Smoked Salmon and Cream Cheese Cucumber Bites! Perfect for Easter or Mother's Day!

2 English Cucumbers, peeled and cut into 1" rounds
1 pound smoked salmon, cut into bite sized pieces
(1) 8 ounce package cream cheese, softened
3 tablespoons fresh dill, chopped
1 tablespoon Horseradish (more or less to taste)
1 tablespoon heavy cream, optional
Toothpicks or tiny party forks

Steps:

  • Peel cucumbers and slice them into 1" circles. Arrange on a platter as desired. Place in the refrigerator while preparing the cream cheese.
  • Place cream cheese, dill, horseradish, and cream in a large bowl. Beat until well combined (a handheld mixer really helps here.)
  • Spread 1 teaspoon of cream cheese on top each cucumber slice (more or less to taste), then top each slice with a bite sized piece of smoked salmon. Insert a toothpick down the center to keep in place.
  • Serve at once, or keep in the refrigerator until needed.

1/2 cup plain Greek yogurt
4 ounces smoked salmon or lox, cut into bite-size pieces
3 tablespoons drained capers

4 tablespoons mascarpone cheese
2 tablespoons onion & chive low-fat cream cheese
1 tablespoon capers, rinsed and drained and chopped
2 teaspoons chives, chopped, plus extra for decoration
1/4 teaspoon dill, plus extra for decoration (optional)
1 lemon, juiced and zested
8 thin slices country bread (something that won't fall apart) or 8 potato bread (something that won't fall apart)
4 -6 slices smoked salmon (we prefer Nova)

Steps:

  • Mix the mascarpone, cream cheese, capers and chives, lemon zest and enough lemon juice to flavour it, but not enough to make it runny.
  • Season really well.
  • Spread the mascarpone mix over all the bread slices, then cover completely with a layer of salmon.
  • Put one bread slice on top of another, so you have a four separate stacks, each 2 deep (with smoked salmon on top).
  • Carefully cut each into 6 bite-sized squares with a serrated knife.
  • Dip the ends of the squares in chives and decorate with extra shreds of lemon zest if you like.

Here's what you need: smoked salmon, medium eggs, cream cheese, fresh chives, whole milk, butter, salt and pepper

¼ cup smoked salmon
4 medium eggs
½ cup cream cheese, softened
1 handful fresh chives, finely-diced
1 splash whole milk
1 butter, knob
salt and pepper, to taste

Steps:

  • Crack the eggs in a bowl and whisk them together with a splash of milk. In a separate bowl, mix chives with cream cheese, add ground pepper to taste, and combine. Set aside remaining leftover chives for garnish.
  • Heat up your frying pan with a knob of butter over medium heat. Once the butter has fully melted, pour half of the egg mixture into the pan. Slightly whisk the egg in the pan until it starts to set so that it cooks more evenly.
  • Once the egg mixture has set, flip the omelet and cook the other side until it is slightly golden brown.
  • Once the omelet is cooked, fold it in the pan, then transfer to a plate.
  • Repeat the process for the second omelet.
  • Grind some salt & pepper over the omelets and top the omelets with small pieces of the smoked salmon. Then place a scoop of cream cheese on top of the smoked salmon. Finish the dish off by sprinkling the remaining diced chives over the omelet.
  • Serve.
