MAPLE-OATMEAL SCONES

Maple-Oatmeal Scones image

Provided by Ina Garten

Categories     dessert

Time 50m

Yield 14 servings

Number Of Ingredients 14

3 1/2 cups all-purpose flour
1 cup whole-wheat flour
1 cup quick-cooking oats, plus additional for sprinkling
2 tablespoons baking powder
2 tablespoons granulated sugar
2 teaspoons salt
1 pound cold unsalted butter, diced
1/2 cup cold buttermilk
1/2 cup pure maple syrup
4 extra-large eggs, lightly beaten
1 egg beaten with 1 tablespoon milk or water, for egg wash
1 1/4 cups confectioners' sugar
1/2 cup pure maple syrup
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F. In the bowl of an electric mixer fitted with a paddle attachment, combine the flours, oats, baking powder, sugar and salt. Blend the cold butter in at the lowest speed and mix until the butter is in pea-size pieces. Combine the buttermilk, maple syrup and eggs and add quickly to the flour-and-butter mixture. Mix until just blended. The dough may be sticky.
  • Dump the dough out onto a well-floured surface and be sure it is combined. Flour your hands and a rolling pin and roll the dough 3/4 to 1 inch thick. You should see lumps of butter in the dough. Cut into 3-inch rounds with a plain or fluted cutter and place on a baking sheet lined with parchment paper.
  • Brush the tops with egg wash. Bake for 20 to 25 minutes, until the tops are crisp and the insides are done.
  • To make the glaze, combine the confectioners' sugar, maple syrup and vanilla. When the scones are done, cool for 5 minutes and drizzle each scone with 1 tablespoon of the glaze. I like to sprinkle some uncooked oats on the top, for garnish. The warmer the scones are when you glaze them, the thinner the glaze will be.

OATMEAL COOKIES

Oatmeal Cookies image

This crisp and chewy cookie is loaded with oats, dried fruit, and chopped nuts.

Provided by madge01

Time 35m

Yield Makes Cookies

Number Of Ingredients 0

Steps:

  • Preheat oven to 350 degrees F (177 degrees C) and line two baking sheets with parchment paper.
  • Place the nuts on a baking sheet and bake for 8-10 minutes or until lightly browned and fragrant. Let cool and then chop into pieces.
  • In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until creamy and smooth (about 2 - 3 minutes). Add the egg and vanilla extract and beat to combine.
  • In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the nuts, oats, and dried cranberries or chocolate chips.
  • For large cookies, use 1/4 cup of batter (I like to use an ice cream scoop) and space the cookies about 2 inches (5 cm) apart on the baking sheet. Then wet your hand and flatten the cookies slightly with your fingers so they are about 1/2 inch (1.25 cm) thick.
  • Bake the cookies for about 12 - 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers.
  • Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.

  • Oatmeal with Cheddar and Fried Egg from Healthy Nibbles and Bits. Runny yolk and gooey cheddar give this bowl of oats a cheesy-grits taste. Chopped red pepper and onions brighten things up.
  • Irish Oatmeal Leek Soup from SkinnyTaste. Warm, satisfying, and filled with texture, this zesty soup (made with hearty steel-cut oats) is going to become one of your favorites.
  • Savory Oatmeal with Garlicky Kale from Naturally Ella. Kale deserves a place on everything—even oatmeal. Here, a bit of sautéed garlic punches up the flavor, and an olive-oil-fried egg rounds everything out.
  • Mushroom and Herb Steel-Cut Oat Risotto from Foxes Love Lemons. Foxes Love Lemons cooks these steel-cut oats the same way you would risotto—for about 25 minutes, she slowly simmers them in one ladleful of vegetable stock at a time until they've absorbed most of the liquid and have a luscious, creamy texture.
  • Savory Ginger Mushroom Oatmeal from Macheesmo. Mushrooms and ginger give this bowl of oats a ramenesque flavor profile. Get the recipe here.
  • Turmeric Chickpea Oats from The Full Helping. Turmeric—a favorite spice of nutritionists—is the star in this protein-packed recipe. Spinach freshens things up, and chickpeas add a little extra heft.
  • Oatmeal with Avocado and Poached Egg from Live Eat Learn. Of course we're going to put avocado on savory oatmeal. Here, Live Eat Learn pairs the popular green fruit with shaved Parmesan and a poached egg.
  • Avocado-Mushroom Oatmeal from Fannetastic Food. Resting on a bed of arugula, this dish is like a cross between oatmeal and salad. And it really works. Get the recipe here.
  • Oatmeal with Poached Eggs and Roasted Almonds from Healthy Nibbles And Bits. Goat cheese and chopped cherry tomatoes make this recipe one worth trying. Get the recipe here.
  • Oatmeal with Asparagus and Fried Egg from Dishing Up the Dirt. Sun-dried tomatoes are the secret weapon behind this asparagus-packed recipe. Get the recipe here.
