1 cup hot water
1 1/2 cups brown sugar (lightly packed (240g))
3/4 cup 0% plain Greek yogurt ((155g))
1/2 cup unsweetened applesauce ((115g))
1/4 cup canola oil ((50g))
3 eggs
1 tablespoon vanilla
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2 cups whole wheat flour ((260g))
3 cups fresh or frozen blueberries ((300g))

Steps:

  • Preheat oven to 350 degrees F.
  • Combine oats and hot water in a medium bowl and let sit for 5-10 minutes while you prepare the rest of the batter.
  • In a large bowl, whisk brown sugar, yogurt, applesauce, oil, eggs and vanilla together until smooth.
  • Add baking powder, baking soda, cinnamon and salt and whisk until smooth.
  • Add soaked oats and stir until evenly distributed.
  • Add flour and berries and stir just until combined -- don't overmix!
  • Lightly grease a muffin pan and fill 24 muffin cups 3/4 full and bake for 20-25 minutes until a toothpick inserted in the center comes out clean.

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

1 1/4 cups flour

3/4 cup fresh blueberries or 3/4 cup frozen blueberries

½ cup (120g) plain nonfat Greek yogurt
1 cup + 2 tbsp (270mL) nonfat milk, divided
2 tsp vanilla extract
2 cups (240g) white whole wheat flour or gluten-free* flour (measured like this)
2 tsp ground cinnamon
1 ½ tsp baking powder
¾ tsp baking soda
½ tsp salt
½ tbsp (7g) unsalted butter or coconut oil, melted and cooled slightly
2 large egg whites, room temperature
1 ½ tsp vanilla stevia
1 ½ cups (210g) fresh blueberries

  • Preheat the oven to 350°F, and coat 12 muffin cups with nonstick cooking spray. (If using liners, then line 12 muffins cups with liners and coat them with cooking spray.)
  • In a medium bowl, stir together the oats, Greek yogurt 6 tablespoons of milk, and vanilla extract. In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. 2 cups sliced bananas ((about 2 medium/large bananas; use very ripe bananas))
¼ cup coconut oil, melted and slightly cooled ( (or canola oil or butter))
1 teaspoon vanilla
¼ cup honey or maple syrup

Steps:

  • Preheat the oven to 350 degrees F and coat well with nonstick spray. Set aside.

2 tbsp honey

1 tsp baking powder
1/2 tsp baking soda

1 cup fresh blueberries

1 cup (240ml) milk
1 cup (80g) old-fashioned whole rolled oats
1 and 1/4 cups (156g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (115g) unsalted butter, melted and slightly cooled
1/2 cup (120ml) honey
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 cup (190g) fresh or frozen blueberries (see note if using frozen)

Steps:

  • Combine milk and oats. Set aside for 20 minutes so the oats puff up and soak up some moisture. This is crucial to the recipe! (I usually melt the butter now so it has a few minutes to cool.) Don't do this the night before as that's too long for soaking. If you find the oats haven't soaked up any moisture after 20 minutes, give it a stir and wait 10 more minutes.
  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners.
  • Whisk the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl until combined. Set aside. Whisk the melted butter, honey, egg, and vanilla extract together in a medium bowl until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the soaked oats (milk included, do not drain) and blueberries. Fold everything together gently just until combined.
  • Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.

Number Of Ingredients 10

1 cup quick-cooking oats
1 cup buttermilk
1 cup all-purpose flour
3/4 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, beaten
1/4 cup butter, melted
1 cup fresh blueberries

Steps:

  • In a bowl, combine oats and milk; let stand for 5 minutes. , In another bowl, combine the flour, brown sugar, baking powder, baking soda and salt. Stir the egg and butter into oat mixture; add to dry ingredients. Stir just until moistened. Gently fold in blueberries. , Fill well-greased muffin cups 3/4 full. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean.

1 cup sour milk (cup milk & 1 TB vinegar)
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup brown sugar
1 egg, beaten
1/4 cup margarine, melted
1 cup fresh blueberries

Steps:

  • Preheat oven to 400°F Grease muffins tins.
  • In a small bowl, combine oats and sour milk; let stand.
  • Combine the flour, baking powder, soda and brown sugar; stir well to blend.
  • Add eggs and margarine to oat mixture. Mix well. Add wet ingredients at once to dry.
  • Mix carefully, just until combined.
  • Gently fold in berries. Fill muffin tins 3/4 full.
  • Bake 15-20 minutes.

  • Combine oats, flour, sugar, baking powder, and salt. Mix in milk, egg, and oil; mix just until dry ingredients are moistened. Fold in blueberries. Fill greased muffin cups 2/3 full with batter.
  • Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes.
