6 medium tomatoes
4 tablespoons butter, divided
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup dry bread crumbs
1 teaspoon Italian seasoning
1/2 cup shredded mozzarella cheese
1/8 teaspoon garlic salt
1/8 teaspoon pepper

Steps:

  • Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. thick shell. Invert tomatoes onto paper towels to drain., Meanwhile, melt 2 tablespoons of butter in a skillet. Add spinach; cook and stir 7 minutes. In a bowl, combine bread crumbs and Italian seasoning. Set aside 1/4 cup for topping. Add spinach and cheese to remaining crumb mixture. Sprinkle tomato shells with garlic salt and pepper; stuff with spinach mixture. Place in a greased 13-in. x 9-in. baking dish. Melt remaining butter; toss with reserved crumbs. Sprinkle over tomatoes. Bake, uncovered, at 375° for 20-25 minutes or until crumbs are lightly browned.

1 cup heavy cream
1 tablespoon extra-virgin olive oil
1 small onion, finely chopped
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
2 boxes chopped frozen spinach, defrosted
A few grates nutmeg
2 large beefsteak tomatoes
1/2 cup blue cheese crumbles
Chopped chives, for garnish

Steps:

  • Place the cream in a small pot and reduce by half by gently simmering 20 minutes.
  • Heat a medium skillet with olive oil over medium heat, add onions and garlic, season with salt and pepper and saute until translucent, 6 to 7 minutes. Drain the spinach by wringing dry in clean kitchen towel. Separate the spinach with your hands and add to onions and garlic. Season spinach with nutmeg then stir in the reduced cream. Adjust flavor with salt and pepper.
  • Preheat broiler.
  • Trim the tops off tomatoes and scoop out the seeds. Stuff tomatoes with creamed spinach and top each with 1/4 cup blue cheese. Broil to brown the cheese. Garnish the tomatoes with chives.

4 beefsteak or heirloom tomatoes
Salt and pepper
1 1/2 cups (4 ounces) shredded Pepper Jack cheese
1 large clove garlic
finely chopped
3 tablespoons grated or finely chopped white onion
1 cup whole wheat panko breadcrumbs
1 teaspoon dried oregano
A handful cilantro or parsley
finely chopped
1/4 cup grated Parm cheese
Olive oil spray

Steps:

  • Cut the tops off the tomatoes and lightly give them with a gentle squish or use a teaspoon to remove some seeds
  • Carefully scoop the flesh into a bowl and season the hulled tomatoes with salt and pepper
  • Combine the flesh with Pepper Jack, garlic and onion; re-stuff the tomatoes
  • In another bowl, combine the breadcrumbs with oregano, fresh cilantro or parsley and Parm
  • Pile topping on the stuffed tomatoes, packing the breadcrumbs in, and spray with cooking spray
  • Place on a baking sheet and roast in a 425°F oven or put in a grill roasting pan and grill for 8-10 minutes until golden and the cheese is melted

SPINACH SOUFFLE

Nothing to worry about here, folks: This souffle is the opposite of fussy. Right out of the oven it's gloriously light and airy like a souffle should be, but as it deflates it becomes rich and decadent -- meaning that even if your souffle collapses, it's still going to be amazing.

Two 10-ounce packages chopped frozen spinach, thawed
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups milk
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground black pepper
3 large eggs, separated
1/8 teaspoon cream of tartar
1/2 cup shredded Parmesan
1 cup grated Pecorino-Romano
Nonstick cooking spray or additional softened butter, for the souffle dish

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the spinach in a colander to drain, pressing out as much excess liquid as you can.
  • Make the bechamel sauce: Melt the butter in a medium saucepan over medium heat; add the flour and stir until it becomes a thick paste. Add the milk 1/2 cup at a time, whisking well after each addition, until you have a smooth sauce. Remove from the heat and whisk in the salt, nutmeg and pepper. Taste for seasoning. Set aside to cool slightly.
  • Beat the egg whites until just frothy with an electric mixer. Add the cream of tartar and beat on high speed until it forms firm peaks. Set aside.
  • Whisk the egg yolks in a large bowl until they are pale yellow, then add the warm bechamel sauce a bit at a time. Switch to a large rubber spatula; gently mix in the spinach, Parmesan and 1/2 cup Romano. Fold in a third of the egg whites to lighten, then gently fold in the remaining egg whites until thoroughly combined but still light and fluffy.
  • Lightly grease a 2-quart souffle dish with cooking spray or softened butter, then add the remaining 1/2 cup Romano and rotate the dish to coat the bottom and sides with the cheese. Pour in the souffle batter, then bake until puffy and golden brown, 25 to 30 minutes. Serve immediately.

4 medium to large tomatoes
1 bunch of fresh spinach-chopped fine
2 tsp fresh minced garlic
1/4 c of reserved juice from tomatoes
1/4 c dry white wine-not cooking wine
1/4 c grated parmesan cheese
1/2 c garlic & herb feta cheese
1/2 c panko bread crumbs
2 Tbsp olive oil, extra virgin
salt

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Grease a baking dish.
  • 3. Cut off the tops of the tomatoes and scoop out just the pulp, leaving the walls intact. Pour the juice of the tomatoes into a measuring cup to reserve 1/4 cup. Sprinkle the inside of each tomato with salt and turn upside down onto a paper towel.
  • 4. Heat oil in a large saucepan over medium heat. Add spinach and garlic, saute for about 2 minutes. Then add reserved tomato juice and wine. Let cook for another few minutes.
  • 5. Remove saucepan from heat. Now add Parmesan, feta and panko breadcrumbs. Mix well. Add more panko if needed.
  • 6. Spoon this mixture evenly into each tomato til slightly over flowing, as in photo.
  • 7. Bake uncovered on middle rack for about 30-35 minutes. Keep an eye on them so that they don't brown too much. Then remove from oven.
  • 8. Allow them to cool slightly. Serve warm.
  • 9. These can also be made using cherry tomatoes and served as orderves.

Tomatoes Stuffed with Creamed Spinach image

What a fun side to your guests! We love creamed spinach, totally dig stuffed tomatoes, and LOVE tomatoes stuffed with creamed spinach!

3 slice bacon
2 Tbsp bacon drippings
1/3 c onions
8 oz baby spinach
1/2 c sour cream
dash tabasco sauce
salt and pepper to taste
4 tomatoes
1/2 c gorgonzola cheese

Steps:

  • 1. First, cut the tops off the tomatoes and hollow them out. I use a melon-baller to hollow out my tomatoes. Then turn the tomatoes upside down and place them onto a paper towel so that they can drain very well (this keeps them from turning into baked mush).
  • 2. In a heavy skillet, cook the bacon to your liking (I prefer very crispy, just before burnt, bacon). Then pull the bacon out to drain but leave the drippings in the pan. Once they're drained, chop the bacon down to coarse bacon bits and set aside.
  • 3. Add the chopped onions into the skillet and cook until they are tender.
  • 4. Chop up the baby spinach and add it to the onions and continue to cook until the spinach is wilted nicely.
  • 5. Once the onions and spinach are done, cut the heat and add in the sour cream, tabasco sauce, salt and pepper, and about half of the chopped bacon that you cooked. Stir together until well blended.
  • 6. Turn the tomatoes right side up and fill with the spinach mixture. Top each tomato with about a tablespoon or two of crumbled gorgonzola cheese, depending on how large the tomatoes are. Then sprinkle with remaining bacon bits and place them onto a prepared baking sheet.
  • 7. Bake at 350 degrees for about 15-20 minutes. at 12 minutes, the tomatoes should still be warm and firm and the gorgonzola wil have just started to melt, at 20 minutes, the tomatoes will be less firm but the gorgonzola will be more melted.
  • 8. Serve warm.

5 slices bacon
1 (10 ounce) package frozen chopped spinach

3 tablespoons butter
2 tablespoons finely chopped onion

.4 cup heavy cream
¼ cup grated Parmesan cheese
salt and pepper to taste
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch baking dish with 2 tablespoons butter.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place frozen spinach in a medium saucepan with 1/4 cup water. Bring water to a boil, then reduce heat to medium and cook spinach covered 10 minutes. Uncover and stir. Remove from heat and drain.
  • Remove stems from mushrooms. Arrange caps in the baking dish. Finely chop stems.
  • Melt 3 tablespoons butter in a medium saucepan over medium heat, and mix in onion and garlic. Cook 5 minutes, or until tender, then mix in bacon, spinach, chopped mushroom stems and heavy cream. Bring cream to a boil. Remove from heat and mix in Parmesan cheese, salt and pepper.
  • Stuff mushroom caps generously with the mixture. Drizzle with 2 tablespoons melted butter. Bake in the preheated oven 30 minutes until lightly browned.

Cheese Souffle image

Butter, room temperature, for greasing the souffle
2 tablespoons grated Parmesan
1 1/2 ounces (3 tablespoons) butter
3 tablespoons flour
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1/8 teaspoon kosher salt
1 1/3 cups milk, hot
4 large egg yolks (2 1/2 ounces by weight)
6 ounces sharp Cheddar
5 egg whites plus 1 tablespoon water (5 1/2 ounces by weight plus 1/2 ounce water)
1/2 teaspoon cream of tartar

Steps:

  • Use room temperature butter to grease an 8-inch souffle mold. Add the grated Parmesan and roll around the mold to cover the sides. Cover with plastic wrap and place into the freezer for 5 minutes.
  • Preheat oven to 375 degrees F.
  • In a small saucepan, heat the butter. Allow all of the water to cook out.
  • In a separate bowl combine the flour, dry mustard, garlic powder, and kosher salt. Whisk this mixture into the melted butter. Cook for 2 minutes.
  • Whisk in the hot milk and turn the heat to high. Once the mixture reaches a boil, remove from the heat.
  • In a separate bowl, beat the egg yolks to a creamy consistency. Temper the yolks into the milk mixture, constantly whisking. Remove from the heat and add the cheese. Whisk until incorporated.
  • In a separate bowl, using a hand mixer, whip the egg whites and cream of tartar until glossy and firm. Add 1/4 of the mixture to the base. Continue to add the whites by thirds, folding very gently.
  • Pour the mixture into the souffle. Fill the souffle to 1/2-inch from the top. Place on an aluminum pie pan. Bake in the oven for 35 minutes.

½ cup dry bread crumbs
⅔ cup shredded Cheddar cheese
¼ pound smoked sausage, cut into 1 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.
  • Bake in preheated oven for 15 minutes.

1/2 teaspoon black pepper
3 tablespoons butter
3 garlic cloves, minced
1/4 cup onion, minced
10 ounces frozen spinach, thawed and squeezed of all liquid
2 1/2 tablespoons sour cream
6 ounces neufchatel cheese, softened or 6 ounces cream cheese
1 cup reduced-fat mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
1 teaspoon fresh basil, chopped
1/2 cup dry breadcrumbs, plus more for topping

Steps:

  • Cut tops off tomatoes. Using a teaspoon, carefully remove, and reserve, the pulp. Force pulp through strainer, rendering 1/2 cup of juice.
  • Lightly sprinkle pepper inside the tomato shells. Invert on paper towels, and let drain.
  • Over low heat, melt 2 Tbsp of butter in skillet. Add the garlic and onion. Sauté until soft, about 5 minute; set aside.
  • Combine onion and garlic with the reserved tomato juice, spinach, sour cream, cream cheese, mozzarella, Parmesan, basil, and bread crumbs in a food processor. Blend thoroughly.
  • If mixture appears too thin, gradually add more bread crumbs, if it's too thick, add more tomato juice. Refrigerate 30 minutes.
  • Preheat oven to 350°F Scoop the filling mix into the tomato shells. Top with more bread crumbs and dot with bits of the remaining butter. Place in lightly greased baking dish and bake for 20-30 minutes.

4 large tomatoes, tops cut off, and hollowed out, insides reserved
20 fresh spinach leaves, stemmed and finely chopped
1 green bell pepper, finely chopped
4 ounces feta cheese, crumbled (marinated is good)
1 jalapeno, seeded stemmed, and finely chopped
1 bunch fresh basil
1 bunch fresh chives
1 bunch fresh thyme
1 lime, juice of
2 tablespoons olive oil
salt and pepper
4 ounces fresh grated parmesan cheese

Steps:

  • Chop the insides of the tomatoes and put them in a bowl (I leave the seeds out as best I can).
  • Destem the spinach and chop finely, add to the bowl. Do NOT use frozen spinach for this, if you can't get fresh, use rucola lettuce, or mangold or something else.
  • Add the bell pepper, feta, herbs, and jalapeno, mix well.
  • As for the herbs, use whatever is fresh in your garden, be creative!
  • Add lime juice, and oil, stir well and add salt and pepper to taste. Stuff the tomatoes with the mixture, and top with parmesan cheese.
  • Leave in the fridge for 20 minutes before serving.

1/4 cup shredded cheddar cheese

  • preheat over to 350 degrees.
  • cut off tops of tomatoes and a small slice off the bottom (to stabilize) and scoop out seeds and some of the pith.
  • allow to drain upside down on absorbent paper towels
  • defrost the spinach souffle.

2 -3 tablespoons olive oil
1 1/2 cups sliced fresh mushrooms
1 cup chopped onion

3 -4 fresh minced garlic cloves
1 teaspoon fried basil
1/2 teaspoon salt or 1 chicken bouillon cube

2 -3 tablespoons grated parmesan cheese, for sprinkling

Steps:

  • Set oven to 400 degrees.
  • Lightly grease a 13 x 9-inch baking pan.

  • Chop the tomato pulp (should make about 3-1/2 cups pulp).
  • In a large skillet, over high heat, heat the olive oil until hot.

  • Add in the drained spinach, chopped tomato pulp, garlic, basil, salt and pepper; cook over low heat stirring occasionally, until flavors blend (about 10 minutes).
  • Stir in the UNCOOKED rice; remove from heat, cover, and let stand for 5 minutes.
  • Stir in 1/4 - 1/3 cup grated Parmesan cheese (or to taste).

  • Spoon the hot mixture evenly between the tomato shells.

I don't know where I got this recipe. It has been in my files for awhile now. I haven't tried it yet, but it sounds like a great, easy vegetarian dinner. Serve with rice or cous cous.

4 large ripe tomatoes
4 cups fresh spinach
1 cup cottage cheese (ricotta would work too)
1/4 cup parmesan cheese
1/2 cup breadcrumbs
1 teaspoon oregano

Steps:

  • Heat oven to 425. Lightly grease a baking dish.
  • Cut the top ¼ inch off of the tomatoes. Scoop out the pulp and seeds. Discard the seeds and reserve the pulp. Chop the pulp.
  • Combine with cheeses, bread crumbs and spinach.
  • Stuff the tomatoes and place in the baking dish.
  • Cover loosely with foil and bake until the tomatoes are soft and the filling is set (about 30 minutes).
  • Remove foil and bake for 5 more minutes, allowing the tops to brown.

3/4 teaspoon Ground Black Pepper
1/2 teaspoon Kosher Salt
10 oz Frozen Spinach (thawed and squeezed dry)
5.2 oz garlic-and-herb Boursin cheese
3 tablespoons sour cream
1/2 cup Grated Parmesan Cheese (finely grated )

Steps:

  • Cut the tops off of the tomatoes. Using a small spoon, carefully remove and discard pulp.
  • Season the insides of the tomatoes with ½ teaspoon of the black pepper and ¼ teaspoon of the salt. Invert the tomatoes onto paper towels and allow to drain while you make the filling.
  • In a medium bowl, combine the spinach, Boursin cheese, sour cream, salt and pepper and ¼ cup of the shredded parmesan. Stir until ingredients are well combined. Divide the mixture between the tomatoes.
  • Top tomatoes with the remaining ¼ cup shredded parmesan.
  • Place the tomatoes in the air-fryer basket. Set the air fryer to 350°F for 15 minutes or until filling is hot.
  • Follow steps 1-4, then place in a baking pan and bake at 350 for 30 minutes.

Steps:

  • Heat oven 350°F.
  • Cut tops off tomatoes, discard tops. Scoop out pulp from centers of tomatoes, leaving 1/4-inch-thick shells. Reserve 1 cup of the removed pulp.
  • Brown meat with onions in medium skillet on medium-high heat; drain. Return meat mixture to skillet. Add reserved tomato pulp, Italian seasoning and tomato paste; mix well. Cook 3 min., stirring frequently. Remove from heat. Stir in Parmesan.
  • Place tomato shells on foil-covered baking sheet; fill with meat mixture.
  • Combine shredded cheese and bread crumbs; sprinkle over tomatoes. Top with basil.
  • Bake 12 to 14 min. or until heated through.

3 tablespoons unsalted butter, plus extra for greasing the dish
1/4 cup finely grated Parmesan cheese, plus extra for sprinkling
3 tablespoons all-purpose flour
1 cup scalded milk
1/4 teaspoon of nutmeg
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
4 extra-large egg yolks, at room-temperature
1/2 cup grated aged Cheddar cheese, lightly packed
1 package frozen chopped spinach, defrosted and squeezed dry
5 extra-large egg whites, at room temperature
1/8 teaspoon cream of tartar

Steps:

  • Preheat the oven to 400 degrees F. Butter the inside of a 6 to 8-cup souffle dish (6 1/2 to 7 1/2 inches in diameter by 3 1/2 inches deep) and sprinkle evenly with Parmesan.
  • Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, the nutmeg, cayenne, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
  • Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Cheddar, 1/4 cup of Parmesan and the spinach and transfer to a large mixing bowl.
  • Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy peaks.
  • Whisk one quarter of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the souffle dish, then smooth the top. Draw a large circle on top with the spatula to help the souffle rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees F. Bake for 30 to 35 minutes (don't peek!) until puffed and brown. Serve immediately.

1 pound fresh spinach
1/4 pound creamy fresh goat cheese, such as Montrachet
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup milk
Salt and freshly ground black pepper
Freshly grated nutmeg
3 egg yolks at room temperature
4 egg whites at room temperature
Pinch of cream of tartar

Steps:

  • Butter a five-cup souffle dish, making sure to butter the rim well. Place oven rack in lower third of oven and preheat oven to 425 degrees.
  • Remove spinach stems and wash leaves. In a large saucepan of boiling salted water cook spinach, uncovered, about three minutes or until very tender. Drain. Rinse under cold water and drain again. Squeeze by handfuls until dry. Puree in a food processor until finely chopped.
  • Crumble cheese or cut into pieces and set aside.
  • In a small, heavy saucepan, melt butter over low heat. Add flour and cook, whisking constantly, about two minutes, until foaming but not browned. Remove from heat. Gradually whisk in the milk, bring to a boil over medium-high heat, whisking, reduce heat to low, continue to cook, still whisking, about two minutes. Whisk in spinach puree and goat cheese, bring to a simmer. Season lightly with salt, pepper and nutmeg.
  • Remove from heat and whisk in the egg yolks, one at a time. Heat gently until slightly thickened, but do not allow to boil. Re-season if necessary.
  • Beat egg whites with cream of tartar until stiff but still supple. Quickly fold one-quarter of the whites into the warm spinach mixture. Spoon the mixture into the remaining whites and fold in lightly but quickly.
  • Transfer mixture to prepared souffle dish and smooth the top. Bake 20 minutes till puffed and browned. Souffle should shake slightly in the center when the dish is moved. Do not overbake. Serve at once.

Grated Parmesan cheese or bread crumbs
4 egg yolks
5 egg whites
1/2 teaspoon cream of tartar
1/4 cup butter or margarine
1/4 cup all purpose flour
1 cup milk
1 cup shredded cheddar cheese
1 (10-ounce) package frozen chopped spinach, thawed and wrung-out dry

Steps:

  • Preheat oven to 350 degrees. Butter and dust a 1-1/2 quart souffle dish with grated Parmesan or breadcrumbs. Separate the eggs. Put egg whites in mixer bowl with cream of tartar. To make a white sauce, in a medium saucepan over medium high heat, melt the butter or margarine until it bubbles. Stir in the flour and cook, stirring constantly until smooth and bubbly. Stir in milk all at once, than cook and stir until mixture boils and is smooth and thickened. To flavor the white sauce, stir in the cheese until melted. Stir in the spinach. Set aside. Beat the egg whites only until they cling to the side of the mixing bowl when you roll and tilt it. Add the yolks to the sauce, and stir. To fold the sauce into the whites, first mix about a quarter of the whites right into the sauce in the pan, then empty the sauce into the whites in the mixing bowl. Gingerly but thoroughly fold the sauce into the whites. Then pour that mixture into the prepared souffle dish. Bake for about 30 to 40 minutes. Don't open oven door for at least 30 minutes. Serve immediately.

1/2 cup crumbled part-skim feta cheese
2 teaspoons kosher salt

Steps:

  • Preheat the oven to 350 degrees. Use the oil to coat a 2-quart souffle dish. Set aside.
  • Cook the spinach over medium-high heat, stirring until wilted, 2 to 3 minutes. Drain well, pressing out excess liquid.
  • Puree in a food processor the spinach, ricotta, feta, salt, pepper and lemon zest. Scrape into a bowl and stir in 3 of the egg whites. Whip the remaining whites to soft peaks and gently fold them into the spinach mixture. Pour into the prepared dish and bake until set, about 40 minutes. Spoon onto plates and serve immediately.
