5 teaspoons (25ml) Asian fish sauce, divided

4 to 6 fresh red or green Thai bird chilies, divided
6 medium cloves garlic, divided
1 1/2 tablespoons (20g) palm sugar (see note)
1 small shallot, thinly sliced
4 makrut lime leaves, very thinly sliced into hairs (central vein discarded), plus more for garnish (see note)
2 tablespoons (30ml) vegetable or canola oil, divided
2 cups packed Thai purple basil (about 2 ounces; 55g)(see note)
Dried Thai chili flakes or red pepper flakes to taste (optional)
1/4 cup fried shallots (see note)

Cooked rice, for serving

  • Combine beef, 1 teaspoon soy sauce, 2 teaspoons fish sauce, and white sugar in a bowl. Toss to combine and set in refrigerator to marinate for at least 15 minutes and up to overnight.

1 tablespoon canola oil or 1 tablespoon saffola oil
1 tablespoon minced fresh garlic
1 tablespoon serrano peppers or 1 tablespoon jalapeno chile, minced
1 1/2 lbs asparagus, snapped, steamed, but slightly undercooked
2 tablespoons fish sauce (I use gluten-free) or 2 tablespoons soy sauce (I use gluten-free)
1 teaspoon dark soy sauce (I omit it) (optional)
1 tablespoon water
1 tablespoon sugar
1 cup basil, chopped
2 large chilies, of your chiles, slice diagonal into thin ovals

Steps:

  • Heat a wok or large, deep skillet over high heat.
  • Add oil, making sure bottom of pan is completely oiled.
  • Add garlic and minced chile, toss until garlic begins to turn golden; about 15 seconds.
  • Add the asparagus; stir-fry until coated with oil, about 15 seconds.
  • Add the soy sauces, sugar, basil, and 1 T water; stir-fry until basil starts to wilt.
  • Serve hot.
  • Garnish with sliced chiles.
  • For Vegetarian do not use the fish sauce, use the soy sauce.

1/3 cup fish sauce
1/3 cup tamarind concentrate (or substitute fresh lime juice)
1/3 cup palm sugar (or substitute agave nectar)
5 Tbs. grapeseed or vegetable oil; more as needed
1 large clove garlic, minced
1/3 cup small dried shrimp, soaked in warm water for 20 minutes and drained
1 5-oz. cake pressed tofu, thinly sliced
4 large eggs
10 oz. medium (1/4-inch wide) rice sticks (pad thai noodles), soaked in warm water until pliable (at least 20 minutes) and drained
1-1/2 cups homemade or canned lower-salt chicken broth
1 cup mung bean sprouts, rinsed, root ends trimmed (if you like)
1/2 cup Thai basil or cilantro, freshly torn
1/4 cup chopped unsalted roasted peanuts
3 scallions (white and green parts), trimmed and thinly sliced diagonally
3 fresh red Thai chiles (or other small hot red chiles), seeded and thinly sliced, or Sriracha to taste
1 medium lime, cut into 6 to 8 wedges

Steps:

  • In a medium bowl, whisk the fish sauce, tamarind concentrate, and palm sugar until the sugar is completely dissolved. Set aside. In a large wok, heat 2 Tbs. of the oil over high heat until shimmering hot. Add the garlic and stir-fry until golden, about 15 seconds. Add the dried shrimp and stir-fry for 15 seconds. Transfer to a medium bowl, leaving behind as much oil as possible, and set aside. Add the tofu to the wok and stirfry until heated through and golden in spots, about 1 minute. Transfer to the bowl of shrimp and set aside. Return the wok to high heat and add 1 Tbs.of the oil. Crack the eggs into the wok and scramble gently to break the yolks, making sure not to overmix so as to retain some yellow and white parts; cook until just set, about 1 minute. Transfer to a small bowl and set aside. If any egg residue remains in the wok, wipe it clean. Heat the remaining 2 Tbs. oil in the wok over high heat. Add the noodles, broth, and fish sauce mixture. Cook, tossing occasionally, until the noodles have completely absorbed the liquid and are sizzling, 4 to 6 minutes. Add the dried shrimp and tofu,toss a few times, and divide among plates or bowls. Garnish each serving with some scrambled egg, mung bean sprouts, basil, peanuts, scallions, and chiles. Serve hot with the lime wedges on the side for squeezing over the noodles

1 quart water
¾ cup coconut milk
3 tablespoons soy sauce

Steps:

  • Bring rice and water to a boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.

  • In a skillet or wok, heat the oil over medium-high heat. Stir in the onion, ginger, and garlic, and cook until lightly browned. Mix in chicken strips, and cook about 3 minutes, until browned.   • Heat butter in pan on high heat until melted and lightly foaming.

This is an incredibly quick and easy recipe, perfect for busy weekday meals. I found this in the Chicago Sun-Times and it stated that it serves 2 but I have to double it for my husband and myself. I use Thai Kitchen Sweet Red Chile sauce.

1/2 cup Thai sweet chili sauce
1/4 cup chicken broth or 1/4 cup water
1/2 lb medium shrimp, peeled and deveined
1/2 lb asparagus
1 teaspoon soy sauce
1/4 cup fresh cilantro leaves
1 teaspoon toasted sesame seeds

Steps:

  • Pour the chile sauce and broth into a medium-size skillet and bring to a simmer over medium-high heat. Add the shrimp, reduce the heat to medium and cook, turning the shrimp, until they turn pink and opaque and are cooked through and the sauce thickens somewhat, about 3-4 minutes.
  • Add water to a large skillet to a depth of about 1 inch and bring to a boil over medium-high heat. Rinse the asparagus spears and snap off and discard their tough ends. Add the asparagus to the boiling water, reduce heat and simmer until the spears turn bright green, about 3 minutes. Drain the asparagus and cut them into 1 1/2-inch pieces, then add the soy sauce to them.
  • Spoon the shrimp onto plates; garnish the shrimp with asparagus, cilantro and sesame seeds.
  • I serve this with steamed jasmine rice.
