Turkey Cocktail Meatballs with Orange Cranberry Glaze image

You can make these ahead and freeze them without the glaze, then the day of the party, defrost them and simply reheat in the sauce.

1 ¼ pounds ground turkey
¼ teaspoon poultry seasoning
½ teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon Worcestershire sauce
1 pinch cayenne pepper
1 large egg, beaten
¼ cup milk
½ cup plain bread crumbs
1 tablespoon olive oil
1 cup canned jellied cranberry sauce
½ cup orange marmalade
½ cup chicken broth
1 tablespoon minced jalapeno pepper
1 tablespoon minced Fresno pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
  • Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.
  • Combine cranberry sauce, marmalade, and chicken broth over medium heat in the skillet used to cook the meatballs. Stir in the jalapeno and Fresno peppers, then return meatballs to skillet. Reduce heat to medium-low, and continue to cook until the meatballs are no longer pink in the center and glaze is reduced. Season with salt and pepper.

4 bone-in chicken thighs (about 1 1/2 pounds)
½ teaspoon salt, divided
¼ teaspoon pepper
1 tablespoon extra-virgin olive oil
1 ½ cups cranberries, thawed if frozen
¼ cup balsamic vinegar
2 tablespoons honey
1 teaspoon chopped fresh thyme, plus more for garnish

Steps:

  • Sprinkle chicken with 1/4 teaspoon each salt and pepper. Heat oil in a large skillet over medium-high heat. Add the chicken, skin-side down, reduce heat to medium and cook, undisturbed, until golden brown, about 7 minutes. Remove all but 1 tablespoon fat from the pan.
  • Turn the chicken over and add cranberries, vinegar, honey and thyme to the pan. Bring to a simmer over high heat, then reduce heat to maintain a simmer. Partially cover and cook, stirring occasionally, until an instant-read thermometer inserted in the thickest part without touching bone reaches 165 degrees F, 10 to 12 minutes.
  • Transfer the chicken to a serving platter. Increase heat to high, add the remaining 1/4 teaspoon salt and cook uncovered, stirring, until the sauce is thickened, about 1 minute. Serve the chicken with the sauce.

If you like you can use your own homemade meatballs, meatballs you already have made or store bought. This is a quick, easy, set-it-and-forget-it recipe for Cranberry Glazed Meatballs. I make these nearly every year for our Christmas gathering and they are always eaten up in no time! If I have time I'll make and use the meatballs from my basic meatball recipe # 8060. Enjoy!

2 (2 lb) bags cocktail meatballs, 1-inch in size
1 (16 ounce) can ocean spray jellied cranberry sauce
1 (12 ounce) bottle chili sauce
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Steps:

  • Combine cranberry sauce, chili sauce, cumin and cayenne pepper in a large saucepan.
  • Cook over medium heat, whisking occasionally, until the cranberry sauce is melted and smooth.
  • Add meatballs; stir gently to coat.
  • Cook over medium-low heat, stirring occasionally, 30 minutes or until the meatballs are heated through.
  • Place in a chafing dish or slow cooker to keep warm during the party or gathering.

1 tablespoon vegetable oil
1 pound ground pork
1 pound ground turkey
2 large eggs
2 garlic cloves, finely chopped
1 cup fresh breadcrumbs
2/3 cup whole milk
1/2 teaspoon crushed fennel seeds
4 teaspoons finely chopped sage, plus whole leaves for garnish (optional)
2 1/2 teaspoons kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 (14-ounce) can jellied cranberry sauce
2 tablespoons fresh orange juice
2 tablespoons dark brown sugar
1 tablespoon finely chopped fresh ginger

Steps:

  • Preheat oven to 450°F. Coat a rimmed baking sheet with oil.
  • Using your hands, mix pork, turkey, eggs, garlic, breadcrumbs, milk, fennel, 4 tsp. chopped sage, 2 tsp. salt, and 1/2 tsp. pepper in a large bowl until incorporated. Roll into 1" balls, making sure to pack firmly.
  • Transfer balls to prepared baking sheet, packing them snuggly. Roast meatballs until firm and cooked through, about 15 minutes.
  • Meanwhile, cook cranberry sauce, orange juice, brown sugar, ginger, and remaining 1/2 tsp. salt and 1/4 tsp. pepper in a medium saucepan over medium heat, whisking constantly, until smooth, about 5 minutes.
  • Using a pastry brush, generously coat meatballs with 1/3 cup cranberry sauce mixture. Return meatballs to oven and continue to bake until glaze is shiny and caramelized, about 5 minutes more.
  • Shake sheet to coat meatballs with sauce. Transfer remaining sauce to a serving bowl and transfer meatballs to a serving platter. Top meatballs with sage leaves before serving, if using.
