Really simple yet the flavors are quite complex. From the November, 2007 edition of Gourmet. It's supposed to serve four as a main course; we found it sufficient for three as a starter (either a tribute to the recipe or just further proof that we love to eat)

1 1/2 lbs squid, cleaned
1/4 lb bacon (about 5 slices)
1/4 teaspoon salt
1 cup scallion, chopped
1/2 teaspoon hot red pepper flakes

Steps:

  • Rinse squid and dry on paper towels.
  • Cut large tentacles in two and bodies into 1/2" rings.
  • Cut bacon into 1" pieces and brown in a 12" skillet.
  • Transfer bacon to paper towels to drain.
  • Turn the heat to high, get bacon fat very hot.
  • Toss calamari with 1/4 teaspoon of salt and add to skillet with the scallions and red pepper flakes.
  • Saute till just done, about three minutes.
  • Serve immediately, sprinkled with bacon.

GRILLED CALAMARI WITH PARSLEY AND PICKLED SHALLOT SALAD

3 tablespoons sugar
1/4 cup sherry vinegar
3 shallots, thinly sliced
1/2 Fresno or Thai chile, thinly sliced
1 pound squid (12 bodies and 4 tentacles), cleaned
4 tablespoons extra-virgin olive oil
1 small bunch fresh flat-leaf parsley, leaves picked (about 2 3/4 cups)
Kosher salt and freshly ground pepper
Lemon wedges, for serving

Steps:

  • Prepare a grill or grill pan for high heat. Place the sugar, vinegar and 2 tablespoons water in a small bowl and microwave until warm, about 1 minute (see Cook's Note). Add the shallots and chile to the vinegar and set aside for at least 10 minutes.
  • Toss the squid with 2 tablespoons olive oil, salt and pepper in a medium bowl. If using an outdoor grill, place the squid in a grill basket and press together to flatten. Alternatively, for indoor grill pans, weigh the squid bodies down with a cast-iron skillet or bacon press. Grill the squid until cooked through, about 2 minutes per side. Slice the bodies into rings and divide the rings and tentacles evenly among 4 shallow bowls.
  • Place the parsley in a medium bowl and drizzle with the remaining 2 tablespoons olive oil. Toss with the shallots, chile and vinegar. Season with salt and pepper. Mound the salad on the squid and spoon any vinegar remaining in the bowl over top. Garnish with lemon wedges and serve.

2 Tbsp. olive oil, divided
2 garlic cloves, minced
2 banana peppers, seeded, cut into thin slices
1 bottle (12 oz.) HEINZ Original Cocktail Sauce
1 can (8 oz.) tomato sauce
3 Tbsp. strawberry preserves
1/2 lb. squid rings
3 Tbsp. chopped fresh parsley
3 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat 1 Tbsp. oil in medium nonstick skillet on medium heat. Add garlic; cook 1 min., stirring frequently. Add peppers; cook 2 min. or until softened, stirring frequently. Add cocktail sauce, tomato sauce and preserves; mix well. Bring just to boil, stirring frequently. Remove from heat.
  • Heat remaining oil in large nonstick skillet. Add squid; cook 1 to 2 min. or until opaque, stirring frequently. Add cocktail sauce mixture; mix well. Cook and stir 1 min.
  • Top with parsley and cheese.

1/4 cup extra-virgin olive oil, plus more for drizzling
2 tablespoons pine nuts
2 tablespoons currants
1/4 cup caperberries
4 garlic cloves, thinly sliced
1 tablespoon hot red-pepper flakes
1 cup basic tomato sauce
1 1/2 pounds cleaned calamari, tubes cut into 1/4-inch rounds, tentacles halved
8 scallions, thinly sliced (reserve some for garnish)
Kosher salt and freshly ground black pepper.

Steps:

  • Heat 1/4 cup oil in a large sauté pan until just smoking. Sauté the pine nuts, currants, caperberries, garlic and red-pepper flakes until the pine nuts are golden brown, about 2 minutes. Add the tomato sauce, and bring to a simmer. Stir in the calamari, mix well and simmer for 2 or 3 minutes, or until the calamari is just cooked and completely opaque. Toss in the scallions, and season with salt and pepper. Pour into a large, warm bowl, sprinkle with the reserved scallions, drizzle with olive oil, and serve immediately.

2 beaten eggs
1 cup chopped garlic
1/4 cup jalapeno pepper, seeded and diced (1 tsp. red chili flakes can be substituted)
1/4 cup cilantro, finely chopped
flour, as needed
salt and pepper, as needed
vegetable oil, as needed
1/2 cup water
1 cup brown sugar
1/2 cup rice vinegar or 1/2 cup white vinegar
3 tablespoons chopped garlic
3 tablespoons garlic and red chile paste
kosher salt, as needed
cornstarch, as needed

Steps:

  • For Calamari:.
  • Put sliced squid in the eggs, drain excess eggs and put into seasoned flour.
  • Shake off excess flour and deep fry until brown and tender.
  • In a heated sauté pan, sauté garlic, pepper, and cilantro and add fried squid. Seasoning as needed.
  • Served with sliced lemons and/or Sweet Garlic Sauce.
  • Garlic Sauce:.
  • Combine water and vinegar and bring to a boil.
  • Add the brown sugar, garlic, chili garlic paste, salt into the heated liquid and allow to simmer.
  • Thicken with the cornstarch slurry.
  • Serve with fried item.
