CLASSIC CANDIED YAMS

With just the right amount of sweetness and spice, these sweet potatoes are cooked on the stovetop until they are tender, freeing up valuable oven space at your holiday meal.

4 pounds sweet potatoes (about 8 medium), peeled
6 tablespoons unsalted butter
1/2 cup firmly-packed dark brown sugar
1/3 cup granulated sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt, plus more to taste
1/4 cup pecans

Steps:

  • Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
  • Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.
  • Cover and cook the potatoes, stirring occasionally and gently to avoid breaking them up, until they are just tender when pierced with the tip of a knife and the sauce resembles a thin syrup, 25 to 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and toast until dark brown with a light scent of roasted nuts, about 8 minutes. Season the pecans with some salt while warm, let them cool completely and coarsely chop.
  • Transfer the potatoes with their sauce to a large serving platter and sprinkle the pecans over the top.

4 large yams
8 tablespoons (1 stick) unsalted butter
2 cups packed dark brown sugar
1/2 cup canned pineapple juice
2 1/2 to 3 teaspoons ground cinnamon
1 1/2 teaspoons pure vanilla extract
Pinch of ground cloves
1/2 cup strawberry preserves

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Taste the mixture to make sure it's sweet to your liking and pour over the yams. Spread the strawberry preserves on top of the yams.
  • Cover the dish with aluminum foil and bake until the yams are semi-tender, about 40 minutes. Remove the foil and bake until the yams are caramelized, 20 to 25 minutes more.
  • Plate and serve hot. And don't forget to pour the sauce from the baking dish on top!

1/2 cup butter
1/4 cup water

Steps:

  • Start by preheating your oven to 450 degrees F.
  • Next, toss and coat the cut sweet potatoes in vegetable oil then transfer them evenly on a baking sheet.
  • Now, you want to place them in the oven and allow them to bake for about 30 minutes or until tender soft and caramelized.
  • Make sure to keep an eye on your yams as they are baking, as you want to take them out of the oven as soon as they turn all dark to prevent them from burning.
  • Place a saucepan over medium-high heat then lightly coat it with cooking spray and add in the butter, brown sugar, corn syrup, and water.
  • You want to continue stirring until the sugar will fully dissolve, when it starts to boil reduce the heat and simmer for about 5 minutes.
  • When you start seeing a thick and lightly bubbly mixture take off the pan from the heat.
  • Finally, when your yams are ready, pour the sauce and evenly coat before serving.

1 long strip orange peel, sliced
1/3 cup bourbon -
1/4 teaspoon freshly grated nutmeg -
1 3 to 4 inch cinnamon stick -
4 tablespoons butter -
1 cup brown sugar -
3 cups water -
4 large sweet potatoes -

Steps:

  • Wash and dry sweet potatoes and bake at 400 °F for one hour, until potatoes are soft to the touch. Remove from the oven and let cool slightly then remove skin from potatoes.
  • Reduce oven temperature to 350 °F. While the potatoes are baking, combine remaining ingredients in a saucepan. Bring to a boil, then reduce the heat and simmer for 30 to 45 minutes until sauce is slightly thickened.
  • Slice the potatoes 1/2-inch thick into a medium casserole dish. Pour syrup over them and return to the oven and bake for approximately 30 minutes.
  • Tip: To make this dish faster, bake potatoes the night before, leave skin on and throw in the refrigerator until ready to use.

2 cups water
1 cup sugar
1 cup dark brown sugar, packed
2/3 orange, unpeeled, sliced, seeded (stem slice discarded)
2/3 lemon, unpeeled, sliced, seeded (stem slice discarded)
2 cinnamon sticks
1 tablespoon vanilla extract
1/2 teaspoon mace

Steps:

  • Heat the butter in a 4-quart saucepan over high heat; when about half melted , add the remaining ingredients.
  • Stir, cover, and cook over high heat until mixture comes to a strong boil, about 10 minutes.
  • Stir then reduce heat and simmer covered 20 minutes.
  • Uncover and continue cooking until sweet potatoes are very tender, about 20 minutes, stirring occasionally.
  • Remove from heat and discard cinnamon sticks.
  • Orange and lemon slices can also be discarded if desired.
  • Serve immediately, undrained.
  • Can also be mashed.

1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 cup granulated sugar
1/4 cup brown sugar
1 tablespoon pure vanilla extract, not imitation

Steps:

  • Preheat the oven to 350 F.
  • Wash the yams.
  • Peel, then chop the yams ( make sure that they are about ½ inch thick.
  • Place the yams into a 9x13 bake dish.
  • Place the butter into a medium sized pot, then melt it over medium heat.
  • Once the butter is melted, sprinkle in the white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove.
  • Turn the stove off, mix the ingredients, then add in the vanilla extract.
  • Next, cover the bake dish with foil, then bake the yams in the oven for 30 minutes.
  • Pour the candied mixture over the yams, and try to coat all the yams with the candied mixture.
  • Remove the yams from the oven, and baste them with the candied mixture.
  • Cover the yams, and bake them for another 15-20 minutes.
  • Remove the yams from the oven, and let them sit for about 10 minutes before serving.

1/2 cup margarine, melted
2 teaspoons cinnamon
2 teaspoons ginger
2 teaspoons nutmeg
1/4 cup brown sugar
1/2 cup honey
1 can pineapple bits
1 cup pecans
to taste miniature marshmallow

Steps:

  • Put mashed yams in casserole. Mix together margarine, cinnamon, ginger, nutmeg, brown sugar and honey.
  • Mix in yams with pineapple bits and pecans.
  • Top with miniature marshmallows.
  • Bake at 325 degrees until heated through and marshmallows are bubbly.
  • Note: You may want to cut back on the ginger, I only used 1 teaspoon.
