52°C/125°F, chart below for other doneness temps). (Note 3)
  • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.
  • Serve! I couldn't resist garlic butter - see recipe in notes.

1 cup soy sauce (I always use low-sodium OR 1/2 cup soy sauce and 1/2 cup pineapple juice (see note))
2 cloves garlic (finely minced)
2 tablespoons olive oil
1 tablespoon freshly grated ginger (or ginger paste or 1 teaspoon dried ginger)
1 tablespoon onion powder

Steps:

  • Place the meat in a shallow dish or ziploc bag.
  • In a medium bowl or liquid measuring cup, whisk together the lemon juice, soy sauce, garlic, olive oil, ginger, onion powder and pepper.

This is a recipe I got from a friend from Hawaii. Every time I make it for someone who hasn't had it before, they ask for the recipe. I always estimate the quantities, so the measurements listed are approximate. Steak tips are not known nationally. A good butcher will know what flap meat is. Have them cut into long strips, a couple of inches wide.

3/4 cup(s) water
1 bunch(es) chopped scallions, green and white parts
1 tablespoon(s) brown sugar
1 tablespoon(s) honey
1-2 pinch(es) crushed red pepper

1 clove(s) minced garlic or crushed in a garlic press. (preferred)
3 pound(s) steak tips

Steps:

  • Combine soy sauce and water. Use more or less water depending on your taste preferences.
  • Add ginger, scallions, crushed red pepper, honey, brown sugar, and garlic. Mix well.
  • Add steak tips. Cut tips into large chunks. About 1 1/2". Avoid buying steak tips already cut up. They're usually too small. Avoid cutting the pieces too small as they will cook too quickly. If you can't find steak tips, ask your butcher for flap meat. I get mine at Costco in about 3 lb. packages.
  • Marinate tips for 1/2 to 1 hour. Prepare grill for medium to medium hot heat.
  • Grill tips to medium rare. Turning frequently.
