We like to use a combination of McIntosh apples and deep-red varieties, such as Empire or Cortland. The former bring classic flavor and the latter a beautiful color.

- Combine apples, lemon juice, and 1 1/2 cups water in a large pot. Cover and bring to a boil over high heat, stirring occasionally. Reduce heat to medium, partially cover, and cook, stirring occasionally, until apples are completely soft, about 40 minutes.
- Pass apples through a medium-mesh sieve or a food mill fitted with the fine disk to remove skins. Applesauce can be stored in refrigerator up to 1 week, or in freezer up to 3 months. To can applesauce, follow these instructions.

- Wash apples thoroughly.
- Prepare a large bowl filled with cold water.
- Cut apples into cubes (keeping the skin but removing cores).
- As you cut the apples, throw them in cold water so they don't brown too much.
- When you've finished cutting, remove from water and place apples in a heavy-bottomed pot, add a tiny bit of water so that there is about 1cm covering the bottom.
- Cover and cook on LOW heat until apples are completely cooked.
- Stir once in a while.
- Working by the spoonful, press apples through a potato ricer or a strainer; discard skins between batches.
- If desired (this shouldn't be necessary), cream sauce in blender or food processor.
- Cool before refrigerating.
- ***This gives a very thick applesauce, to thin out, add more water during cooking.***.

- Peel the apples, reserving the peels of 6 of them.
- Quarter and core the apples.
- Combine all ingredients in a large saucepan; bring to a boil then reduce heat.
- Simmer mixture until apples are soft and you can mash them down into applesauce, about 45 minutes to 1 hour.
- Remove from heat and cool.
- Remove peels from the applesauce and discard them.
- Mash applesauce a bit more if you wish (I like mine a bit chunky), then refrigerate until ready to serve.
- If you like, you can make extra applesauce and spoon into sterilized pint jars, seal and process in a boiling water bath for 15 minutes.

- Peel, core and slice apples. (Since the peel is the healthiest part I said to myself you're the boss, applesauce, and went ahead and left on the peel but for texture/presentation like store-bought applesauce you may want to peel your apples.).
- Place apples in your crockpot and pour the Crème de cassis over them.
- Cook on low for 5-6 hours or on high for 2-3 hours, or until apples are very tender. Your home will smell WONDERFUL during this time.
- For a chunkier sauce (my recommendation), mash apples with a potato masher. You can do this right in the hot crockpot. For a smooth sauce like store-bought versions, puree mixture in a food processor or blender.
- Chill, tightly covered, until ready to serve.
