Great Asian style marinade with a kick. Works well with chicken or beef.

½ cup hot water
½ cup creamy peanut butter
¼ cup chile paste
¼ cup soy sauce
2 tablespoons vegetable oil
2 tablespoons white vinegar
4 cloves garlic, minced
2 teaspoons grated fresh ginger root
¼ teaspoon ground red pepper
3 pounds skinless, boneless chicken breast halves - cut into bite-size pieces

Steps:

  • In a large bowl, gradually stir hot water into peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger and ground red pepper. Place chicken in marinade, and turn to coat evenly. Cover, and refrigerate overnight, turning occasionally.
  • Preheat an outdoor grill for medium heat, and lightly oil grate. Thread chicken pieces onto skewers. Discard marinade.
  • Grill chicken 8 to 10 minutes per side, or until no longer pink, and juices run clear.

Spicy Thai Noodles with Ginger Peanut Dressing image

Kosher salt
1 pound udon noodles or linguine pasta
2 teaspoons sesame oil
1/4 cup light soy sauce
2 teaspoons grated fresh ginger
2 cloves garlic, minced
4 Thai chiles, halved lengthwise, and seeds removed
4 chicken breasts, cut into bite-size cubes
1/2 cup creamy peanut butter
1 tablespoon grated fresh ginger
2 cloves garlic, minced
3 tablespoons sugar
1/4 cup rice vinegar
3 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon chile oil
2 tablespoons grapeseed oil
1 orange, rind removed, flesh segmented
2 Thai chiles diced, seeds removed
1 small bunch fresh cilantro, chopped
1 bunch spring onions, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Cook the noodles according to the package directions for al dente. Drain the noodles, then transfer to a large bowl and toss with the sesame oil. Set the noodles aside.
  • In a medium mixing bowl, whisk together the soy sauce, ginger, garlic, and chiles. Add the cubed chicken to the marinade, toss gently to coat the chicken. Cover the bowl and refrigerate for 30 minutes.
  • For the dressing: In a small saucepan, whisk together the peanut butter, ginger, garlic, sugar, rice vinegar, soy sauce, sesame oil, and chile oil, and bring to a simmer over medium-low heat.
  • Pour the warm dressing over the cooked noodles, and toss to coat evenly. Set the noodles aside until ready to serve.
  • In a heavy skillet, heat the grapeseed oil over medium-high heat, when the skillet just begins to smoke, add the chicken cubes and sear on all sides until they are browned. Saute the chicken cubes over medium heat until they are fully cooked, about 5 minutes.
  • Thread the chicken pieces and orange segments alternately on the skewers.
  • To serve the skewers, toss the noodles with the diced chile peppers and chopped cilantro. Sprinkle the chicken skewers with the sliced green onions. Serve the noodles with the chicken skewers and enjoy hot or cold!

1/2 cup freshly squeezed orange juice
1 orange, zested (about 2 teaspoons)
1/2 cup smooth natural peanut butter
2 tablespoons packed dark brown sugar
1/4 cup light soy sauce
2 teaspoons peeled grated fresh ginger
4 medium cloves garlic, minced
1 teaspoon red pepper flakes
1 1/2 pounds boneless chicken thighs, cut into 1-inch wide strips
Oil, for grill grate
Skewers (soaked in water for 20 minutes if wooden)
1/4 cup roughly chopped fresh cilantro leaves, for serving
1/3 cup roughly chopped roasted, salted peanuts, for serving

Steps:

  • In a large bowl, whisk together the orange juice, orange zest, peanut butter, sugar, soy, ginger, garlic, and red pepper flakes until smooth and evenly combined. Reserve 1/3 cup of the mixture to serve as a dipping sauce. Put the marinade in a resalable plastic bag, add the chicken, seal the bag and turn to coat evenly. Refrigerate and allow to marinate for 30 minutes to 8 hours.
  • Heat a grill to medium heat, (350 degrees F), and rub the grate with a towel dipped in oil. Thread 1 to 2 chicken tenders on each skewer. Grill the chicken until thoroughly cooked, about 2 to 3 minutes per side. Transfer to a serving platter and sprinkle with cilantro and peanuts. Serve hot or at room temperature with the reserved peanut sauce.

1 cup fresh raw peanuts
2 cups peanut, vegetable or corn oil
1/2 cup warm, freshly made tea
1 tablespoon finely chopped fresh ginger
4 large garlic cloves, peeled and crushed
1 small hot fresh green chili peppers, trimmed, seeded and veins removed
Salt to taste if desired
1 1/2 teaspoons sugar
1 tablespoon soy sauce, preferably dark soy sauce, available in Oriental markets
1/4 cup fresh lemon juice
2 tablespoons Oriental sesame oil
1 tablespoon hot chili oil, available in Oriental markets
Fresh coriander sprigs for garnish

Steps:

  • Drop the peanuts into hot oil and cook until golden brown. Take care not to overcook. They will continue to cook once they are removed from the heat. Drain the nuts and save the oil, if desired, for another use.
  • Put the peanuts in container of a food processor or electric blender and blend to a coarse paste. Add tea and continue to blend. Add ginger, garlic and chili peppers and blend.
  • Add salt, sugar, soy sauce, lemon juice, sesame oil and chili oil. Blend to a smooth consistency.
  • Scrape the sauce into a serving dish and garnish with fresh coriander sprigs. Serve with hot or cold cooked noodles, the sauce to be added according to individual taste.

There are a million versions of spicy peanut sauce - this is just another take on an old (?) favourite. It uses vinegar which I like because I don't always have citrus on hand. My 3 year old loves this (go figure), it's just the right amount of spice for him - so of course you might want to beef up the chili. I also went pretty light on the sesame oil to try and save some calories...all in all it's pretty tasty and super easy! In my photo I had stir-fried it with some buckwheat noodes, bok choi, broccoli and some other veg. Note that it only makes 1/2 a cup, about enough for 2.

1 tablespoon natural-style peanut butter
1 tablespoon soy sauce (I use braggs)
2 tablespoons apple cider vinegar (any vinegar should work)
1 teaspoon chili oil
1 teaspoon sesame oil
1 teaspoon fresh ginger, minced (about a 1-inch cube)
1 garlic clove, minced
1/2 teaspoon dry mustard (powder)
1 teaspoon honey
water (about 2 tbsp)
2 teaspoons cornstarch

Steps:

  • Use a glass measuring cup and mix everything together, adding enough water to get you to 1/2 cup (should be 2 tbsp).
  • Add to stir-fried noodles, veg, tofu etc. Add extra soy/braggs and/or water if things get too sticky.
  • Garnish with cilantro, sesame seeds or gomashio.

4 lbs top sirloin steaks, thinly sliced and threaded onto wooden skewers
6 tablespoons soy sauce
6 tablespoons sesame oil
2 tablespoons rice wine vinegar
4 tablespoons grated fresh ginger
2 tablespoons minced garlic
2 tablespoons olive oil
2 tablespoons sesame oil
1 tablespoon grated fresh ginger
2 tablespoons crushed red pepper flakes
1 bunch green onion, thinly sliced
1 lb blanched unsalted peanuts
1/4 cup soy sauce
1 tablespoon chopped cilantro
salt & freshly ground black pepper

Steps:

  • Combine marinade ingredients and spread evenly over beef skewers.
  • Marinate in refrigerator at least 2 hours.
  • Heat olive and sesame oils in a saucepan.
  • Add ginger,garlic,green onions and cook, covered, over low heat for 30 seconds.
  • Add the crushed red chiles and cook 30 seconds more (make sure heat is very low as chili flakes can burn easily).
  • Add peanuts and soy sauce and add just enough water to cover the peanuts.
  • Bring to a boil and then reduce heat to a simmer for 30 minutes.
  • Remove from heat and cool slightly.
  • Puree in batches in a blender until smooth.
  • Stir in chopped cilantro and season with salt and pepper to taste.
  • Grill the serloin skewers 2-3 minutes per side (or to desired doneness).
  • Serve skewers with dipping sauce and enjoy!
