SUNRISE CHICKEN

Steps:

• Heat oil in large skillet over moderate heat.
• Season chicken with salt and fresh-ground pepper.
• When oil is hot, add chicken, cooking till light brown on both sides.
• Add the ginger, orange juice, wine, lime juice, mustard, maple syrup, thyme, and coriander.
• Stir, blending.
• Add sweet potatoes.
• Simmer for 10 minutes.
• Remove from heat and add almonds and dates.

SUNRISE CHICKEN BREASTS IN RED WINE

Steps:

• Saute chicken in butter until browned; add onion and garlic.
• Simmer 10 minutes, and remove to a baking dish, like a pyrex.
• Combine flour, salt and pepper in a small bowl. Pour the chicken stock over the flour mixture and pour this mixture over the chicken.
• Cover with foil and bake for 1 hour at 350 degrees.
• After the hour, remove foil and add the wine and potatoes (if desired) and bake, uncovered, until heated through.

CHICKEN TEQUILA SUNRISE

Steps:

• Preheat oven to 425 degrees.
• Spray a shallow baking pan (with sides) large enough to accommodate the chicken in a single layer with non-stick cooking spray.
• Place unseasoned chicken pieces, skin-side up, in baking pan; place pan in preheated oven for 25 minutes to crisp skin and melt fat.
• Remove from oven and pour off fat.
• Place onion slices under chicken pieces.
• Combine remaining ingredients and pour over chicken.
• Return to oven for 20 minutes or until chicken is tender and crisp, and liquid thickens.

SUNSHINE CHICKEN

Steps:

• Combine curry powder, 1/2 teaspoon salt and the pepper; rub over both sides of chicken. In a skillet, combine orange juice, rice, water, brown sugar, mustard and remaining salt. Add chicken pieces; bring to a boil. Reduce heat; cover and simmer until chicken juices run clear, 20-25 minutes. , Remove from the heat and let stand, covered, until all liquid is absorbed, about 5 minutes. Sprinkle with parsley.

SUNRISE CHICKEN HASH

Steps:

• Heat oil in a large skillet over medium-high heat. Add potatoes and fennel and cook 5 to 6 minutes until golden. Add red onion, celery and chicken; cook and stir 4 to 6 minutes, until vegetables are tender and chicken is golden.
• Mix in California Ripe Olives, chives, dill, salt and pepper and remove from heat.
• Divide evenly among 4 plates.
