WATERMELON-CUCUMBER MARGARITAS
Very refreshing summer drink. Also yummy as a Mojito (sub Rum for the tequila) or non-alcoholic (sub club soda for alcohol). I'm not sure where I found this recipe, maybe Gourmet or Bon Appetit.

Steps:
- Place first three ingredients in a medium bowl. Press firmly on solids with a muddler or the back of wooden spoon until mashed.
- Mix in tequila, lime juice, Simple Syrup, and Cointreau, then 1 cup ice.
- Stir to blend well.
- Divide remaining ice between two tall glasses.
- Strain Margarita mixture into glasses.
- Garnish with watermelon skewers and mint sprigs.
- Note: To make your own Simple Syrup, stir together one cup sugar and one cup water in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer about three minutes, until sugar is dissolved. Cool before using.

Steps:
- Place first 3 ingredients in medium bowl. Press firmly on solidswith muddler or back of wooden spoon until mashed. Mix intequila, lime juice, Simple Syrup , and Cointreau, then 1 cup ice.Stir to blend well. Strain into large glass measuring cup. Divideremaining ice between 2 tall glasses. Pour Margarita mixtureover. Garnish with watermelon skewers and mint sprigs.
CUCUMBER MARGARITA
Steps:
- In a cocktail shaker muddle cucumber, add ice, lime juice, tequila, simple syrup, sweet and sour mix and pepper powder. Shake and serve in a rocks glass with salted rim.
- Garnish with a wedge or slice of lime.
CUCUMBER WATERMELON MARGARITAS
Steps:
- Liquefy the watermelon and cucumber in a blender and strain through a fine mesh sieve into a pitcher. Refrigerate until ready to use.
- Mix the lime zest and salt on a small plate and reserve.
- When ready to serve:
- Mix 1/2 cup watermelon-cucumber juice with lime juice, agave and tequila in a cocktail shaker filled with ice; shake well to chill. Rub the rim of a martini glass with a lime wedge and dip it into the lime zest mixture. Pour the margarita into the salt-rimmed martini glass and enjoy!
WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

- Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Discard remaining sugar., Place half the watermelon in a blender; cover and process until pureed (this should yield 3 cups). Add half each of the following: ice cubes, tequila, Triple Sec and lime juice. If desired, add sugar to taste. Cover and process until blended., Serve in prepared glasses. Repeat with remaining ingredients. Garnish with reserved lime wedges.
