VANILLA SPICE OATMEAL



Vanilla Spice Oatmeal image

3 1/2 cups water
1/4 teaspoon salt, optional
2 cups old-fashioned oats
1/2 cup raisins
1/2 cup walnuts, coarsely chopped, optional
1/4 teaspoon vanilla extract
Pinch nutmeg
2 tablespoons dark brown sugar, plus more, to taste
1 cup lowfat milk, divided
1/8 teaspoon ground cinnamon

Steps:

  • In a medium saucepan, bring the water and salt to a boil. Stir in the oats and raisins, reduce the heat to low and simmer, stirring occasionally, uncovered, for 5 minutes.
  • In the meantime, place nuts, if using, in a dry skillet over a medium-high flame, and toast, stirring frequently, until golden and fragrant, about 5 minutes. Set aside.
  • When the oats are cooked remove pan from the flame and stir in the vanilla and nutmeg. Swirl in the brown sugar and place the oatmeal in serving bowls. Pour 1/4 cup of milk on top of each bowl, and top with toasted nuts and a sprinkle of cinnamon.
  • Note: For a quicker version using quick cooking or plain instant oatmeal: Cook the oatmeal according to the directions on the package. Stir raisins, brown sugar, and nutmeg into the cooked oatmeal. Top with milk, nuts (toasted or un-toasted) and cinnamon.

2 teaspoons cinnamon
2 teaspoons allspice
1 1/2 teaspoons cloves
1 1/2 teaspoons ginger
1/8 teaspoon salt
1/2 teaspoon finely ground black pepper
1/2 teaspoon baking soda
8 ounces unsalted butter
1 teaspoon vanilla
1 cup granulated sugar
1 cup light brown sugar, firmly packed
2 eggs
3 cups quick-cooking rolled oats

Steps:

  • Sift flour with spices, salt and baking soda. Set aside.
  • In large bowl of electric mixer, cream butter. Add vanilla and both sugars, and beat well. Add eggs and beat to mix.
  • On low speed, beat in sifted dry ingredients.
  • Stir in oats with spoon.
  • Line two cookie sheets with aluminum foil, shiny side down. Measure out 1/4 cup of batter for each cookie and place 5 to 6 cookies on each sheet.
  • Bake at 375 degrees for 12 to 15 minutes on racks that have been placed on the second and third rungs in the oven. Reverse sheets once during baking. The cookies should still be quite soft when they are done. Cool on rack before removing from sheet.

This classic meatloaf with oatmeal recipe is an easy dinner recipe that is quick to assemble. It tastes just like grandma used to make.

For the Meatloaf:
2 pounds ground beef
3/4 cup rolled oats (quick-cooking, uncooked)
1 cup onion (finely chopped)
3/4 cup milk
2 eggs (slightly beaten)
1 tablespoon Worcestershire sauce
2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
For the Glaze:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon yellow mustard

Steps:

  • Gather the ingredients. Preheat oven to 350 F.
  • In a large bowl combine the ground beef, quick-cooking rolled oats, onion, milk, eggs, Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Use your hands to combine. Do not overwork.
  • Transfer to a 9 x 5-inch loaf pan. Smooth out the surface at the top.
  • In a small bowl, combine the ketchup, brown sugar, and mustard until smooth.
  • Spoon half of the glaze over the meatloaf.
  • Bake (uncovered) for about 1 hour.
  • Remove the meatloaf from the oven and tilt the pan to drain off the grease. Spread the remaining glaze on top and return to the oven for 10 more minutes, or until meatloaf reaches an internal temperature of 160 F.
  • Let stand on a wire rack for 15 minutes before slicing and serving.
  • Slice, serve, and enjoy!

If you can't find maple sugar, it's okay to swap in equal parts light brown sugar.

4 cups quick-cooking oats
1 cup roasted salted pepitas
1 cup raisins
1 cup raw walnuts, chopped
1/2 cup unsalted roasted sunflower seeds
1/2 cup maple sugar
1 tablespoon ground cinnamon
1 tablespoon sea salt
1/2 teaspoon ground cardamom
Fresh berries, for serving

Steps:

  • Combine the oats, pepitas, raisins, walnuts, sunflower seeds, maple sugar, cinnamon, salt and cardamom in an airtight container. Store at room temperature for up to 3 months.
  • To serve, stir to make sure all the ingredients are evenly distributed (some tend to fall to the bottom). Combine 1/2 cup instant oatmeal mix with 1 cup water or milk in a medium microwave-safe bowl. Microwave on high until the mixture is bubbling and much of the liquid is absorbed, about 3 minutes. Stir, then top with fresh berries.
