1 package (about 1 ounce) taco seasoning mix
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
1 1/2 cups water
1 1/2 cups uncooked instant white rice
Pace® Chunky Salsa
Shredded Cheddar cheese
Shredded lettuce
Tortilla chips

Steps:

  • Cook the beef and taco seasoning in a 10-inch skillet until the beef is well browned, stirring often to separate meat. Pour off any fat.
  • Stir the soup, water and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the rice is tender.
  • Top with the salsa, cheese and lettuce. Serve with the tortilla chips for dipping.
  • Serving Suggestion: Serve with carrot and celery sticks. For dessert serve chunky applesauce sprinkled with cinnamon.

This makes a wonderful quick late-night snack, and it's a great way to use up any leftover chili I freeze some of my chili just to make this recipe --- I sprinkle finely chopped jalapeno peppers on top of second layer of cheese, but that is only optional add them on if you like heat --- all ingredients can be adjusted to suit taste. Prepare a double recipe in two separate pie plates if you are serving more than 6 people. Prep time does not include making the chili --- this is very good!

1 tomato, diced
½ can black beans (drained and rinsed)
¼ cup sour cream
3 green onions, sliced
¼ cup cilantro

  • Adjust oven rack to 6-8" below the broiler and heat oven broiler to high
  • Pour a generous, even layer of tortilla chips on sheet pan

Steps:

  • Heat a dash of oil in a frying pan and brown the mince over a high heat, breaking up with a fork if necessary.
  • Stir in the Wattie's Mexican Style Tomatoes with the Wattie's Mild Chilli Beans. Reduce the heat and simmer for 10-15 minutes or until the mince is cooked and beans are hot.
  • To make the Avocado Cream: Blend together the avocado, sour cream and lemon juice to a smooth consistency. Season to taste.
  • Place the corn chips on a serving platter and top with the beef mixture. Scatter over the grated cheese, tomatoes and coriander leaves. Serve with the Avocado Cream on the side.

1 pkg taco seasoning mix
1 can Campbell's® Condensed Tomato Soup
1½ cups water
1½ cups instant white rice
Pace® Chunky Salsa
cheddar cheese
shredded lettuce
tortilla chips

Steps:

  • Cook the beef and taco seasoning in a 10-inch skillet until the beef is well browned, stirring often to separate meat
  • Pour off any fat
  • Stir the soup, water and rice in the skillet and heat to a boil
  • Reduce the heat to low
  • Cover and cook for 5 minutes or until the rice is tender
  • Top with the salsa, cheese and lettuce
  • Serve with the tortilla chips for dipping
  • Serving Suggestion: Serve with carrot and celery sticks
  • For dessert serve chunky applesauce sprinkled with cinnamon

1 packet natural corn chips
1 jar salsa
1 cup grated tasty cheese
1/2 cup mozzarella cheese
1 spring onion, finely chopped (optional)

Steps:

  • Preheat your oven to 180 degrees.In a large baking dish place half the packet of corn chips and spread evenly. Top with half the salsa and cheeses.Repeat the corn chips and salsa/cheese layer and then finish off with the spring onions.Bake in the oven for 15 minutes or until the cheese is melted. Serve with sour cream and homemade guacamole if desired.
