ORANGE SCONES WITH ORANGE GLAZE
Found this recipe online and tweaked it a little to make it "more orangey." It's very easy and so good! The scones come out with a wonderful texture.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and grease with cooking spray.
- Mix flour, 1 tablespoon sugar, baking soda, baking powder, and salt. Cut in butter using a pastry cutter. Mix in orange zest.
- Make a well in the center of the flour mixture. Whisk orange juice, egg, and vinegar together and pour into the flour mixture. Stir until moistened and sticky.
- Transfer dough to a floured surface and knead gently about 10 times. Pat into a 6x8-inch rectangle. Cut rectangle into 4 squares; cut each square diagonally into 8 triangles. Arrange scones on the prepared baking sheet. Brush tops with milk and sprinkle with remaining 1 tablespoon sugar.
- Bake in the preheated oven until golden brown, about 10 minutes.
- Make the orange glaze while the scones are baking. Mix 1/2 cup plus 2 tablespoons confectioners' sugar and orange juice until thick and smooth; glaze should drip slowly off the back of a spoon. Mix in orange zest.
- Dunk warm scones in the glaze to fully coat the tops. Let stand for 5 minutes before serving.

- Sift flour. Bring water, orange juice, lemon zest and juice, butter, rose water, salt, and 2 tablespoons sugar to a boil in a heavy medium saucepan. Add all-purpose flour all at once and stir vigorously with a wooden spoon 3 or 4 times. Remove from heat and stir until all of flour is incorporated and dough forms a ball. Cool 5 minutes.
- Add eggs 1 at a time, beating well after each addition.
- Preheat oven to 200°F with rack in middle.
- Heat 2 inches oil to 360°F in a wide 4-quart pot over medium- high heat.
- Meanwhile, stir together almond flour, cinnamon, and remaining 1/4 cup sugar in a shallow bowl.
- Working in batches of 6, gently drop tablespoons of dough into oil and fry, turning once, until puffed and golden-brown, 3 to 4 minutes per batch. Transfer with a slotted spoon to paper towels to drain briefly, then keep warm in a shallow baking pan in oven. Return oil to 360°F between batches.
- Roll warm beignets in almond sugar and serve immediately.

- Preheat oven to 400 degrees. In a bowl whisk together flour sugar baking powder salt and orange zest mix in the cold butter into the flour mixture until it looks like a crumbly dough . In a separate bowl mix half and half with eggs Add to the dry ingredients until just combined then fold in the cranberries .
- Place onto a floured surface and shape into a 9 inch round.
- use as little flour as you can to shape it. Cut it with a pizza cutter into 8 equal pieces and place on a baking sheet bake for 17 minutes.
- When they are baking whisk together 1/2 cup powdered sugar and 4 teaspoons of orange juice. Drizzle over the scones when they come out of the oven .

These are super easy scones. You can prepare the dry ingredient/butter mix ahead of time and store in a zip-top bag. The orange zest (or any citrus you like) is really pungent and wonderful.

- Preheat oven to 450°F.
- Combine flours, sugar, salt, baking powder, baking soda, and zest in a medium bowl. Cut in cold butter.
- In a small bowl, combine buttermilk, 1 egg, 1 egg yolk, and vanilla.
- Form a well in the dry ingredients, add wet ingredients. Combine, but do NOT overmix.
- Form into a 6x9" rectangle, cut in half lengthwise and thirds widthwise, cut each square in half diagonally. Place on baking sheet (preferably lined with a silicone mat or parchment).
- Beat remaining egg white with 1 tsp water. Brush egg wash on scones, dust with coarse sugar if desired.
- Bake about 12 minutes or until golden brown.
- Freeze leftovers immediately.
