12 ounces tiny new potatoes
8 ounces pork tenderloin
2 teaspoons olive oil
8 ounces whole onion or 7 ounces ready-cut julienned onion (1 2/3 cups)
16 ounces whole green and red peppers or 14 ounces ready-cut julienned peppers (4 cups)
2 tablespoons balsamic vinegar
1/4 teaspoon salt

Steps:

  • Scrub potatoes, but do not peel. Cover with water, and boil in a covered pot, about 20 minutes.
  • Cut pork into 4 equal pieces. Heat one teaspoon of the oil in a nonstick pan, and brown the pork on all sides.
  • Cut whole onions and peppers into eighths. Slice in food processor. When pork is browned, set aside. Add remaining oil to pan, and cook onions and peppers over medium-high heat until they soften, about 5 minutes.
  • Stir in vinegar and pork, and cook another minute or two.
  • Drain potatoes and place in shallow serving dish; mash coarsely and season with salt; spoon in the pork and vegetables.

This is a variation on a recipe from an old friend. I added the carrots to save having to prepare an additional side dish and my family likes it better. The peppers are added in 2 stages, so some are still slightly crisp.

1 lb ground lean pork
1 large onion, sliced
2 cups carrots, cut into 2-inch matchsticks
1/3 cup soya sauce
1 1/2 tablespoons Worcestershire sauce
1/2 cup water
2 cups cooked broken angel hair pasta or 2 cups thin spaghetti
2 cups green peppers, cut to match carrots
black pepper

Steps:

  • In a wok combine pork, onion and carrots.
  • Cook until no pink remains in the pork and carrots are tender crisp.
  • Drain off any fat.
  • To pork mixture add pasta, soya, Worcestershire and water; stir to coat.
  • Add approx 1/2 of the peppers.
  • Cover and simmer 10 minutes.
  • Toss and add remaining peppers.
  • Cover again and simmer an additional 5 minutes until sauce thickens and vegetables are tender.
  • Serve over rice.

4 boneless pork chops, 3/4 inch thick
2 teaspoons olive oil
1 large red pepper, cut into julienne strips
1 large yellow pepper, cut into julienne strips
1 onion, cut into julienne strips
1 can chicken broth
1/2 cup white wine
3 tablespoons balsamic vinegar
2 tablespoons cornstarch
water, to make paste (about 2-3 tablespoons)
2 tablespoons chopped parsley
salt and pepper (to taste)

Steps:

  • Trim any excess fat from the crops.
  • Heat olive oil in a large non-stick frying pan over medium heat.
  • Brown pork chops in oil, cook until barely done.
  • Remove pork chops from pan, add peppers and onions to pan and cook until crisp tender.
  • Return pork chops to pan, add chicken broth, wine and vinegar to pan and stir, reduce heat and cover.
  • Simmer over a low heat for 5 to 6 minutes until pork chops are tender.
  • In a small bowl combine cornstarch with enough water to make a thin paste.
  • Add a tablespoon or so of the liquid from the pan to the cornstarch paste and blend.
  • Add this mixture to the pan and stir until sauce thickened and smooth.
  • Add salt and pepper to taste.
  • Stir in parsley.
  • Serve with rice or noodles.

This dish is an adaption of one a friend made for us many years ago. She used Accent, and while it did bump up the flavour I gave up MSG. Adding the peppers in 2 lots, give the dish a nice texture. We serve it over white rice, with tomato wedges.

1 medium onion, halved and thinly sliced
1 -2 carrot, cut into 2-inch matchstick pieces (about 2 cups)
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1/2 cup water
1 -2 green pepper, quartered and thinly sliced (about 2 cups)
black pepper
2 tomatoes, cut into wedges

Steps:

  • In a non stick pan, over medium high heat, cook pork with onions and carrots until the pork is no longer pink. Drain off any fat.
  • Add in the soy, worchestershire and water and 1/2 of the green peppers. Cover and reduce heat to medium low. Simmer for 10 minutes.
  • Remove cover and add remaining peppers and season with black pepper. Stir and continue cooking until most of the liquid is evaporated, about another 10 minutes.

Salt and pepper
2 tablespoons extra-virgin olive oil
1 yellow bell pepper, seeded and sliced
1 orange bell pepper, seeded and sliced
4 red hot Italian cherry peppers, sliced
1/2 cup white wine or chicken stock
2 tablespoons chopped flat-leaf parsley, a handful

  • Heat a large skillet over medium high heat. Season chops with salt and pepper. Add 1 tablespoon extra-virgin olive oil to pan -- 1 turn of the pan. Add chops and cook 5 minutes on each side. Kosher salt and freshly ground black pepper
3 tablespoons EVOO
4 cloves garlic
1 large onion
1 to 2 cubanelle peppers
1 red bell pepper, seeded
1 red chile pepper
1 teaspoon fennel seeds
2 tablespoons tomato paste
1/2 cup dry white or red wine
1 1/2 cups chicken stock

Steps:

  • Preheat the oven to 400 degrees F. Sprinkle the chops with liberal amounts of salt and black pepper.
  • Heat 2 tablespoons of the EVOO in a large skillet over medium-high to high heat. When the oil begins to smoke, add the chops and brown on both sides, 3 to 4 minutes per side.
  • While the chops cook, slice the garlic, onion and peppers.
  • Remove the chops from the skillet and add the remaining tablespoon oil. Then add the fennel seeds, garlic, onions and peppers and toss to soften, 5 minutes. Next, add the tomato paste and stir 1 minute. Deglaze the pan with the wine, add the stock and stir. Nest the pork into the pan and move the peppers and onions on top of the meat. Place in the oven and roast to an internal temperature of 165 degrees F, about 10 minutes.

¼ cup butter

Kosher salt
3 tablespoons extra-virgin olive oil
1 small onion, thickly sliced

Steps:

  • Preheat the broiler. Slice the pork on an angle into 1-inch-thick pieces; season with salt. Heat a large ovenproof skillet over medium-high heat; add 1 tablespoon olive oil. Add the onion and bell peppers; season with 1/2 teaspoon salt and cook until the vegetables are crisp-tender and slightly browned, 4 to 6 minutes. Transfer to a plate.

PORK AND PEPPERS (IN 30 MINUTES)



Pork and Peppers (in 30 minutes) image

6-8 country style pork ribs (I used boneless)
Salt and pepper (to taste)
3 tbsp olive oil
2 tbsp tomato paste
1 red bell pepper (cut into strips)
1 green bell pepper (cut into strips
1 small yellow onion (cut into strips)
4 cloves garlic (minced)
1 cup and 1/4 of red wine (you could also sub beef broth)

Steps:

  • Heat a skillet on high heat and add olive oil.
  • Liberally salt and pepper the pork and once the skillet is hot, add the pork to the pan and sear on each side for about 2 minutes. (The pork won't be cooked in the middle...that's ok)
  • Remove the pork and set aside on a plate.
  • Lower the skillet heat to medium.
  • Add the tomato paste to the skillet and cook for about 30 seconds.
  • Add in the peppers and onions and cook for about 5 minutes or until they're starting to turn translucent.
  • Add in the garlic and cook for 2 more minutes.
  • Add in the red wine and bring to a boil for 3 minutes.
  • Reduce the heat to medium-low and add the pork back into the pan nestling it into the sauce.
  • Cook for about 15 minutes, turning half way through.

1 lb pork tenderloin, trimmed of fat and cut into pieces
3 cups yellow peppers or 3 cups red bell peppers

Steps:

  • Make 4 servings of rice as directed.
  • In a small bowl combine orange juice, soy sauce, honey, cornstarch, and ginger; blend well.
  • Set aside.
  • Cook pork until no longer pink.
  • Add bell peppers; cook and stir 2-3 minutes.
  • Add orange juice mixture.
  • Bring to a boil.
  • Boil 1 minute or until sauce is slightly thickened, stirring constantly.
  • Serve over rice.
