ARUGULA AND CORN SALAD WITH ROASTED RED PEPPERS AND WHITE BEANS

Arugula and Corn Salad With Roasted Red Peppers and White Beans image

Canned beans can also be used in this composed salad with a base of sweet corn and pungent arugula. Since you don't need a broth for this composed salad, canned beans will work, though I always prefer the flavor of beans I've cooked myself. I like to use a white bean, either a cannellini or a navy bean. I've always loved sweet corn with pungent arugula. I combine the two for a salad bed, which I top with the roasted peppers and beans. So the dish is really two salads, one on top of the other.

Time 15m

Yield Serves 4

Number Of Ingredients 14

1 ear sweet corn
3 cups baby or wild arugula
2 red bell peppers, roasted
1 1/2 cups (1 can) cooked white beans, such as cannellini or navy beans, rinsed if using canned beans
1 tablespoon chopped chives
1 tablespoon slivered fresh basil (more to taste)
2 tablespoons sherry vinegar or red wine vinegar
1 teaspoon balsamic vinegar
Salt to taste
1 small garlic clove, pureed or put through a press
1/4 teaspoon Dijon mustard
5 tablespoons extra-virgin olive oil
Freshly ground pepper to taste
1/4 cup shaved Parmesan

Steps:

  • Steam corn for 4 to 5 minutes, until just tender. Remove from heat, allow to cool, and cut kernels off cob. Combine with arugula in a large bowl.
  • Remove seeds and membranes from roasted peppers and cut in 2-inch strips. Place in another bowl. Add beans, chives and basil and toss together.
  • Whisk together vinegars, salt, garlic, mustard, and olive oil. Set aside 3 tablespoons of the dressing and toss the rest with beans and peppers. Season to taste with salt and pepper, and allow to sit for at least 15 minutes and for up to 3 days (in the refrigerator).
  • Toss remaining dressing with arugula and corn. Line salad plates or a platter with arugula and corn mixture. Top with peppers and beans. Garnish with shaved Parmesan, and serve.

PASTA SALAD WITH ARUGULA, ROASTED RED PEPPERS, AND SWEET CORN - DOMESTICATE ME

Pasta Salad with Arugula, Roasted Red Peppers, and Sweet Corn - Domesticate ME image

Loaded with vegetables and dressed with olive oil and balsamic, this light pasta salad is a healthy summer side that's perfect for parties and picnics.

Provided by domesticate-me.com

Number Of Ingredients 11

8 ounces fusilli or rotini (I like to use whole wheat, but you do you.)
3 tablespoons extra-virgin olive oil, divided
2 ears sweet corn, shucked and kernels removed (roughly 1½ cups sweet corn kernels)
Kosher salt
Freshly ground black pepper
8 ounces roasted red peppers packed in water, roughly chopped (About 1 cup chopped peppers)
3 packed cups baby arugula
1/3 packed cup fresh basil leaves, thinly sliced
½ teaspoon crushed red pepper (optional)
3 tablespoons balsamic vinegar
4 ounces goat cheese, crumbled

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta al dente according to the package directions. Drain and add to a large mixing bowl. Drizzle with 1 tablespoon of the olive oil to prevent the pasta from sticking and let cool to room temperature.
  • Meanwhile, heat ½ tablespoon of olive oil in a large skillet over medium-high heat. When the oil is hot and shimmering, add the corn to the pan and season with a little bit of salt and pepper. Cook for 4 to 5 minutes, or until the corn is bright yellow and lightly browned in spots. Transfer the corn to a bowl and let cool to room temperature.
  • Add the cooled corn, roasted red peppers, arugula, basil, and crushed red pepper (if using) to the bowl with the pasta. Drizzle with the remaining 1½ tablespoons of olive oil and the vinegar and toss to combine. Add half of the goat cheese and gently toss again. Taste and season with a little extra salt and pepper if needed. (You can also add a little bit more oil and balsamic if you like.)
  • Serve immediately topped with the remaining goat cheese.

ROASTED SWEET CORN SALSA

Roasted Sweet Corn Salsa image

Sweet corn makes the most delicious topping for salads, tacos, or even on a hot dog as a relish. In this case, I'm roasting it to make it super sweet and combining it with Southwestern flavors. It's definitely the star ingredient in this salsa.

Provided by Melissa Sperka

Categories     Other Snacks

Time 35m

Number Of Ingredients 10

4 medium fresh sweet corn on the cob
1/3 c chopped cilantro
1/2 c finely diced sweet red pepper
2 roma tomatoes seeded and diced
1 small red onion finely diced
1 medium diced jalapeno pepper
1/4-1/3 c lime juice
2 Tbsp olive oil
1 Tbsp honey
garlic salt & freshly ground black pepper to taste

Steps:

  • 1. Preheat the oven to 500 degrees and line a baking sheet with parchment paper. Move the oven rack to it's highest position. Cut the kernels from the corn then spread onto the prepared baking sheet in a single layer. Spritz the corn lightly with cooking spray then season with garlic salt and freshly ground black pepper. Roast for approximately 12-15 minutes or until golden. Keep a close eye on the corn and stir periodically to prevent over browning. Set the roasted corn aside to cool slightly. Cut and remove the seeds from the jalapeno pepper using a teaspoon. Always wash your hands well after handling peppers. Finely dice the jalapeno, red onion, and red pepper. Dice and seed the roma tomatoes and chop the cilantro. In a small mixing bowl whisk together the oil, honey and 1/4 cup of lime juice then add the diced vegetables to the bowl. Add the roasted corn to the veggies and mix well. At this point, I like to taste the salsa so I can adjust the seasonings and add a little more lime juice if needed. I usually add a little more garlic salt and pepper but, it's your party, so season the salsa to your taste. Serve chilled or room temperature with tortilla chips, as a topping for tacos/quesadillas or on a taco salad. Yield: 2 cups Cook's note: If you use aluminum foil instead of parchment paper, spray it lightly with cooking spray to avoid sticking. It's not necessary to do this with parchment paper.

BEST EVER FRESH SWEETCORN SALAD

Best Ever Fresh Sweetcorn Salad image

Okay, there are over 600 recipes for 'Fresh Sweetcorn Salad', but after a quick check there didn't seem to be any quite like this one, which I have made and can totally recommend. I found this one by doing a 'Google Search' and it is credited as being an adaptation of a recipe by Ina Garten and published by a foodie called Hannah. Really tasty, quick and easy.

Provided by Kiwi Kathy

Categories     Corn

Time 15m

Yield 6 , 6 serving(s)

Number Of Ingredients 8

5 ears corn, shucked
1/2 cup red onion, small-diced
1/2 cup roasted red pepper, small-diced (roast your own or use store-bought for convenience)
3 tablespoons apple cider vinegar
3 tablespoons olive oil
1/2 teaspoon salt, kosher
1/2 teaspoon black pepper, freshly ground
1/2 cup fresh basil leaf, chiffonade (thinly sliced)

Steps:

  • Fill a large pot with salted water and bring to a boil.
  • Break each ear of corn in half so it will fit in the pot, and cook until tender and the starchiness is just gone. Drain and immediately immerse the ears of corn in a bowl of ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, roasted red peppers, vinegar, olive oil, salt, and pepper.
  • Just before serving, toss in the fresh basil. If you add the basil too early and let the salad sit for a long period of time before serving, it will wilt and darken.
  • Taste for seasonings and serve cold or at room temperature.
