Rip Esselstyn's nearly fat-free hummus recipe is an oil-and tahini-free hummus recipe perfect for low-fat or fat-free vegetarians and vegans.

1 15-ounce can of chickpeas (rinsed and drained)
2 cloves garlic (chopped)
2 to 3 tablespoons fresh lemon juice
1 teaspoon Bragg Liquid Aminos (or low-sodium tamari )
3 tablespoons water (or vegetable broth )

Steps:

  • Gather the ingredients.
  • Using a high-speed blender or food processor, blend all the ingredients into a thick paste. Use a small amount of water as necessary to achieve desired consistency.
  • Serve chilled or at room temperature. Enjoy.

This vegan hummus recipe is so easy and delicious! It whips up in just 5 minutes and there are infinite ways that you can choose to mix it up! Some of my favorites are by adding olives, spices, sauces, roasted veggies and more. Feel free to play up this classic vegan hummus recipe as much as you want!

1 15 ounce can of garbanzo beans drained and rinsed (or 1 1/2 cup cooked garbanzo beans)
3 tablespoons water
3 tablespoons olive oil
1/3 cup tahini
2 cloves of garlic, chopped
1 teaspoon cumin
3 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon paprika
Garnish: drizzle of olive oil, paprika, greek olives, toasted pine nuts, parsley, roasted eggplant, cherry tomatoes and more!

Steps:

  • In a food processor, combine all ingredients in a food processor. Blend until very smooth. This usually takes about 3-4 minutes depending on your food processor. You don't want any lumps and bumps!
  • Once smooth, choose if you want mix-ins such as extra garlic, roasted eggplant or tomatoes, toasted pine nuts, greek olives, paprika, chopped parsley and more! Enjoy!

Hummus is a traditional Middle Eastern dish made of chickpeas. I love hummus because it is vegan, very healthy and can be used as a dip for appetizers but can also eaten as part of a lunch or dinner recipe. For this recipe I used homemade tahini. Making tahini is very simple, all you need are roasted sesame seeds, olive oil and salt. I used 6 tbs. for 1/2 cup sesame seeds. You just put all the ingredients in your blender and mix. 200 gr./ 7 oz. chickpeas from a can, drained and washed.
1 tbs. olive oil
1 garlic clove
1 tbs. tahini
1 tsp. lemon juice
Any spices you like
Water to make the consistency more liquid

Steps:

  • Put all the ingredients in a blender and mix well.
  • Add as much water as needed to make your hummus the consistency you like.
  • Put in a container and keep in the fridge for up to a week.
