This is a yummy, flavorful marinade that livens up bland chicken dinners. However, this could also be used on pork chops, fish and turkey! I made this with brown rice and used some of the unused marinade as a sauce to pour over the rice. DELICIOUS!!!

The delicious honey-soy marinade with the garlic makes them special. You could try adding cherry tomatoes or mushrooms. Or use shrimps instead and add pineapple. If you don't grill them too hot you can put the veggies and meat on the same skewers without burning the veggies.

8 tablespoons oil
10 tablespoons honey
10 tablespoons soy sauce
2 teaspoons cumin
2 teaspoons cayenne pepper

4 -6 chicken breasts, cubed
2 garlic cloves, minced
4 onions, cut up
2 red bell peppers, cut up

Steps:

  • In a bowl mix oil, honey, soy sauce, cumin, cayenne and pepper. Set a small amount of the marinade aside for basting later on. Then add the meat, veggies and garlic and let them marinate in the fridge for at least 2 hours. The longer the better.
  • Discard the marinade and put meat and veggies onto skewers. If you use wooden ones, first soak them in lemon water to prevent burning.
  • Grill on the BBQ for 12-15 minutes or until done. Keepturning and basting with the marinade you set aside earlier.

4 garlic cloves
1 small onion, chopped
1 tablespoon paprika
1 teaspoon cinnamon
1 teaspoon turmeric
1/2 teaspoon cardamom

1/4 cup lemon juice
1 cup plain yogurt
18 boneless skinless chicken thighs (or 12 boneless, skinless breasts, cut in 1-inch cubes)
olive oil, as needed

Italian parsley, chopped
lemon wedge
18 bamboo skewers (soaked in water, or metal skewers)

Steps:

  • Puree the garlic, onion, spices, lemon juice and yogurt in the container of a blender or food processor.
  • Place the chicken in a non-aluminum container and cover with the marinade. Turn well to coat evenly. Cover and refrigerate for at least 4 hours and up to 12 hours.
  • Preheat the broiler or make a charcoal fire.
  • Thread the chicken on skewers, brush with a little oil and sprinkle with salt and pepper. Cook about 4 to 5 minutes per side for thigh meat, 3 to 4 minutes per side for breast meat. Sprinkle with parsley and serve with lemon wedges.

1 pound thin-cut boneless skinless chicken breasts
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 clove garlic, minced or pressed through garlic press (or 1/4 teaspoon granulated garlic)
2 slices whole wheat bread (or sub 1 cup panko breadcrumbs)
Kosher salt and black pepper
1 large egg
1/4 cup all-purpose flour
1/4 cup vegetable oil

Steps:

  • Marinate the chicken breasts in the olive oil, balsamic vinegar and garlic in a medium bowl for 15 minutes.
  • Place the bread in a food processor and pulse until medium-size crumbs are formed, about 10 pulses. Season with salt and pepper. Transfer the breadcrumbs (or panko) to a shallow baking dish or rimmed plate and set aside.
  • Whisk the egg in a medium bowl and place the flour on medium plate. Dip a piece of the chicken in the flour, then the egg and then the breadcrumbs, lightly pressing down on the chicken and then turning it over to coat the other side. Set the breaded cutlet on a plate and repeat with the remaining pieces of chicken.
  • Heat the vegetable oil in a large frying pan over medium-high heat. Add the cutlets to the pan and cook until brown on each side and cooked through, about 8 minutes total. Use a spatula to transfer the chicken to a paper-towel-lined plate to blot before serving. Serve with some greens on the side - baby spinach, arugula and chopped endive are all good choices.

2 tablespoons honey
¼ cup rice vinegar
2 teaspoons hot sauce
1 tablespoon kosher salt
1 whole chicken, halved, wing tips separated
kosher salt to taste
½ lemon, cut into wedges, or to taste
1 pinch cayenne pepper

Steps:

  • Combine miso and honey in a bowl. Pour in rice vinegar, followed by hot sauce and salt. Whisk well until mostly smooth. Add chicken halves; cut 3 to 4 slashes into the legs and thighs. Toss chicken in the marinade until well coated. Refrigerate for 2 to 12 hours.
  • Flip chicken over in the bowl. Sprinkle more kosher salt on top.
  • Preheat grill to 350 degrees F (175 degrees C) over indirect heat. Add chicken and cover. Grill for 20 minutes and flip chicken over. Cover and grill for another 20 minutes. Brush the excess marinade on top. Cover again and continue cooking until an instant-read thermometer inserted into the center of each thigh reads 165 degrees F (74 degrees C), 5 to 10 minutes more.
  • Plate chicken alongside lemon wedges sprinkled with cayenne pepper. Squeeze some spicy lemon over the chicken as you cut it up.

1/4 teaspoon dried thyme, crumbled
1/4 teaspoon dried oregano, crumbled
2 skinless boneless whole chicken breasts (about 1 1/4 pounds), halved
vegetable-oil cooking spray
1 small onion, sliced thin
Accompaniment: cooked couscous if desired

Steps:

  • In a ceramic or glass container stir together soy sauce, 1/4 cup water, lime juice, Sherry, garlic, gingerroot, curry powder, thyme, and oregano and add chicken. Marinate chicken, covered and chilled, turning occasionally, at least 1 hour and up to 1 day.
  • Remove chicken from marinade and pat dry with paper towel. Reserve marinade.
  • Coat a large nonstick skillet with cooking spray Heat skillet over moderately high heat until hot but not smoking and cook chicken 1 minutes on each side, or until browned. Transfer chicken to a plate. To skillet add 2 tablespoons water and cook, stirring with a wooden spoon and scraping up brown bits, 30 seconds. Add onion and cook over moderate heat, stirring occasionally, until softened. Add chicken, reserved marinade and remaining 1/4 cup water and simmer, covered basting chicken frequently, 10 minutes, or until chicken is cooked through. Serve chicken over couscous if desired.

2 tablespoons fresh lemon juice
1/2 teaspoon cumin
1/2 teaspoon dried coriander

1 (15 ounce) can chickpeas, drained and rinsed
1 (14 ounce) can diced cut tomatoes
1/4 cup chopped fresh cilantro

Steps:

  • Preheat oven to 400 degrees.
  • Place the chicken breasts in a 13 x 9 inch baking dish that has been sprayed with cooking spray.
  • Sprinkle the chicken with the fresh lemon juice, combine spices and sprinkle over chicken, top with slivers of garlic.
  • Pour the rinsed chickpeas over and then the tomatoes. Place dish in preheated oven and cook for 25 minutes.

1 large onion, finely chopped (Vidalia is good)
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1/4 teaspoon red pepper flakes (more or less to taste)
1 1/2 teaspoons kosher salt
fresh ground black pepper
3 small garlic cloves, minced
1/4 cup flat leaf parsley, chopped
1 lb lean ground chicken
1/4 cup plain yogurt (or sour cream)
3 tablespoons molasses, for brushing (or use pomegranate molasses, or try a spicy honey mustard)
4 whole wheat hamburger buns, toasted
2 tablespoons mayonnaise (optional)
1 tomatoes, thinly sliced
1 English cucumber, thinly sliced
1 small red onion, sliced
lettuce
cilantro, chopped (optional)

Steps:

  • Heat the olive oil in a medium skillet.
  • Add the onion, cinnamon, coriander, and pepper flakes to the skillet, and season with salt and pepper.
  • Cook until the onions are tender, approximately 5 minutes.
  • Stir in the garlic and parsley and cook about 1 minute more.
  • Move to a big bowl and let cool a little.
  • Stir in the chicken and yogurt and mix thoroughly.
  • Season with salt and pepper.
  • Shape into 4 1/2" round patties.
  • Cook in a nonstick skillet over medium heat until nicely browned and cooked, about 5 minutes on each side.
  • Brush burgers with the molasses and let rest for 5 minutes.

¼ cup olive oil
¼ cup freshly squeezed lemon juice
1 clove garlic, minced

Steps:

  • Season chicken breasts with salt and pepper on all sides and place in a bowl or lidded container. Combine olive oil, lemon juice, garlic, oregano, and thyme in a small bowl and pour marinade over chicken breasts. Marinate for 10 minutes at room temperature.
  • Preheat oven to 400 degrees F (200 degrees C). Set one oven rack about 6 inches from the heat source.
