This meat marinade has got to be the easiest, best tasting thing I've ever done to inexpensive cuts of beef, pork, or venison. As a newlywed, we cut all corners, but thanks to this recipe, not on taste!

½ cup olive oil
¼ cup soy sauce
¼ cup Worcestershire sauce
3 tablespoons prepared mustard
⅔ cup lemon juice
salt and pepper to taste
garlic powder to taste
1 dash onion powder

Steps:

  • Use a flat container large enough to hold meat in a single layer. Combine oil, soy sauce, Worcestershire sauce, mustard and lemon juice. Season with garlic powder, onion powder, salt and pepper. Place meat in the marinade and turn to coat both sides.
  • Cover and refrigerate for at least 2 hours, shaking or turning meat occasionally.

If I could use only one marinade for the rest of my life, it would be this one. Redolent with garlic, piquant with fresh lemon juice, and fragrant with extra virgin olive oil, it instantly transports you to the Mediterranean.

1/4 cup fresh lemon juice
1/2 teaspoon hot pepper flakes
1/2 teaspoon cracked black pepper
1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil

Steps:

  • Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.

Steps:

  • Combine all ingredients in a non aluminium covered dish and mix well.
  • Pierce meat to be marinated several times with a fork.
  • Place meat in marinade and cover.
  • Refrigerate overnight, turning several times.

I have used this marinade for pork loin, chicken, and salmon and it is great with all of them! You can increase the quantities of ingredients, but this smaller amount is just perfect for us, since most of the time it's just the two of us! Cook time is marinade time.

2 tablespoons vegetable oil (I use Crisco)
3 tablespoons soy sauce
1 garlic clove, crushed
2 tablespoons brown sugar (I used Sugar Twin brown sugar to keep the calories down)
1/2 teaspoon fresh ginger, minced (fresh is better though) or 1/4 teaspoon dried ginger (fresh is better though)

Steps:

  • Combine all ingredients and whisk well.
  • Add item to be marinated and turn to cover each side.
  • Refrigerate, covered, for several hours, turning item to be marinated several times.
  • Broil or grill marinated item to your taste!
